Green Beans & Carrots w/ Tomato, Garlic & Ginger image

A wonderful vegetable side dish to accompany any meat. This recipe is also known as Fossolia and is popular in Ethiopia.

2 red onions, chopped
1/3 c canola oil
3 oz tomato paste (1/2 6-oz. can)
4 c fresh green beans, cut into thirds
3 carrots, cut into matchsticks
2-3 tomatoes, chopped
ginger - to your liking
garlic - to your liking
salt to taste

Steps:

  • 1. Saute onions on medium heat until onions become translucent. Add the oil and continue cooking for several more minutes.
  • 2. Stir in the tomato paste and simmer several minutes coating the onions.
  • 3. Add the green beans and carrots, stir well and cover. Continue cooking on medium heat for 10-15 minutes; then add the tomatoes, ginger, garlic, and salt.
  • 4. Simmer until all of the vegetables are tender.

Here is a recipe for fresh green beans, boiled just until barely tender and bright green, then tossed in a pan with minced garlic and ginger. The beans can be cooked a day ahead, leaving nothing more to do before the meal than to assemble everything over high heat.

2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

8 slices bacon, diced very small
1 large onion, diced very small
2 pounds green beans, trimmed and halved
1 mounded tablespoon tomato paste
Three 14.5-ounce cans whole tomatoes
Kosher salt and freshly ground black pepper
Cayenne pepper, as needed

Steps:

  • Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  • Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.

4 small boneless, skinless chicken-breast halves
Kosher salt and freshly ground pepper
1 1/2 teaspoons finely grated lemon zest, plus wedges for serving
6 tablespoons extra-virgin olive oil
6 cloves garlic, crushed
2 teaspoons grated fresh ginger (from a 1-inch piece)
8 ounces green beans, trimmed and cut into 1-inch pieces
1/2 cup packed cilantro leaves
1 cup couscous
3 mini cucumbers
3 cocktail tomatoes, such as Campari

Steps:

  • Season chicken with salt, pepper, and zest. Heat 3 tablespoons oil in a large straight-sided skillet on high; add chicken and cook 4 minutes. Flip; add garlic, 1 teaspoon ginger, beans, and 1/3 cup water. Season with salt and pepper. Cover and simmer until chicken is just cooked through, 6 to 8 minutes. Coarsely chop cilantro.
  • Bring 1 cup water to a boil in a small saucepan. Add a pinch of salt and couscous; remove from heat, cover, and let stand 5 minutes. Cut cucumbers into 1/2-inch pieces and tomatoes into 1/2-inch wedges. Toss both with 1/4 cup cilantro and remaining 1 teaspoon ginger and 3 tablespoons oil; season with salt and pepper. Fluff couscous with a fork; stir in remaining 1/4 cup cilantro. Slice chicken; serve, with beans, cucumber salad, couscous, and lemon.

1 ½ cups water
¼ cup butter
1 tablespoon sugar

Steps:

  • Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside.

1 1/2 lbs green beans, trimmed and cut into 1-inch pieces (about 5 cups)
4 tablespoons unsalted butter
3 tablespoons fresh ginger, peeled and finely chopped (about a 2 1/2-inch piece)
1/2 cup chicken stock or 1/2 cup turkey stock
1 cup salted roasted cashews, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • In large pot boiling salted water, cook beans until crisp-tender, about 4 minutes. Drain and rinse in colander under cold water then pat dry (can be prepared up to 1 day ahead and refrigerated, wrapped in paper towels, in plastic bags).
  • In 12-inch heavy skillet over moderate heat, heat butter until hot but not smoking. Add ginger and sauté until softened and fragrant, about 30 seconds. Stir in green beans and stock and cook, stirring often, until liquid is almost completely evaporated, about 3 to 6 minutes.
