A one-pot dish of green beans, red new potatoes, onions, and ham steak. My husband loves this and would eat it every night if he could.

- Place ham steak, potatoes, green beans, onion, and butter in a large pot with just enough water to cover. Season with salt and pepper; bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes.

SAUTEED GREEN BEANS WITH ONION
Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

Steps:
- Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
- Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

GREEN BEANS WITH DICED HAM, ONIONS & RED PIMENTOS
You can use fresh or canned green beans, drained. Dressed up with the title ingredients or add slivers of water chestnuts right before serving.

- In medium saucepan, add all ingredients except the salt and pepper.
- Cook on medium low heat uncovered.
- Stir with a spoon from time to time.
- Gas stoves seem to be hotter than electric ones so watch that the liquid does not evaporate. When the beans are soft, sprinkle with salt and pepper to taste.
- Toss a few times to mix. You may use salt substitute or Mrs. Dash Herb and Spice Mixture.
- I serve with biscuits and mushroom gravy.
- Note: If you use canned green beans, do not drain, add 3/4 cup water. Do not use the 1 1/2 cups of water. Add all of ingredients and cook until onion is soft.
- Do not add salt, just pepper as the juice tends to be salty.

GRANDMA'S GREEN BEANS

- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.
