8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

2 (14 1/2 ounce) cans cut green beans (not french-style)
4 slices thick-cut bacon
1/4 teaspoon minced garlic
salt

Steps:

  • Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
  • Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
  • Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
  • Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
  • Serve and enjoy.
  • NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

Steps:

  • Place bacon in the bottom of a pressure cooker and cook over medium-high heat, turning occasionally, until evenly browned, about 8 minutes. Add onions; saute for 1 minute. Add green beans; toss until coated in bacon grease. Add water.
  • Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Heat until steam escapes in a steady flow, about 5 minutes. Reduce heat to medium-low and cook for 5 minutes. Let pressure release naturally according to manufacturer's instructions, 5 to 10 minutes. Unlock lid and remove. Season with garlic powder, salt, and pepper.

Green Beans and Country Ham, Southern-Style Recipe - (4/5) image

2 * 2 pounds green beans, cleaned and snapped
* About 1/4-pound thinly sliced country ham (see notes below)
2 * 2 medium potatoes, cut in large cubes (see notes below)
1 * 1 large onion, coarsely chopped
* Water
* Salt and pepper to taste
4 * 4 tablespoons unsalted butter

Steps:

  • Place the ham slices in a large sauté pan. Add about 3 cups of water. Bring to a boil, then reduce heat, cover and simmer until ham is tender. Remove ham from pot and cut into small pieces. Return to the pot and add the beans, potatoes and onions. Season with pepper. Add a bit more water if needed, but not too much. Bring back to a boil, then reduce heat, cover and simmer until beans are very tender, about 1 hour. (Cooking time will depend on the age of the beans.) Taste the beans and add salt if needed but, since country ham is very salty, additional salt will probably not be necessary. If there appears to be too much broth, cook on high without the cover until some of the moisture evaporates. Add butter to beans and stir until melted; replace lid and cook an additional 10 minutes. This will keep, covered, over low heat until serving. Notes: If you want a meatier main dish, add some smoked ham pieces when you add the beans. For most people, more country ham would make it too salty. Instead of large potatoes, you can use about one pound baby or creamer potatoes, halved if large. I like yukon gold, but any boiling potato is fine.

1 small yellow onions or 1 small white onion, chopped
1 lb fresh green beans, stem ends snapped off
3/4 cup barbecue sauce, of your choice

  • In a small skillet over medium-high heat, cook the bacon until crisp. Drain on paper towels, crumble and set aside.
  • Grease the inside of the slow cooker with some of the bacon drippengs.
  • Add the onion to the skillet and cook, stirring, until softened, about 5 minutes.

He always had fresh vegetables and while I know my mother purchased other veggies I can still picture those baskets of green beans and new potatoes...

4 or 5 c fresh green beans, snapped
3 or 4 new potatoes
1/2 small onion, chopped
chicken broth or water
salt to taste
3 slice bacon
2 or 3 Tbsp pimento, diced (i used jarred) optional

Steps:

  • 1. Wash, clean and snap green beans. Wash new potatoes and remove any bad spots; cut in half. NOTE: if potatoes are small enough it's not necessary to cut in half.
  • 2. Place beans, potatoes, and onion in appropiate size pot, cover beans with chicken broth or water. Add salt to taste and place strips of bacon on top.
  • 3. Cook over medium heat until beans and potatoes are tender. Stir in pimento if desired. Remove bacon strips before serving.

Ever since I was a child, I've always loved the fresh local green beans that were available in the summer months. There are many different ways to cook green beans, this is just my way. My mom used to add salt pork and pressure cook them with potatoes. My husband prefers them with bacon instead of salt pork, so that's what I do....

1 1/2 to 2 lb fresh green beans
3 to 4 slice bacon, cooked crisp (reserve grease)
1 tsp salt (or to taste)
water to cover

Steps:

  • 1. Remove ends and any strings from green beans and discard. Break or cut green beans into 1 to 1 1/2 inch pieces into a strainer.
  • 2. Once beans are all broken, wash green beans thoroughly, removing any dirt that might be present. Place into a large heavy saucepan or dutch oven and cover with water.
  • 3. Cut or break bacon into small pieces and add to beans. Add about one to two tablespoons of the bacon grease, reserving the rest to use another time. Add salt.
  • 4. Bring to a boil. Reduce heat to low to medium low. Cover and simmer for about two to three hours until tender. Enjoy with some fresh baked cornbread and iced tea or with your favorite main dish.
  • 5. ALTERNATE COOKING METHOD: Prepare the green beans as above, but place them in a pressure cooker instead of a saucepan/dutch oven. Process according to your manufactures instructions for about 15 minutes. Remove from heat. Once pressure has dropped, you may add some fresh peeled potatoes or small new potatoes. Return to heat and pressure cook for about another 12 to 15 minutes. Once pressure has dropped, you may remove the lid from the cooker and serve.

  • Clean green beans, rinse. Cut off ends and discard of any brownish beans. Fill large bowl with ice and cold water, set aside. Rapidly boil 6-8 cups water in pot, add beans. Boil for 5 minutes or until cooked. Put cooked beans into ice water for 2 minutes, drain water. ----------------------------- Take 8 strips of bacon and cut into 1 inch squares (or however you like it) . 2 can(s) glory seasoned green beans
2 bag(s) frozen cut green beans
2-3 Tbsp bacon grease
2 Tbsp butter
dash(es) salt
dash(es) pepper

Steps:

  • 1. In a large pot pour both cans of green beans with juices and add both bags of frozen green beans. You won't need to add water at this point.
  • 2. Add in your bacon grease and butter. If you are watching your cholesterol or are heart healthy--then this is not for you, I'm sorry. It isn't called "southern style" without bacon grease and real butter!
  • 3. Sprinkle your salt and pepper to your preference and stir until all combined. Bring to a boil and boil for 10 minutes. Reduce heat to simmer and place your lid and allow to vent.
  • 4. Simmer on low for 2-3 hours stirring occasionally. If you need to add water, only add a small amount. You don't want these watery. Blech! It'll be hard but try to keep your composure and southern etiquette while these are cooking. The aroma is heavenly and mesmerizing. It'll make you say and do things you normally wouldn't! When your beans look limp and dark green in color-they're done. Pour a heap onto your plate and enjoy!

1 #10 can of blue lake style green beans, drained
1 large sweet onion, sliced
1 1/2 tsp orrington farms chicken base
1 Tbsp white vinegar
salt and pepper to taste
1/2 tsp sugar
1/2 can(s) #10 can of water
1/2 c olive oil

  • 1. Drain green beans and set aside. Place oil in bottom of pot and heat. Add sliced onions and cook until transparent. Add drained green beans and half a can of water. Cover pot and bring to boil. Reduce heat and simmer for a few minutes.
  • 2. Add salt, pepper, and sugar. Mix well. Continue to simmer. Add chicken base. (Use Chicken Boullion if you don't have chicken base.)
  • 3. Simmer until beans are tender. Remove pot cover and add white vinegar. Cook beans down, letting most of water evaporate. Taste and adjust salt, pepper, sugar, and white vinegar according to taste.
