Make-ahead, marinated Green Bean Salad is an easy, healthy recipe perfect for summer! Simply toss green beans, tomatoes, and red onions with a balsamic vinaigrette and serve cold with blue or feta cheese.

1 pound fresh green beans, (trimmed)
2 tablespoons olive oil
1 ½ tablespoons lemon juice
1 ½ tablespoons balsamic vinegar
1 teaspoon dijon mustard
½ teaspoon sugar
½ teaspoon salt
¼ teaspoon garlic powder
⅛ teaspoon pepper
⅓ cup red onion, (finely minced)
1 pint (2 cups) grape or cherry tomatoes, (halved)
½ cup blue cheese crumbles or feta

Steps:

  • Add water and 1 teaspoon salt to a large saucepan. Bring to a boil. Add beans and cook covered for 3-5 minutes, or until crisp tender.
  • While beans are boiling, fill a large bowl with ice water. Drain cooked beans and submerge in cold water. Drain and place beans in a large bowl. Set aside.
  • In a small bowl whisk together oil, lemon juice, vinegar, dijon mustard, sugar, salt, garlic powder, and pepper. Pour over cooked beans, add red onion, and gently stir to combine. Cover and refrigerate for at least 2 hours.
  • Just before serving add the tomatoes and cheese. Adjust salt and pepper, to taste. Serve cold or at room temperature. Refrigerate any leftovers.

2 pounds green beans, stem ends trimmed
2 tablespoons extra-virgin olive oil
1 tablespoon white-wine vinegar
1 teaspoon Dijon mustard
1 teaspoon coarse salt
1/4 teaspoon ground pepper

Steps:

  • Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Fill a large bowl with ice water; set aside.
  • Place green beans, stem ends trimmed, in basket. Cover; steam until crisp-tender, 5 to 8 minutes. Plunge beans in ice water. When cool, drain; pat dry with paper towels. Transfer to a large bowl.
  • In a small bowl or jar, whisk or shake extra-virgin olive oil, white-wine vinegar, Dijon mustard, coarse salt, and ground pepper until thickened and combined. Pour over beans; toss to coat.

The beans are tossed with all the other ingredients while they are still hot, which allows them to absorb as much of the flavors as possible. Adding the vinegar to the beans when they are hot causes some of the acidity from the vinegar to evaporate while maintaining all its richness and flavor.

1 1/2 pounds green beans
Salt
12 large green olives
4 garlic cloves
3 tablespoons finely shredded fresh basil leaves
1 tablespoon coarsely chopped fresh oregano leaves
1 tablespoon capers
1 1/2 tablespoons red wine vinegar

Steps:

  • Fill a pot large enough to hold the green beans with water, place over high heat, and bring to a boil.
  • While the water is heating, snap off the ends of the beans and rinse them in cold water. When the water comes to a boil, salt it generously (about 1 teaspoon per quart of water) and put in the beans. Cook until they are tender all the way through but not mushy, 8 to 10 minutes.
  • While the beans are cooking, sliver the olives by slicing the flesh away from the pits. Lightly crush and peel the garlic cloves, shred the basil, and coarsely chop the oregano. Put the olives, garlic, basil, oregano, and capers in the salad bowl you will be using.
  • When the beans are cooked, drain them well and add them to the salad bowl. Add the vinegar and toss. Add the olive oil, toss again, and taste for salt. Let stand at room temperature for about 3 hours and remove the garlic cloves before serving.

½ cup balsamic vinegar
⅓ cup extra-virgin olive oil
1 small sweet onion, thinly sliced
1 clove garlic, minced
2 teaspoons chopped fresh parsley

freshly ground black pepper to taste

Steps:

  • Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.

2 pounds fresh green beans, trimmed
¼ cup olive oil
2 cloves garlic, minced
1 cup kalamata olives, pitted and sliced
2 tomatoes, seeded and chopped
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 (8 ounce) package crumbled feta
1 bunch fresh oregano sprigs

Steps:

  • Bring a large pot of salted water to a boil over medium heat and drop in the green beans; cook until slightly tender, but still crisp, 8 to 10 minutes. Immediately drain the green beans and plunge into ice water to stop the beans from cooking further. Drain the beans and place them in a shallow serving dish.
  • Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper. Pour mixture over green beans. Toss together until beans are evenly coated. Sprinkle feta cheese over the top and garnish with oregano sprigs. Chill at least 3 hours before serving.

1 small thinly sliced sweet onions or 1 small you could use 1 small red onion, thinly sliced
1/4 cup balsamic vinegar
1/2 cup white vinegar
1 garlic clove, minced
1/8 cup sugar
2 tablespoons extra virgin olive oil
1/2-3/4 teaspoon salt (to taste)
1/2 teaspoon pepper

Steps:

  • Cook green beans in boiling water for 4- 5 minutes until tender, but still crisp.
  • Drain, immerse in ice water till cool. Drain.
  • Whisk vinegars, sugar, EVOO, salt and pepper together in a serving bowl. Add onion and green beans, stir together.
  • Marinate in refrigerator for at least five hours. Shake it up once in awhile. Over night is even better.
  • Enjoy.

I made this recently and thought it was delicious! I did not see anything exactly like it on Recipe Zaar so I decided to post it. This was originally from "Beat That" Cookbook by Ann Hodgman. I found it almost better the next day - just bring it to room temperature before serving.

1 lb green beans, trimmed
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 large garlic clove, minced
1/4 cup corn oil
2 tablespoons fresh basil, minced
2 tablespoons fresh flat leaf parsley, minced
1 lb plum tomato, seeds removed and chopped
1/4 cup red onion, minced
salt and pepper

Steps:

  • Steam the beans for 5 minutes and plunge into cold water to stop the cooking. Drain.
  • Combine vinegar, mustard and garlic in a large bowl and whisk together.
  • Add oil gradually to achieve a vinaigrette.
  • Stir in the basil, parsley, salt and pepper.
  • Add the beans, tomatoes and onion and toss to coat.
  • Serve at room temperature.
