Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

1 pkg (16 oz.) frozen french-cut green beans or
2 can(s) french-cut or regular-cut green beans
2 Tbsp dry onion soup mix

Steps:

  • 1. If using frozen beans, in a medium saucepan add enough water to cover bottom of pan. Add 2 tablespoons onion soup mx. Bring to a boil; add package of green beans. Stir and cover. Reduce heat to a low simmer and simmer gently for 7-9 minutes or until heated through.
  • 2. If using canned green beans, pour enough liquid from the can/s to cover the bottom of the pan. Proceed as directed above, but drain the remaining green beans before adding.
  • 3. When heated through, remove from heat, stir and serve. A sprinkling of grated Parmesan cheese may be added for garnish.

1/3 pound bacon strips, diced
1 package (16 ounces) frozen cut green beans, thawed
1/3 cup beer or nonalcoholic beer
1/3 cup butter, cubed
3 tablespoons brown sugar
3 tablespoons white vinegar
4 teaspoons cornstarch
2 teaspoons grated onion

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Meanwhile, in a large saucepan, bring the beans, beer and butter to a boil. Reduce heat; cover and simmer for 8-10 minutes or until beans are crisp-tender. , Using a slotted spoon, remove bacon to paper towels to drain. Remove beans with a slotted spoon and keep warm., In a small bowl, combine the brown sugar, vinegar, cornstarch and onion until blended. Stir into the saucepan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add beans; heat through. Sprinkle with bacon.

1 tablespoon soy sauce
1 teaspoon sugar
1 tablespoon pale, dry Sherry or dry white wine
1 small cube chicken bouillon
2/3 cup chicken broth
1 pound green beans
1 tablespoon oil, like peanut or canola
2 tablespoons butter
4 to 6 cloves garlic, minced
2 scallions, chopped

Steps:

  • Mix soy sauce, sugar and Sherry and set aside.
  • In a large saucepan, dissolve bouillon in the chicken broth over high heat. Add the beans, and simmer until nearly all liquid has evaporated, about 5 to 8 minutes, stirring constantly. Drain the beans and set aside.
  • In a wok or skillet, heat the oil and butter. Add garlic and scallions and stir-fry for about 30 seconds, or until just softened. Add the beans and toss until coated. Sprinkle soy-sugar-Sherry mix over beans and stir-fry for 1 minute. Serve hot.

Nonstick vegetable oil spray
6 medium onions (about 2 1/2 pounds), peeled, each cut vertically through root end into 12 to 14 wedges
6 tablespoons (3/4 stick) butter
2 cups canned low-salt chicken broth
3 tablespoons sugar
2 tablespoons red wine vinegar
3 pounds slender green beans, ends trimmed

Steps:

  • Preheat oven to 450°F. Spray 2 heavy large baking sheets with vegetable oil spray. Arrange onions in single layer on prepared sheets.
  • Dot onions with 4 tablespoons butter, dividing equally. Season with salt and pepper. Bake until onions are dark brown on bottom, about 35 minutes.
  • Meanwhile, boil broth in heavy large skillet over high heat until reduced to 1/2 cup, about 6 minutes. Add sugar and vinegar and whisk until sugar dissolves and mixture comes to boil.
  • Add onions to sauce; reduce heat to medium-low. Simmer until liquid is slightly reduced, about 5 minutes. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.)
  • Cook green beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain well. Return beans to same pot. Add remaining 2 tablespoons butter and toss to coat. Mound beans in large shallow bowl. Top with onion mixture and serve.

1 -2 teaspoon balsamic vinegar

  • Cook green beans in boiling water.
  • Drain.
  • (This can be done ahead.).
  • Cut onions into thin slices, and cut each slice in half.
  • Cook onions in a nonstick skillet over medium-high heat, stirring occasionally until onions are golden brown.
  • (Original recipe says do not stir onions first 5-10 minutes.) Reduce heat to medium; stir in butter and brown sugar.
  • Add green beans; cook 5 minutes or until thoroughly heated.
  • Toss with vinegar.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.
