HAMBURGER STEW
Hamburger stew has plenty of wholesome veggies and rich layers of bold flavor making it the ideal cold-weather recipe to satisfy hearty appetites.

- Heat a large pot or Dutch oven over medium-high heat. Crumble the ground chuck (2 pounds) into large chunks in the hot pan, and cook until evenly browned. Transfer cooked beef to a paper towel-lined plate. Discard all but 2 tablespoons of drippings from the pot. If you do not have that amount remaining, add vegetable oil to make up the difference.
- Add the onion (1), garlic (3 cloves), and carrots (4) and saute, over medium heat, until soft, about 5-6 minutes.
- Sprinkle flour (3 tablespoons) over vegetables, stirring constantly, until the flour coats the vegetables. Cook for 2-3 minutes to toast the flour. Remove skillet from heat.
- Add beef stock (3 cups), stewed tomatoes with their juices (2 (14.5-ounces) cans), tomato soup (1 (10.75 -ounce) can), Better Than Bouillon (1 heaping tablespoon), Worcestershire sauce (2 tablespoons), potatoes (3), Italian seasoning (1 teaspoon), thyme (1/4 teaspoon), bay leaf (1), salt (2 1/4 teaspoons), pepper (1 teaspoon), green beans (1 1/2 cups), pearl onions (1 cup), and browned beef; stir to blend then simmer over low heat for at least 2 hours, stirring occasionally.
- Adjust seasoning. Ladle into individual bowls and serve.

- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add 4 cups water and beef base; stir to combine. Add tomato sauce, Worcestershire sauce, pepper, celery salt, and marjoram; bring to a simmer.
- Add carrots and simmer for 35 minutes. Add potatoes and green beans; cook until tender, about 15 minutes.
- Meanwhile, mix flour and 2 tablespoons water together in a small bowl until no longer lumpy, adding more water if necessary. Stir into stew and simmer until thickened, 5 to 10 minutes.

MOM'S HAMBURGER AND GREEN BEAN CASSEROLE
This recipe was passed down from my grandmother, to my mother and now I make it frequently. It's a big hit with hubby. It is also another one of those recipes that show how they stretched a pound of hamburger to feed a family. A salad goes along nicely with this.

Steps:
- Preheat oven to 350.
- Brown the ground beef. Drain.
- Empty tomato soup into a casserole dish. (I use an oval pyrex 11X81/2X3).
- Pour 1/2 of can of green bean juice into soup. Drain rest of green beans and add to dish.
- Add dehydrated onion, salt, and pepper.
- Mix.
- Add drained ground beef into soup mixture. Mix well.
- Beat egg and add to mashed potatoes. Mix well.
- Top meat mixture with mashed potatoes.
- Don't cover green bean mixture completely, leave a little area all around to allow mixture to bubble and not bubble over.
- Try to make peaks with the potatoes for and extra special look.
- Bake 30-45 minutes or until potatoes are browned.

- In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink, breaking it into crumbles; drain. Add the tomatoes, carrots, celery, potatoes, water, rice, salt and pepper; bring to a boil. Reduce heat; cover and simmer 30 minutes or until vegetables and rice are tender. , Uncover; simmer 20-30 minutes longer or until thickened to desired consistency. I love this stew because it is so easy to throw together,and it goes great with a hot pan of cornbread. I suggest Sweet Cornbread (recipe #83625). This recipe was my Great Grandma's and my Grandma taught it to me. It was hard for me to put this in recipe format because it is all in my head. You can adjust some of the ingredients to suit your family.

- Brown hamburger, garlic, salt, black pepper, and oregano in a Dutch oven over medium heat; drain.
- Return meat to pot.

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Lightly coat chile peppers with cooking spray and place on the prepared baking sheet.
- Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 10 to 15 minutes, turning halfway through. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins. Chop chiles and set aside.
- While peppers are cooling, slice onion in half. Mince one half, and rough chop the other; set aside.
- Heat a large pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add minced onion, carrots, celery, and garlic; saute until onion begins to turn translucent, about 5 minutes. Transfer mixture to a bowl, leaving any rendered fat in the pot.
- Add potatoes to the pot and saute until browned, 3 to 5 minutes. Add meat mixture, both cans of diced tomatoes, and reserved chopped onion and bring to a slow boil. Cook for 1 minute, then stir in chiles. Add water, bouillon, black pepper, salt, and oregano. Return to a boil, then reduce heat to a simmer. Cook, stirring occasionally, for 1 to 1 1/2 hours.

- Heat a large saucepan or Dutch oven over medium-high heat and cook ground beef until browned, 4 to 5 minutes. Add onion and celery and cook, stirring, until onion is soft and translucent, 3 to 4 minutes. Stir in garlic and cook, stirring, until fragrant, about 1 minute.
- Pour in beef stock and stir, scraping up any browned bits from the bottom of the pot. Bring to a boil and add carrots.
- Tie parsley, rosemary, thyme, and sage together into a bundle with cooking twine and add to the pot. Add bay leaf and season soup with salt and pepper. Bring to a boil, cover, reduce heat, and simmer for about 10 minutes.

GREEN BEAN-HAMBURGER STEW
My mother came up with this when we were growing up because she had 6 of us kids to cook for and there was always someone who wouldn't eat one of the vegetables in regular stews. So this one only contains the few vegetables we all liked, plus it's very economical. For anyone thinking I think I'll throw in this or that vegetable or ingredient, I urge you to try it with just these few ingredients at least once. There's just something about how the flavors all go together so well that is just so tasty. And of course, it's even better the next day, after it's had time for the flavors to blend.

- Brown hamburger in a large pot until no longer pink; towards the end of browning, add diced onion and cook with hamburger until onion is soft; stirring frequently. Drain off grease.
- Add green beans ( I don't drain mine.) Add potatoes and enough water to cover the potatoes.
- Bring to a boil, and cook until potatoes are soft enough to break with spoon. Stir often. After potatoes soften, reduce heat and cover, and simmer for a while, to allow flavors to blend; about an hour or so. Keep a close eye on it. *This is the one-pot method; but you can cook the potatoes in a separate pot until soft, and meanwhile cook the hamburger/onion mixture in a skillet. Once the potatoes are done, drain off some of the water, and add meat/onion mixture, along with the green beans, if desired. Keep in mind you will still need to cook it all together for a while, to allow the meat and onions to flavor the broth. This could also be cooked in a crock pot. We like to eat this with a glass of milk, and bread and butter.
