I had this in a restaurant once and it was so good I had to go home and recreate it. I have it with spinach stuffed in a pita or sandwich. I've cut back on the dressing to keep the calorie count low but adding more is yummy!

1 (5 ounce) can chunk light tuna in water, drained
1 tablespoon chopped red onion
2 teaspoons prepared Greek vinaigrette salad dressing (such as Kraft®)
3 pitted Kalamata olives, chopped
1 tablespoon crumbled feta cheese

  • Mix the tuna, onion, salad dressing, olives, and feta cheese together in a bowl.

This is a tuna casserole that even my picky family loves! The potato chips give the casserole a crunchy crust.

1 (12 ounce) package egg noodles
¼ cup chopped onion
2 cups shredded Cheddar cheese
1 cup frozen green peas
2 (5 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
½ (4.5 ounce) can sliced mushrooms
1 cup crushed potato chips

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
  • Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

My mom was cleaning out one of her closets and came across several folders full of recipes that she had clipped from magazines and newpapers over the years. I'm not sure what publication this one came from. The title says "casserole" but it's really more of a hot pasta salad. Microwave cooking makes this a quick and easy meal!

2 cups pasta (macaroni or rotini)
1 cup frozen cut green beans
1 cup red kidney beans (canned, drained)
1 (6 ounce) can tuna (water packed, drained)
1/2 cucumber, chopped
4 tablespoons olive oil
4 tablespoons red wine vinegar
1/2 teaspoon dry mustard
2 tablespoons crumbled feta cheese
8 small black olives

Steps:

  • Cook pasta according to package directions (microwave or stovetop). Drain well.
  • Put green beans in a 3-quart casserole. Cover and microwave on high 4 minutes or until crisp-tender.
  • Add kidney beans, tuna and cucumber. Cover and microwave on high 2 minutes.
  • Add hot pasta to tuna mixture and toss well.
  • In a small mixing bowl, whisk together the oil, vinegar and mustard. Pour over casserole mixture and toss to coat well. Sprinkle with feta and garnish with olives.
  • Serve immediately.

2 cups farfalle (bow tie) pasta
1 tablespoon olive oil
¼ cup thinly sliced onion
2 cloves garlic, minced
8 ounces chunk light tuna in water, drained and flaked
¾ cup water
½ cup dried cranberries
½ cup sun-dried tomatoes, chopped
¼ cup pitted Kalamata olives, halved
2 tablespoons pine nuts
1 tablespoon chopped fresh parsley
½ cup finely shredded Parmesan cheese
½ cup coarsely torn fresh basil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat oil in a large, oven-proof skillet over medium heat. Add onion and garlic and cook in the hot oil, stirring occasionally, until onion is tender, 5 to 7 minutes.
  • Add tuna, water, cranberries, tomatoes, olives, pine nuts, and parsley. Stir in cooked pasta.
  • Transfer the skillet to the preheated oven and bake, covered, for 25 minutes. Uncover and sprinkle with Parmesan cheese. Bake, uncovered, until heated through and cheese melted, about 5 more minutes.
  • Sprinkle with basil before serving.
