Explosion of flavor. Great sides for this dish would include small red potatoes baked with garlic and onions in a mixture of olive oil and butter or grilled zucchini or any other type of squash you like.

½ cup lemon juice
⅓ cup olive oil
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh spearmint
1 teaspoon lemon zest
⅓ teaspoon garlic, minced
¼ teaspoon salt
4 (5 ounce) mahi mahi fillets

Steps:

  • Rinse mahi mahi fillets and pat dry with paper towels.
  • Prepare a marinade by stirring lemon juice, olive oil, oregano, spearmint, lemon zest, garlic, and salt together in a baking dish just big enough to accommodate the fillets without overlapping. Lay the mahi mahi fillets into the marinade.
  • Marinate fish in the refrigerator for 30 minutes, turn, and continue marinating another 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove fillets from marinade and shake to remove excess. Discard remaining marinade.
  • Cook fillets on hot grill, but not directly over flame, to seal in moisture, about 15 seconds per side. Reduce heat to medium and continue cooking fish away from flame until the flesh flakes easily with a fork, 12 to 15 minutes.

Number Of Ingredients 8

1 1/4 lbs mahi mahi fillets, fresh or thawed, about 3/4 to 1 inch thick
1/2 cup lemon juice
1/2 cup olive oil
3 tablespoons fresh oregano, chopped
3 tablespoons of fresh mint, chopped
1 teaspoon bottled minced garlic
1 teaspoon finely shredded lemon peel (zest)
1/4 teaspoon salt

Steps:

  • Rinse fish; pat dry with paper towels. Cut fish into 4 serving size pieces (this is easier if fish is slightly frozen). Place fish in a resealable plastic bag. Stir together lemon juice, olive oil, oregano, mint, garlic, lemon zest, and salt. Pour over fish. Seal bag. Turn to coat fish with marinade. Marinate in refrigerator for at least 30 minutes.
  • Drain fish, reserving marinade. Grill fish over medium heat for 8 to 12 minutes or until fish flakes easily when tested with a fork (145 degrees F), turning once and brushing with marinade halfway through grilling. Discard any remaining marinade.

Number Of Ingredients 10

3 medium tomatoes (about 3/4 pound total), each cut into 8 wedges
2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided
1 tablespoon red-wine vinegar
4 (6-ounces) pieces mahimahi fillet (1 1/2 inches thick) with skin
1/2 cup mayonnaise
1/4 cup crumbled feta
3 tablespoons chopped mint
2 tablespoons chopped dill
1 teaspoon fresh lemon juice
8 very thin lemon slices

Steps:

  • Preheat broiler.
  • Toss tomatoes with 2 tablespoons oil, vinegar, and 1/2 teaspoon salt.
  • Line a broiler pan or small 4-sided sheet pan with foil or parchment paper and lightly oil foil. Put fish, skin sides down, on pan and season with 1/4 teaspoon each of salt and pepper.
  • Whisk together mayonnaise, feta, herbs, and lemon juice and spread over top of fish. Put 2 lemon slices (slightly overlapping) on center of each fillet. Drizzle lemon slices with remaining 2 teaspoons oil.
  • Broil fish 8 inches from heat until just cooked through, 14 to 16 minutes. If topping browns before fish is cooked, cover loosely with foil. Serve fish with tomatoes.
