These are very unique waffles, they can be served as a lunch or a dinner with a Greek salad...delicious! Cooking time depends on your waffle maker.

Number Of Ingredients 11

1 egg, room temperature, and separated
1 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2-1 teaspoon sugar
1/8 teaspoon garlic powder
1/4 teaspoon dried dill (optional)
3/4 cup milk
1/3 cup crumbled feta cheese
1/3 cup cooked spinach, well drained and chopped (squeeze out any excess water with hands)
4 tablespoons butter or 4 tablespoons margarine, melted

Steps:

  • Heat a waffle maker to hot.
  • In a bowl, beat the egg white until stiff; set aside.
  • In another bowl, mix togather the dry ingredients; set aside.
  • Combine the egg yolk, milk, feta cheese and oil; add to the dry ingredients, mixing just until blended.
  • Fold in the beaten egg white JUST until mixed (don't over mix).
  • Bake as directed in a waffle maker.

DELICIOUS family recipe that has been passed down generations. Perfect for holiday dinners, but I make it year round.

Number Of Ingredients 7

3 (10 ounce) packages frozen chopped spinach, thawed
1/2 lb small curd cottage cheese
1/2 lb cheddar cheese, shredded
1/2 teaspoon salt
2 large eggs
6 tablespoons flour
wheat germ

Steps:

  • Pre-heat oven to 350 degrees.
  • Mix spinach, cottage cheese, cheese, salt, eggs and flour in large bowl by hand.
  • Spread in 13 by 9 inch pan.
  • Cover the top with wheat germ. This is extremely important; it will taste awful without it.
  • Bake in the oven for 45 minutes.

Spinach Waffles image

Very tasty savoury variation of your classic sweet waffles. Great as a snack or appetizer when hosting a party.

450 g frozen spinach, thawed
1 onion
1 tablespoon olive oil
70 g butter
100 g grated cheese (your favourite kind)
4 eggs
100 ml milk
200 g flour
1/2 teaspoon baking powder

Steps:

  • Cut the onion into small pieces. Saute in olive oil until soft. Then add the spinach. Season generously with salt and pepper (the spinach absorbs a lot of flavour). Cook until the spinach is done.
  • In a big bowl combine butter, cheese, eggs, milk, flour and baking powder. Carefully fold in the spinach and onion.
  • Bake portions of the dough in a well heated and lightly greased waffle iron until crisp and golden brown.
  • Serve with garlic yogurt or topping of your choice.
