1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breasts, cubed
1 pint cherry tomatoes, halved
1 red onion, thinly sliced
4 pitas, cut in half
Tzatziki Dip, recipe follows, for serving
1/2 cup plain Greek-style yogurt
2 tablespoons chopped peeled and seeded cucumber
1 teaspoon red wine vinegar
1 teaspoon minced fresh mint
Pinch kosher salt
1 small clove garlic, minced

Steps:

  • Put a baking sheet in the oven and preheat the oven to 400 degrees F.
  • In a large bowl, whisk the oil, vinegar, onion powder, oregano and garlic powder; season with salt and pepper. Add the chicken, tomatoes and onion and toss to coat.
  • Carefully remove the baking sheet from the oven and evenly spread the chicken mixture on it.
  • Bake for 10 minutes, then add the pita around the edge of the baking sheet and bake until the chicken is cooked through, another 5 minutes. (If desired, you can also broil the mixture for a couple of minutes more for more color.)
  • Serve with the Tzatziki Dip.
  • Combine the yogurt, cucumber, vinegar, mint, salt and garlic in a small bowl. Refrigerate until serving.

1/2 seedless cucumber (usually plastic-wrapped), peeled, seeded, and chopped (1 cup)
1 cup plain whole-milk yogurt
1 teaspoon fresh lemon juice

1/4 teaspoon black pepper
1/4 cup chopped fresh mint
For lamb sandwiches
4 (6-inch) pita pockets, halved crosswise
1 (1/4-inch-thick) bone-in lamb steak from leg (1 1/2 lb), trimmed of excess fat

For Greek salad
1/2 lb romaine, torn into bite-size pieces
1/4 cup loosely packed fresh mint leaves
1 cup cherry or grape tomatoes, halved
1/2 seedless cucumber (usually plastic-wrapped), peeled, halved lengthwise, seeded, and cut into 1/4-inch-thick slices
1/2 cup pitted Kalamata olives, halved lengthwise

Steps:

  • Make tsatsiki sauce:
  • Purée cucumber, yogurt, lemon juice, garlic, salt, and pepper in a blender until almost smooth, about 1 minute. Stir in mint and chill, covered, until serving.
  • Make lamb sandwiches:
  • Preheat broiler.
  • Wrap pitas in foil and put in lower third of oven to warm while broiling lamb.
  • Put lamb on oiled rack of a broiler pan and sprinkle with salt and pepper. Broil lamb 5 to 6 inches from heat, turning over once, 12 to 14 minutes total for medium-rare. Transfer to a cutting board and let stand 5 minutes, then thinly slice.
  • While lamb is standing, toss together salad ingredients in a bowl and season with salt and pepper.
  • Stuff warm pita pockets with salad and lamb, then drizzle filling with tsatsiki sauce.

1 garlic clove, finely grated
4 tsp olive oil
½ lemon, zested and juiced
¾ tsp dried oregano
250g lean pork tenderloin, cut into chunks
1 onion, finely chopped
85g brown basmati rice
½ tsp dried mint
1 tsp vegetable bouillon powder
2 tbsp chopped fresh dill
3 tomatoes, chopped
10cm chunk of cucumber, chopped
1 red onion, halved and thinly sliced
4 Kalamata olives, halved
1 tsp red wine vinegar
25g feta, crumbled

Steps:

  • Mix the garlic with 2 tsp of the oil, the lemon zest and 1 tsp juice, lots of black pepper, and ½ tsp oregano in a large bowl. Tip in the pork and mix so the meat is well coated. Set aside to marinate for 30 mins if you have time.
  • Heat 1 tsp olive oil in a non-stick pan. Add the chopped onion, cover and cook for 5 mins, then remove the lid and stir in the rice, dried mint and bouillon. Pour in 300ml boiling water. Cover and cook for 30-35 mins until the liquid has been absorbed and the rice is tender. Stir in the dill and a squeeze of lemon juice.
  • Meanwhile, heat the grill to high or light your barbecue. Thread the pork onto two skewers. Mix the tomatoes, cucumber, red onion and olives in a bowl with the remaining oregano, vinegar, remaining oil and a squeeze of lemon. Pile onto plates and top with the feta.
  • Grill the souvlaki for about 4 mins each side until they are cooked, but still juicy. Serve with the salad and rice.

1/2 a cucumber
200g tomatoes
1/2 iceberg lettuce
1 red onion
6-8 tortilla wraps/ flatbreads / thin pittas - i prefer tortillas

6-8 Boneless Skinless Chicken Thighs

Steps:

  • Prepare the Chicken Marinade first. Get a large bowl. Combine olive oil, lemon juice, garlic, oregano, salt and pepper. Add the Chicken Thighs and give it a mix with your hands. Make sure you get into all the nooks and crannies. Add more oregano if necessary. Leave for 30ish minutes.
  • Prepare wrap ingredients. Slice tomatoes, slice cucumber into half moon shapes, THINLY slice onions and slice the lettuce.
  • Add the marinated chicken to a medium-heat skillet or frying pan for 5-7 minutes. Cook in 2 batches to avoid over crowding the pan (this should allow it to brown nicely). Once nicely browned and cooked through leave to rest on a chopping board for 5 minutes before slicing.
  • Build the wraps. Toast the flatbread or tortilla on a frying pan. I place a tortilla directly onto the gas as this gives a nice charred flavour. You may prefer to heat in frying pan.
  • Build the wraps - tortilla/flatbreat, then lettuce, onion, cucumber, tomatoes.and tzatziki. Be careful not to over fill, just a little of each is best. Slice the rested chicken and add to the wrap. And enjoy!
  • To wrap the tortilla properly, first fold up from the bottom, the fold the two adjacent sides over.

A real coincidence as this was being prepared on the food network by Nick Makris from Nick's Diner in Regina Sask - it looked SO GOOD I just had to post it. Use pork or lamb - serving with pita bread is optional but tzatziki is a must! Prep time includes a minimum of 2 hours for marinating.

1 1/2 lbs lamb shoulder or 1 1/2 lbs pork loin, cut into 1 inch cubes
1/4 cup extra virgin olive oil
1/3 cup red wine vinegar
2 cloves garlic, minced

2 tablespoons chopped fresh parsley

  • Combine olive oil, red wine vinegar, garlic, onion, oregano, parsley, mint and black pepper in a bowl& mix well.
  • Add meat, toss to coat, cover and refrigerate; marinate for a minimum of 2 hours but overnight for best results.
  • If using wooden skewers soak them in water overnight or for at least 2 hours.
  • Preheat the grill to medium high.
  • Thread meat evenly onto 4 skewers& season with salt and pepper.
  • Grill skewers 4 to 5 minutes per side for medium or cook a few minutes longer if you prefer well done (6 to 7 minutes).
  • Serve with tzatziki sauce and pita bread.

GREEK LAMB ON SKEWERS (SOUVLAKI)

I spent a lot of time in Greece and this was by far my favorite dish. I love it served on a hot pita with marinated onions, tomatoes, and feta cheese; all topped with garlicky tzaziki sauce. I'm not sure where I got this recipe, but I've been making it for years with great success. Serve with fried calamari and French fries. Make a lot of tzaziki so there is plenty for dipping. Time to prep does not include the very important marinade time.

1/4 cup lemon juice
1/2 cup dry red wine
1 garlic clove (minced)

Steps:

  • For the marinade: Combine first 8 ingredients.
  • Cut lamb up into 1/2" thick, 1" wide, 3" long strips.
  • Pour marinade over lamb and chill overnight. Turning occasionally.
  • For the veggies: Combine the next 10 ingredients and let chill over night.
  • Skewer meat. If using wooden skewers, soak for an hour in water first. About 8 slices per stick.
  • Prepare grill. Add wood chips. Any type will do.
  • Grill until meat is done, brushing often with marinade. Meat should be brown around the edges, but still a little pink in the center. Don't dry the meat out.
  • Serve with warm pita. Guests should wrap a warm pita round the meat and pull the skewer our, then top their "taco" with marinated veggies, feta, and tzaziki.
  • For the tzaziki: Place the yogurt in cheese cloth. Twist to bind and squeeze the yogurt. Place in colander over a bowl to drain for an hour or so.
  • Peel and slice a cucumber down the middle, and spoon out the seeds.
  • Grate the cucumber. Squeeze out as much juice as you can.
  • In a bowl, mix the yogurt, cucumber, garlic, oil, salt, mint, and lemon juice. Let chill a few hours (over night is best).
  • For the pita: Buy pita flat bread (whole breads without the pocket).
  • Mix olive oil with paprika.
  • Brush each piece on both sides with a little of the olive oil.
  • Place on hot griddle and warm thoroughly (about a minute or so on each side).
  • Serve warm.

Kittencal's Greek Souvlaki (Grilled Skewered Lamb or Pork) image

There are many recipe out there for slovlaki, this is one I have been making for years and is a personal favorite, this can be made using lamb or pork, the secret to the marinade is the little extra bit of honey and the seasoned salt ;-) traditional Greek souvlaki is not threaded with veggies, but I like to add them on the skewers, you have the option of using them or not. Serve the lamb with toasted pitas and tzatzika sauce if desired please see my recipe#157176. Plan ahead the lamb needs to marinade overnight. You can also make these in the oven under the broiler, using metal skewers ONLY in place of wooden, turning occasionally. The vegetable amounts listed are only esimated you can use as many as desired on the skewers.

2 lbs lean leg of lamb, cut into 2-inch cubes (or use 2 pounds boneless pork)
1 cup red wine (not red wine vinegar)

2 tablespoons dried oregano
2 teaspoons seasoning salt

20 large button mushrooms (might use more or less)
2 large red onions, cut into 8 pieces
20 cherry tomatoes (might use more or less)
1/4 cup olive oil
10 -12 wooden bamboo skewers (soaked in water for 30 minutes before threading, you might use less than 10 skewers)

Steps:

  • In a bowl mix together red wine, olive oil, lemon juice, garlic, seasoning salt and pepper.
  • Place the lamb in a large glass bowl.
  • Pour the wine sauce over the lamb; toss to coat well.
  • Cover and refrigerate for 24 hours, tossing occasionally with a wooden spoon.
  • Lightly oil the grill and preheat.
  • Remove the lamb from the marinade (discard marinade).
  • Soak the wooden skewers in water for 30 minutes before threading.
  • Thread the lamb, mushrooms, onion chunks and cherry tomatoes among the skewers (thread anyway you desire).
  • Brush JUST the veggies with olive oil and season lamb and the veggies lightly with white salt (and pepper if desired).
  • Grill until the lamb until it is medium-rare and lightly charred (about 8 minutes, rotating to cook until evenly browned).
  • Serve the grilled lamb with toasted pitas and tzatzika sauce if desired.

CLASSIC GREEK CHICKEN SOUVLAKI

This is a classic Greek recipe for tender and very flavorful chicken souvlaki!

1 TBSP. lemon zest
¼ cup lemon juice
3 med. garlic cloves, minced
¼ cup olive oil
2 tsp. dried Greek oregano
1 tsp. dried spearmint
1 tsp. sea salt
½ tsp. freshly ground black pepper
1 sm. red onion
1½ lbs. chicken thigh meat (or breast meat), boneless and skinless
--- --- salt and pepper
6 --- metal skewers (or wooden skewers soaked in water for 2 hours)
4-6 pieces Mediterranean pita bread (pocket-less type)

Steps:

  • Over a medium bowl, zest the lemon, making sure you do not grate any of the pith (white part of the peel). Add the juice of the lemons.
  • Mince the garlic and add it to the bowl. Next, add the olive oil, oregano, spearmint, salt and pepper. Mix well. Reserve one third of your marinade to brush on your kebabs before serving.
  • Cut the red onion into quarters, separate each one into 3 or 4 sections and then set aside.
  • Cut the chicken in 1½-inch cubes and add to the bowl with the lemon, oil and herbs. Mix well to coat the chicken with the marinade, then cover with plastic wrap and refrigerate for 4-6 hours (another trick is to mix them all in a large, zip-lock-style bag, tossing regularly).
  • Prepare a grill or set a grill pan over two burners and heat over medium-high heat. Loosely thread the pieces of chicken onto the skewers, alternating the chicken with sections of onion. Sprinkle both sides of the chicken kebabs with salt and pepper. Place the skewers on the hot grill and cook for 10 to 15 minutes, turning a couple of times, until the chicken has nice grill marks and is cooked through. Brush some of the reserved marinade on the hot kebabs and remove to a serving plate. Cover loosely with foil to keep warm.
  • Place the pita on the hot grill until just heated through.
  • To serve, cut the pita into wedges and arrange on the plater, alongside some tzatziki sauce (made with Fage yogurt), chopped red onions, cubes of Greek Feta cheese, grape tomatoes cut in half. Generously sprinkle with some dried oregano. Add the warm kebabs on the platter and serve right away. Enjoy a real Greek feast!

1 -2 lb pork tenderloin or 1 -2 lb pork roast, cut into 1 1/2-inch cubes
1 tablespoon olive oil
1 -2 cup lemon juice

Juice of 4 lemons (about 1/2 cup), plus more lemon wedges for serving
1 head of garlic, cloves separated and peeled
Kosher salt
2/3 cup extra-virgin olive oil
2/3 cup dry white wine
3 tablespoons dried mint

4 pounds whole chicken wings
Freshly ground black pepper
1 cup plain full-fat Greek yogurt

  • Combine the lemon juice, garlic and 2 tablespoons salt in a blender and blend on low until smooth. Transfer 2 tablespoons of the mixture to a medium bowl and reserve for the yogurt sauce.   • Meanwhile, make the yogurt sauce: Add the yogurt and dill to the bowl containing the reserved garlic-lemon mixture, season with pepper and stir until smooth. Transfer the sauce to a serving bowl, cover with plastic wrap and refrigerate until ready to serve.
  • Preheat a grill to medium heat. Lightly brush the grill grates with vegetable oil, then grill the chicken wings, turning often to prevent burning, until golden brown, lightly charred at the edges and cooked through, about 25 minutes.
  • Transfer the wings to a serving platter and season with salt. Drizzle with yogurt sauce and sprinkle with crumbled feta. Serve immediately with lemon wedges on the side.

1 teaspoon garlic salt (or you can used minced fresh garlic)

Steps:

  • Cube the chicken. I usually cut each breast into 5 pieces.
  • In a large non metallic bowl put the yoghurt, honey, olive oil, oregano, lemon juice and garlic salt and mix well to combine.
  • Add the cubed chicken and mix well again. The chicken now needs to be left to marinate. I usually put the meat and the marinade into a large freezer bag to ensure it is really covered. Marinate in the fridge for at least 4 hours.
  • When you are ready to cook, thread the chicken cubes onto skewers, about 5 pieces per skewer. Remember if you are using wooden skewers to soak them first so they don't burn.
  • Grill under a medium grill until each side is browned. Cut one piece of the chicken in half to ensure it is cooked through. These can also be cooked on the BBQ.

1 (12 inch) pre-baked pizza crust
1 cup tzatziki sauce
½ cup sliced, cooked beef, or to taste
1 cup sliced and quartered cucumber
1 cup pitted and diced kalamata olives
1 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1 egg yolk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place pizza crust on a baking sheet or pizza pan. Spread tzatziki sauce over crust and top with beef, cucumber, olives, feta cheese, and mozzarella cheese, respectively. Brush egg yolk over exposed pizza crust.
  • Bake in the preheated oven until cheeses are melted and crust is shiny golden brown, about 15 minutes.

1-2 lb cubed lamb
2 tbsp extra virgin olive oil
1 tsp dried oregano
2 clove garlic, minced
1 lemon (juiced and 2 tsp grated lemon zest)
Veggies of your choice to be steamed
1 cup brown rice

Steps:

  • Cook brown rice as package instructs (try cooking with fresh chicken or vegetable broth for a bit more flavour). Combine all ingredients in a bowl. Set aside to marinade for at least 4 hours. Stick the meat on skewers and grill until lamb is cooked through, rotating occasionally (can use a grill or a large fry pan). Serve with brown rice and your favourite steamed veggies (eg. Carrots, broccoli, cauliflower, snap peas, etc.).

Juice of 4 lemons (about 1/2 cup), plus more lemon wedges for serving
1 head of garlic, cloves separated and peeled
Kosher salt
2/3 cup extra-virgin olive oil
2/3 cup dry white wine
3 tablespoons dried mint
3 tablespoons dried oregano
4 pounds whole chicken wings
Freshly ground black pepper
1 cup plain full-fat Greek yogurt
3 tablespoons finely chopped fresh dill
Vegetable oil, for oiling the grill grates
Crumbled feta

Steps:

  • Combine the lemon juice, garlic and 2 tablespoons salt in a blender and blend on low until smooth. Transfer 2 tablespoons of the mixture to a medium bowl and reserve for the yogurt sauce. To the remaining garlic-lemon mixture still in the blender, add the olive oil, wine, mint and oregano and blend until evenly combined. Pour the marinade into a large bowl and add the chicken wings. Sprinkle with some pepper and toss to coat evenly, then cover with plastic wrap and refrigerate for at least 1 hour or up to overnight.
  • Meanwhile, make the yogurt sauce: Add the yogurt and dill to the bowl containing the reserved garlic-lemon mixture, season with pepper and stir until smooth. Transfer the sauce to a serving bowl, cover with plastic wrap and refrigerate until ready to serve.
  • Preheat a grill to medium heat. Lightly brush the grill grates with vegetable oil, then grill the chicken wings, turning often to prevent burning, until golden brown, lightly charred at the edges and cooked through, about 25 minutes.
  • Transfer the wings to a serving platter and season with salt. Drizzle with yogurt sauce and sprinkle with crumbled feta. Serve immediately with lemon wedges on the side.

2 lbs chicken breasts, boneless, skinless
3 lemons, juicy
3 tablespoons olive oil
3 garlic cloves, minced
2 teaspoons oregano
1/4 teaspoon salt
1/4 teaspoon pepper
parsley and crushed red pepper flakes (to garnish)
1 cup Greek yogurt, plain
1 cup cucumber, shredded
1 lemon, zested
1 tablespoon lemon juice
1 tablespoon olive oil
1 garlic clove, minced
1 tablespoon dill, chopped, fresh

Steps:

  • Place 8-10 wooden skewers in a shallow pan of water to soak before grilling. Soak 30 minutes.
  • Cut chicken breasts into 1-inch pieces and place in a large bowl. Add 3 tablespoons of fresh lemon juice from one lemon. Add the olive oil, garlic, oregano, 1 1/2 teaspoons salt, and 1/2 teaspoon ground black pepper. Toss and let the chicken marinade for 20-30 minutes.
  • Meanwhile, in a second bowl mix the ingredients for the Tzatziki sauce. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir well, then put in refrigerator until ready to serve.
  • Pre-heat the grill to medium heat. Slice the remaining lemons into thin rounds. Slide 7-8 pieces of chicken onto each skewer with a folded lemon slice in between every 2 to 3 chunks. Once all the skewers are ready, grill them for 5 minutes per side, 10 minutes total. Be careful that the wooden skewers are not resting directly on the grill.
  • Break open one chicken chunk to test for doneness.
  • Serve the chicken and the tzatziki sauce for dipping.
