Greek salad on a bun makes a wonderfully satisfying meal. The English muffins absorb the sweet and tangy juices from the salad without becoming soggy.

2 tomatoes, ripe but firm, 1 thinly sliced, 1 cut in small dice
2 ounces cucumber, thinly sliced
2 ounces green pepper about 1/2 small pepper, seeded and thinly sliced
1 slice red onion, cut in half, rings separated, rinsed and drained optional
1 tablespoon crumbled feta (about 1/2 ounce)
1 to 2 teaspoons chopped fresh mint
1 teaspoon sherry vinegar or red wine vinegar
2 teaspoons extra virgin olive oil
Salt
freshly ground pepper (optional)
2 small (3 1/2-inch) whole-wheat English muffins, lightly toasted
2 teaspoons mayonnaise
Dijon mustard (optional)

Steps:

  • In a medium bowl, combine the diced tomato, cucumber, green pepper, onion, feta and mint. Toss with the vinegar and olive oil. Season if desired with salt and pepper.
  • Spread the bottom half of an English muffin with half the mayonnaise. Layer half of the sliced tomato on top. Top with half the Greek salad mixture. Spread the top half of an English muffin with mustard if desired, and place on top of the salad. Press down, cut in half and serve. Alternately, you may wrap the sandwich in plastic and refrigerate. Use the remaining ingredients for a second sandwich.

2 large eggs
2 tablespoons plain low-fat Greek yogurt
1 tablespoon mustard, or to taste
3 cherry tomatoes, diced
1 tablespoon chopped fresh chives, or to taste
2 teaspoons lemon juice
1 teaspoon chopped fresh dill, or to taste
1 pinch garlic powder, or to taste
sea salt and ground black pepper to taste
¼ cup baby spinach, or to taste
2 slices whole grain bread, toasted

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and place in the refrigerator until cold, about 30 minutes.
  • Peel the shells off the eggs. Take the yolk from 1 egg and discard. Chop remaining yolk and both egg whites into small bits, leaving it chunky to add texture; place in a bowl. Add Greek yogurt and mustard; mix well. Mix in cherry tomatoes and chives, then mix in lemon juice. Season with dill, garlic powder, sea salt, and pepper.
  • Put egg salad on a slice of toasted bread. Add spinach and put the other piece of bread on top.

1 garlic clove
3 tablespoons mayonnaise
2 teaspoons grated lemon zest
1 lemon, juice of, fresh
1 tablespoon red wine vinegar
2 tablespoons greek extra virgin olive oil
salt & freshly ground black pepper
1/2 English cucumber, peeled
1/2 cup greek black olives (without pits)
1 cup grape tomatoes, sliced in half
1 small red onion, halved and thinly sliced (optional)
2 tablespoons fresh oregano or 1 teaspoon dried oregano
1/4 cup crumbled feta
1/4 head romaine lettuce, thinly sliced
4 naan bread or 4 pita bread
3 tablespoons finely chopped fresh flat leaf parsley
1 teaspoon grated lemon zest (optional)

Steps:

  • Combine garlic, mayonnaise, lemon zest, lemon juice, red wine vinegar and salt and pepper in a medium bowl. Slowly whisk in the oil until emulsified.
  • Slice cucumber lengthwise and slice very thinly into half rounds. Combine the cucumber, olives, oregano, tomatoes, onion, feta, and romaine in a bowl. Add some of the dressing and toss to coat, season with salt and pepper.
  • Spread some of the dressing over the entire surface of the bread, top with some of the salad and sprinkle some grated lemon zest and chopped parsley. Roll and eat or serve open face on a large plate.

1 tablespoon fresh lemon juice (or red wine vinegar)
2 tablespoons chopped pitted kalamata olives or 2 tablespoons other brine-cured black olives
1 teaspoon dried oregano
3 cups loosely packed thinly sliced romaine lettuce
2 cups diced seeded tomatoes
1 cucumber, peeled, halved, seeded, cut into 1/4-inch cubes

1 cup canned chickpeas, rinsed and drained
2 tablespoons fresh lemon juice
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1/4 cup fresh parsley leaves
1/2 small red onion, thinly sliced
Coarse salt and ground pepper
3 ounces crumbled feta
8 slices rustic bread or olive bread
1/2 medium cucumber, thinly sliced
1 tomato, thinly sliced

Steps:

  • In a food processor, pulse chickpeas, 1 tablespoon lemon juice, 1 tablespoon olive oil, and parsley until finely chopped. In a small bowl, stir together onion, 1 tablespoon lemon juice, and 2 teaspoons olive oil and season with salt and pepper. In another small bowl, mash feta with 1 tablespoon olive oil. Spread chickpea mixture on 4 slices bread. Top with cucumber, tomato, and onion mixture; season with salt and pepper. Spread feta mixture on 4 more bread slices and place on top of sandwiches.

Steps:

  • Combine garlic, mayonnaise, lemon zest, lemon juice, and red wine vinegar in a medium bowl. Slowly whisk in the oil until emulsified and season with salt and pepper. Combine the cucumber, tomatoes, onion, feta, romaine and parsley in a bowl. Add some of the dressing and toss to coat, season with salt and pepper. Spread some of the dressing over the entire surface of the bread, top with some of the salad, roll and eat or serve open face on a large plate. Makes 4 servings

16 large fresh basil leaves, thinly sliced

Steps:

  • Place tomato slices in strainer; drain 15 minutes. Combine tomatoes, spinach, cucumber, feta cheese, olives and basil in large bowl.
  • Whisk 1/4 cup olive oil, 5 teaspoons lemon juice and minced garlic in small bowl to blend. Season dressing to taste with salt and pepper. Pour dressing over salad and toss to coat.
