2 fresh garlic cloves, minced then crushed
1/4 teaspoon salt (optional)
1 1/2 teaspoons Dijon mustard (Grey poupon)
1/2 cup extra virgin olive oil
2 tablespoons fresh lemon juice (not bottled)
1/2 teaspoon sugar
5 tablespoons red wine vinegar
1/2 teaspoon basil leaves (optional)
1/4 teaspoon oregano leaves (optional)

Steps:

  • Mix all ingredients together and shake well to mix.
  • Update 6/23/10: For a creamier dressing, add all ingredients except oil to a blender. Pulse several times to mix ingredients. With blender running on high, slowly pour oil into blender until mixture is creamy. Refrigerate.

Greek salads are usually only dressed with olive oil and maybe lemon juice or red-wine vinegar. But this dressing is made of 'Greek' ingredients so, it's my Greek Dressing.

1/2 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1 -2 garlic clove, minced fine (depending on how strong you want your dressing)
1 teaspoon dried oregano (mediterranean)
1 tablespoon chopped fresh dill
salt & freshly ground black pepper
3/4 cup feta cheese, crumbled
3/4 cup buttermilk (or milk, but buttermilk is best, use 1/2 a cup if you want to use this as a dip)

Steps:

  • In a blender or food processor, whirl all the ingredients except the buttermilk for one minute.
  • With the blender running, slowly pour in the buttermilk and blend until thick and creamy (turn off the blender as soon as the dressing thickens or it may curdle).
  • Chill at least 1 hour so the flavours meld.
  • Refrigerate, tightly covered.
  • This makes nearly 2 cups of dressing and stays fresh for 3-4 days.
  • If the dressing separates, just give it a whizz in the blender again.

1 (10.5 oz) container yellow cherry tomatoes
1 (14.5 oz) can chick peas, drained and rinsed
1 1/2 cucumbers, peeled and sliced into quarters
2 Hass avocados, peeled, cored and diced (ripe but semi-firm)
1/4 cup chopped fresh parsley
3 oz feta cheese, crumbled
Dressing
1/2 cup olive oil
1/4 cup fresh lemon juice
1 tsp dijon mustard
2 cloves garlic, minced
1/4 tsp salt
1 Tbsp chopped fresh basil
3/4 tsp dried oregano

Steps:

  • In a salad bowl toss together tomatoes, chick peas and cucumbers. Add avocado and parsley and gently toss. Add desire amount of dressing and the feta and gently toss to evenly coat. Serve within an hour for best results. For the dressing: In a blender (or mixing bowl with a whisk), blend olive oil, lemon juice, mustard, garlic and salt until mixture is well emulsified. Stir in basil and oregano.

I assumed it was a common occurance until I started searching for recipes so I could duplicate it at home. I'm so happy to have finally found one on this site (Recipe #59898)! All the non-creamy dressings are too tart for me (and believe me, I've tried several)...this one hits the spot!! The credit for this recipe should be given to evelyn/athens...mine is only a slight modification of hers. (Mine includes homemade buttermilk and less feta.)

1/2 tablespoon white vinegar or 1/2 tablespoon lemon juice
1/2 cup skim milk
1/2 cup olive oil
2 tablespoons red wine vinegar

  • In a small bowl, combine the milk and vinegar or lemon juice. Let sit for 5 minutes. (This process will produce buttermilk. Alternatively, you can just use 1/2 c "real" buttermilk, but I use this method because I never have the real stuff on hand.).
  • Meanwhile, combine the remaining ingredients in a blender or food processor.
  • With the blade running, slowly pour in the buttermilk and blend just until thickened (if you over-blend, it will curdle).
  • Cover tightly and chill well before serving so the flavors have a chance to meld.
  • Dressing will keep for about 4 days (though it may need another whirl in the blender / food processor if it separates).

Easy and delicious dressing. Salad-haters tell me that they will eat a whole bucket of salad as long as it has this dressing on it. I have also brushed this dressing onto homemade pizza dough (in lieu of tomato sauce) when I make pizza at home. Note: If you do not have any red wine vinegar you can substitute a tablespoon of red wine (any kind will do) with a splash of regular vinegar. (Not really a new idea; just an easy substitution!)

1 head garlic, unpeeled
1/4 cup olive oil
1/2 teaspoon oregano
1/4 salt
1/4 teaspoon pepper
2 tablespoons balsamic vinegar
1 -2 tablespoon water
2 sun-dried tomatoes, minced
8 cups romaine lettuce leaves, torn
1 tomatoes, cored and cut into wedges
1 cup cucumber, diced
1/2 cup kalamata olive
1/2 cup feta cheese, crumbled

Steps:

  • Preheat oven to 400.
  • Using a knife, slice off 1/4 to 1/2 inch from the top of unpeeled garlic head to expose cloves. Place garlic in a small dish and drizzle with 1/2 tsp oil. Cover with foil, then bake in oven until garlic feels soft when pressed, 25 - 35 minutes. Remove from oven and cool. The recipe only calls for 5 - 6 cloves. Use the rest for other dishes.
  • Mash 6 cloves with a fork. Stir in oregano, salt and pepper. Whisk in remaining oil, vinegar and enough water for a dressing consistency. Stir in sun-dried tomatoes. Taste and add additional salt if needed.
  • In a large bowl, toss lettuce with tomatoes and cucmber. Toss with dressing. Add olives and cheese and toss again.

  • Slice cucumber lengthwise and slice very thinly into half rounds. Combine the cucumber, olives, oregano, tomatoes, onion, feta, and romaine in a bowl. Add some of the dressing and toss to coat, season with salt and pepper.
  • Spread some of the dressing over the entire surface of the bread, top with some of the salad and sprinkle some grated lemon zest and chopped parsley. Roll and eat or serve open face on a large plate.

3 cups torn romaine
1 plum tomato, sliced
1/2 cup julienned sweet red pepper
1/2 cup sliced seeded peeled cucumber
1/3 cup garbanzo beans or chickpeas, rinsed and drained
1/4 cup sliced fennel bulb
1/4 cup chopped celery
6 pitted ripe or Greek olives
1 green onion, thinly sliced
DRESSING:
2 tablespoons lemon juice
1 tablespoon olive oil
1 garlic clove, minced
1 teaspoon minced fresh cilantro
1 teaspoon water
1/2 teaspoon minced fresh mint or 1/8 teaspoon dried mint
1/2 teaspoon minced fresh oregano or 1/8 teaspoon dried oregano
1/2 teaspoon grated lemon zest
Dash each salt and pepper
1 tablespoon crumbled reduced-fat feta cheese

Steps:

  • In a large serving bowl, combine the first nine ingredients. , For dressing, in a small bowl, whisk the lemon juice, oil, garlic, cilantro, water, mint, oregano, lemon zest, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese.

1/4 cup lemon juice
1/4 cup olive oil
1 teaspoon sugar
1/2 teaspoon Greek seasoning
1/2 teaspoon minced fresh oregano
1/4 teaspoon minced fresh rosemary
1/4 teaspoon pepper
SALAD:
8 cups torn mixed salad greens
1 medium cucumber, seeded and chopped
1 medium sweet red pepper, thinly sliced
1 medium sweet orange or yellow pepper, thinly sliced
1 medium tomato, halved and sliced
1 package (4 ounces) crumbled tomato and basil feta cheese
6 green onions, chopped
1 jar (12 ounces) pepperoncini, drained
1 cup pitted Greek olives

Steps:

  • In a small bowl, whisk the first seven ingredients until blended., In a large bowl, combine the first seven salad ingredients. Drizzle dressing over salad; toss to coat. Top with pepperoncini and olives. Serve immediately.
