Number Of Ingredients 13

1 cup plain Greek yogurt, divided
2 tablespoons chopped fresh cilantro
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
3/4 pound boneless skinless chicken breasts, cut into 1/2-inch-thick strips
4 whole wheat pita breads (6 inches)
2/3 cup crumbled feta cheese
1/3 cup chopped seeded tomato
1/3 cup chopped fresh Italian parsley

Steps:

  • For sauce, mix 1/2 cup yogurt and cilantro. In a large bowl, mix spices and remaining yogurt; stir in chicken to coat., Place chicken on an oiled grill rack over medium heat; grill, covered, until no longer pink, 2-3 minutes per side. Grill pita breads until warmed, about 1 minute per side., Spread pitas with sauce. Top with chicken, cheese, tomato and parsley.

4 Pita bread
tomato sauce (homemade or jarred w/ Italian seasonings is best)
red onion, sliced
green pepper, sliced
black olive, sliced
tomato, sliced, or grape tomatos halved
feta cheese
cucumber
oregano (optional)

Steps:

  • Preheat oven to 375. Lay pitas on a baking sheet. Spread 2-3 tablespooons tomato sauce on each pita bread. Add onion, tomato, pepper, olives to your liking. Finely crumble feta cheese and sprinkle lightly over pita. Bake 10-15 minutes until hot and crsip.

3 pita bread (6 inch size)
2/3 cup feta cheese, crumbled
2 garlic cloves, minced
1/3 cup tomato paste (or tinned crushed tomatoes)
1 teaspoon oregano
1/8 teaspoon black pepper
1/3 cup tomato paste (or tinned crushed tomatoes)
1 1/2 teaspoons oregano
3 tablespoons red onions, finely diced
6 kalamata olives, pitted and diced
1 cup green bell pepper, diced small
1/2 cup feta cheese, crumbled
3 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 350F and spray a large baking sheet lightly with cooking spray.
  • Carefully slice one edge of each pita and open to form a pocket.
  • Mix the pita filling ingredients and place in the pockets (about two tablespoons per pocket, and yes, it should be quite thick), spreading it as thin as it will go over the bottom of the pocket to about an inch from the edge.
  • Place the pitas on a baking sheet and spread top evenly with tomato paste, sprinkle with the oregano then top with the remaining pita toppings ending with the parmesan.
  • Bake for 15 minutes or until hot and the green pepper is done.
