2/3 cup of olive oil
2 medium onions, diced
3-4 cloves of garlic, minced
2 1/4 - 2 3/4 pounds of potatoes, peeled and cut in large chunks
1 cup of grated fresh tomatoes
1/2 tablespoon of tomato paste
1 bunch of fresh parsley, finely chopped
2 teaspoons of salt
1/2 teaspoon of pepper
6-8 cups of water

Steps:

  • Sauté the onion and garlic in hot olive oil. When the onion is very soft (but not browned), stir in tomatoes, tomato paste, and parsley and cook for 5 minutes. Add the potatoes, salt, and pepper. Add the water slowly, stirring continuously. Bring to a boil over high heat, reduce heat to medium, cover, and cook for 30 minutes or until potatoes are done. Yield: serves 6

2 tablespoons olive oil
3 lbs chicken, cut into pieces
1 large onion, chopped
4 garlic cloves, chopped
1 (6 ounce) can tomato paste
1/4 cup dry white wine
3 cups water
1/2 cup flat leaf parsley, chopped
2 bay leaves
1 cinnamon stick
4 russet potatoes, peeled and cut into sixths

Steps:

  • Heat the olive oil in a dutch oven over medium to medium-high heat.
  • Season the chicken pieces with salt and pepper and then add to the hot oil, in batches if necessary, to brown. Set browned chicken aside.
  • Add more oil to the pot if necessary, and then add the onions, cooking until tender.
  • Stir in the garlic and tomato paste until the garlic is fragrant. Add the wine and deglaze the pan, being sure to scrape up the yummy browned bits. Cook until the wine and tomato paste are well incorporated.
  • Add the water, parsley, bay leaf, and cinnamon. Adjust salt and pepper to taste. Add the chicken and any accumulated juices back into the pot. Bring to a boil, then reduce to a low simmer and simmer, covered, for 45 minutes.
  • Season to taste. Add the potatoes and cook until fork tender, adding more water if necessary.

4 eggs, beaten
1 tablespoon butter
sea salt
fresh ground black pepper

Steps:

  • Bake shoestring fries according to package directions.
  • Melt butter in a frying pan (I prefer cast iron). sprinkle out cooked fries on top of the butter and pour in the beaten eggs.
  • Sea salt and freshly grind black pepper to taste.
  • Fold it over in half moon shape if you know how to do that without breaking!
  • Cook until done to preference.
  • Serve with pita bread as part of breakfast.

3 pounds baking potatoes, peeled and cut into 1½-inch cubes
½ cup olive oil
4 garlic cloves, minced
1½ teaspoons dried oregano, crumbled
1 teaspoon salt
Freshly ground black pepper
½ cup chicken stock
⅓ cup freshly squeezed lemon juice
2-3 tablespoons chopped fresh oregano

Steps:

  • Preheat oven to 400°F.
  • Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
  • Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.
  • Sprinkle with the fresh oregano and serve at once.

water (as needed)

Steps:

  • Preheat the oven to 400°F.
  • In a large baking pan place the peeled and quartered potatoes (add enough potatoes so that they fill the pan up, 3/4-inch from the top).
  • Sprinkle on the onions, garlic, salt, pepper, oregano, basil, lemon juice, and vegetable oil.
  • Add enough water so that the potatoes are just covered.
