Steps:

  • In a small bowl, mix together all the marinade ingredients.
  • Pour over lamb, beef, poultry, or fish, and marinate in the refrigerator for 1-2 hours before cooking.

3/4 cup dry red wine
1/3 cup olive oil
3 tablespoons chopped fresh dried oregano (can use 2 teaspoons (or more)
3 tablespoons fresh minced garlic
2 teaspoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon cayenne (can use black pepper)
8 lamb chops (about 1 to 1-1/4-inch thick)
3 tablespoons honey

Steps:

  • Mix/whisk the wine, oil, oregano, garlic, red wine vinegar, salt and cayenne or black pepper until well blended.
  • Arrange the lamb chops in a single layer in a glass dish; turn to coat with the marinade.
  • Cover and refrigerate for 24 hours, turning often.
  • Prepare the grill to medium-high heat.
  • Transfer the lamb to plates and season with salt and pepper (I use seasoning salt).
  • Mix the honey into the marinade.
  • Grill lamb to desired tenderness, turning and basting often with the marinade (for medium-rare grill about 10 minutes).

4 boneless skinless chicken breast halves
1 (8 ounce) package small whole mushrooms
1/4 cup fresh lemon juice
1 tablespoon finely chopped fresh oregano or 1 teaspoon dried oregano
1 tablespoon finely chopped of fresh mint or 1 teaspoon dried mint
1 teaspoon salt
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1/2 red onion, cut into wedges
hot cooked rice

Steps:

  • Cut chicken breast into 1 inch pieces.
  • Place chicken and mushrooms in zip-top plastic bag.
  • In a bowl, combine lemon juice, oregano, mint, salt, oil and garlic; mix well.
  • Add to bag with chicken and mushrooms; toss to coat.
  • Marinate for 10 minutes, turing once.
  • Thread chicken, mushrooms and onions evenly onto 8 metal skewers.
  • Place kabobs on grill over medium-high heat.

This would also be a great marinade for poultry. This is simple, quick and quite tasty!! Please allow time for marinading, as it isn't included in the prep time. Cavender's All Purpose Greek Seasoning includes salt, pepper, oregano, garlic, onion powder, parsley, flavor based seasoning and 5 other spices not listed. I would recommend grilling the shrimp and using the marinade to baste the shrimp during the initial cook time. This marinade will easily cover/marinade 1 1/2 lbs shrimp.

1/4 cup rice vinegar
1/4 cup olive oil
1/4 cup orange juice
1 teaspoon all purpose Greek seasoning
4 chicken breasts, boneless skinless

Steps:

  • Place chicken breasts in large ziplock bag and pound a little to tenderize, but not necessarily to flatten out. Then put in a fresh ziplock bag that you're sure has no holes in it. Place that in a large bowl.
  • Place first four ingredients in a bowl and whisk till blended. Pour over chicken, zip bag shut and place in refrigerator for about 2 hours.
  • Pour off marinade into a small saucepan and boil it to use as a sauce. If you boil it, it's OK to consume even though it had raw chicken in it. Grill chicken on outdoor grill or indoor broiler till done. Pour marinade sauce over it.
  • If you want to make your own Greek Seasoning Blend, here's how:.
  • 2 tsp salt.
  • 2 tsp dried oregano.
  • 1 1/2 tsp onion powder.
  • 1 1/2 tsp garlic powder.
  • 1 tsp cornstarch.
  • 1 tsp pepper.
  • 1 tsp beef boullion granules.
  • 1 tsp dried parsley flakes.
  • 1/2 tsp ground cinnamon.
  • 1/2 tsp ground nutmeg.
  • Mix well and store in airtight container.
