A light dressing makes this salad a nice complement to any meal. Feta cheese and olives are a fun addition.

Number Of Ingredients 11

6 cups torn romaine
1 cup chopped tomato
3/4 cup thinly sliced red onion
3/4 cup cubed cucumber
3/4 cup cubed feta cheese
18 pitted kalmata or ripe olives
3 tablespoons olive oil
1 tablespoon lemon juice
1-1/2 teaspoons dried oregano
1-1/2 teaspoons prepared mustard
1/4 teaspoon salt

Steps:

  • In a bowl, combine the first six ingredients. In a small bowl, whisk the remaining ingredients. Pour over salad and toss to coat. Serve immediately.

Another recipe which I found in Greek chef and restaurateur Theodore Kyriakou's 'real greek food', which he co-authored with food writer Charles Campion. So simple, so delicious and so quintessentially Greek! A really quick to make, fabulous side dish to serve with grilled meat and fish dishes, or with pasta and rice dishes. This recipe - for a classic lettuce salad - is from the island of Cos and, apparently, "from everywhere else in Greece"! When you come across a recipe like this one, you cannot be in the least surprised that Kyriakou maintains that "the term "Greek Salad" is one of the most abused in the world".

150 ml extra virgin olive oil
2 tablespoons white wine vinegar
1 romaine lettuce, shredded very finely
1 bunch spring onion, finely chopped, including the green parts
3 tablespoons finely chopped dill weed
sea salt, to taste
fresh ground pepper, to taste

Steps:

  • Mix the oil and vinegar together in a bowl, add the salt and pepper, to taste.
  • Combine the ingredients and toss with the dressing, and serve immediately. This salad should be crunchy, not soggy.

3 tablespoons extra virgin olive oil
1 1/2 tablespoons lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper, and extra for garnish
3 tomatoes, cut into wedges
1/4 red onion, sliced into rings
1/2 cucumber, sliced into thick half-moons
1/2 green pepper (capsicum), julienned
4 ounces (120g) feta cheese, cut into small cubes
16 kalamata olives

Steps:

  • Place the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine. Place the salad ingredients in a large bowl. Pour the dressing over the salad and toss gently to combine just before serving. Garnish the Greek salad with a little freshly ground black pepper.

3 roma tomatoes,chopped
1 green bell pepper, sliced
1 small English cucumber, chopped
1 small onion, chopped
1/4 cup black olives
2 oz. tomato basil feta cheese, crumbled
1/4 cup olive oil
1 tsp red wine vinegar
1 tsp lemon juice
1 clove garlic, minced
1/2 tsp oregano
salt and pepper to taste

Steps:

  • In salad bowl, combine tomatoes, bell peppers cucumber, onion and olives. Whisk together the oil, vinegar, lemon juice, garlic, oregano, salt and pepper. Let sit for 1 hour, occasionally stirring to blend flavors. Pour dressing over salad, add feta cheese and toss before serving.
