3/4 pound orzo, cooked al dente
1 large cucumber, seeded, quartered lengthwise, and sliced
3 green onions, thinly sliced
1 pint grape tomatoes, halved
1/4 cup chopped fresh dill, plus extra for garnish
1/4 cup white wine vinegar
3 tablespoons Dijon mustard
1/2 cup olive oil, plus additional for brushing shrimp
Salt and freshly ground pepper
3/4 pound feta cheese, crumbled
16 medium shrimp, peeled and de-veined

Steps:

  • Combine orzo, cucumber, green onions, and tomatoes in a large bowl. Place dill, vinegar, and mustard in a blender and blend until smooth. With the motor running, slowly add the olive oil and blend until emulsified. Season with salt and pepper, to taste. Pour the vinaigrette over the orzo mixture and stir well to combine. Gently fold in the feta cheese.
  • Heat grill to high. Brush shrimp with oil and season with salt and pepper. Grill for approximately 2 minutes per side or until just cooked through. Divide orzo salad among 4 take-out containers or plates and top with 4 shrimp. Garnish with additional dill.

This recipie was in the local newspaper last week and it looked so good I had to try it. It's Great! The melding of lemon, oregano, garlic and olive oil can't be beat when applied to shrimp on the BBQ.

2 lbs cleaned large shrimp
1/4 cup olive oil
1 teaspoon course sea salt
1/2 teaspoon pepper
1 tablespoon grated lemon peel
1 tablespoon oregano
1 garlic clove
3 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
1 teaspoon dried thyme or 1 teaspoon oregano

Steps:

  • Put all ingredients (except the dressing) in a large bowl and marinate for 15 - 20 minutes.
  • Thread shrimp on metal skewers ( or well soaked bamboo) and grill for 5-6 minutes turning often (they will turn red and opaque when done).
  • Serve over rice (or better yet pilaf) with lemon wedges, pitted black olives and cherry tomatoes and drizzle with the dressing.

4 tablespoons fresh lemon juice
4 tablespoons olive oil plus additional for brushing
1 tablespoon finely chopped fresh oregano
1 garlic clove, minced
1 pint cherry tomatoes, halved
1/2 English cucumber, cut into 1/2-inch pieces
1/2 small red onion, thinly sliced
1 lb large (20 to 24 per lb) shrimp, shelled and deveined
2 (8-inch) pita loaves (preferably pocketless)
1 yellow bell pepper, sides cut off and remainder discarded
6 oz feta, cut into 1/2-inch cubes
Special Equipment
6 (8-inch) bamboo skewers, soaked in warm water 15 minutes

Steps:

  • Prepare grill for cooking.
  • Make dressing:
  • Whisk together 2 tablespoons lemon juice, 3 tablespoons oil, half of oregano, half of garlic, and salt and pepper to taste in a large bowl.
  • Gently stir tomatoes, cucumber, and onion into dressing and let stand at room temperature while grilling.
  • Marinate shrimp:
  • Whisk together remaining 2 tablespoons lemon juice and remaining oregano and garlic in a large bowl. Stir in shrimp until well coated and marinate at room temperature 10 minutes.
  • Grill pitas and bell pepper while shrimp marinates:
  • Lightly brush pitas and bell pepper on both sides with some oil and season with salt and pepper. Grill pitas on an oiled rack set 5 to 6 inches over glowing coals until browned and slightly crisp, about 2 minutes on each side, then transfer to a rack to cool (pitas will continue to crisp as they cool).
  • Grill bell pepper until just softened, about 1 1/2 minutes on each side.
  • Grill shrimp:
  • Add remaining tablespoon oil to shrimp and toss to coat. Thread 4 shrimp lengthwise, each facing in same direction (so shrimp will lay flat on grill), on each skewer without crowding. Season shrimp with salt and pepper.
  • Grill shrimp until just cooked through, about 2 minutes on each side.
  • Break pitas into bite-size pieces and coarsely chop bell pepper. Remove shrimp from skewers and gently stir into tomato mixture with pitas, bell pepper, feta, and salt and pepper to taste.

1 teaspoon turbinado sugar
1/2 teaspoon baking powder
1/4 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
1 pound 16/20 tail-on shrimp, peeled and deveined
Oil, for the grill grates
1/2 cup red wine vinegar
2 tablespoons honey
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1 clove garlic, minced or zested through a microplane
Kosher salt and freshly ground black pepper
1/2 cup olive oil
2 hearts of romaine lettuce, halved
1 cup Kalamata olives, pitted and chopped
1 small English cucumber, diced
1 1/2 cups grape tomatoes, halved
Pickled Red Onions, recipe follows
1 cup red wine vinegar
2 tablespoons kosher salt
2 tablespoons granulated sugar
1 medium red onion, sliced 1/4-inch-thick

Steps:

  • For the shrimp: Combine the harissa powder, turbinado sugar, baking soda, granulated garlic, salt and pepper in a medium bowl. Toss the shrimp with the dry spices. Skewer and place on a rack in the fridge for 1 hour.
  • Preheat the grill to medium-high heat. Oil the grill grates and grill the shrimp until charred and crispy, 2 to 3 minutes a side.
  • For the sweet Greek dressing: Whisk together the vinegar, honey, mustard, oregano, garlic, salt and pepper in a bowl. Slowly stream in the oil to emulsify. Adjust the seasoning if necessary.
  • For the salad: Arrange the lettuce, olives, cucumbers, tomatoes and Pickled Red Onions on a platter, then drizzle with the sweet Greek dressing and top with the grilled shrimp skewers. Serve.
  • Simmer the vinegar, salt, sugar and 1/2 cup water in a medium pot until dissolved. Add the onions and turn off the heat. Let sit until cool. Transfer to resealable container, then place in the refrigerator overnight.

3 lbs large shrimp (APPROX.7/8 SHRIMP PER LB)
4 large garlic cloves
3/4 teaspoon salt
5 tablespoons fresh lemon juice
1/2 teaspoon black pepper
3/4 cup olive oil
1/4 cup finely chopped fresh oregano
3 lemons (Cut into 6 WEDGES)

Steps:

  • Clean and Devein Shrimp leaving shells in place.
  • Mince and mash Garlic in a Mortar and Pestle. Place in Blender with Fresh Lemon Juice and Black Pepper until smooth. With motor running, add oil in a slow stream, blending till emulsified. Transfer dressing to a bowl and add in your chopped FRESH OREGANO.
  • Prepare your GRILL (Moderate Heat for GAS and Direct Heat with Med-HOT Charcoal.
  • Toss Shrimp with 1/4 Cup Dressing in a Large Bowl and marinate NO more than 15 minutes(Texture of Shrimp will change if marinated longer!).
  • Brush Lemon wedges with some of remaining dressing and grill till marks appear (approx 5 minutes) then transfer to large patter.

3 cups torn romaine
2 medium tomatoes, cut into thin wedges
1 medium cucumber, quartered lenthwise and sliced 1/4 inch thick
1/3 cup pitted kalamata olives
1/4 cup chopped red onion
1/4 cup thinly sliced radishes
1/4 cup crumbled feta cheese
1 recipe Greek Vinaigrette
2 large whole wheat pita bread rounds, halved crosswise

Steps:

  • 1. Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp, pat dry with paper towels. In a small bowl toss shrimp with garlic and lemon peel. Cover and chill for 30 minutes. 2. Meanwhile, in a large bowl combine spinach, romaine, tomatoes, cucumber, olives red onion, and radishes, toss to combine. Set aside. 3. Thread shrimp onto four 8-inch skewers, leaving 1/4-inch space between pieces. 4. Grill shrimp over medium heat 6 to 8 minutes or until shrimp are opaque, turning once halfway through. 5. 20 jumbo shrimp, peeled and deveined
1/4 cup extra-virgin olive oil (EVOO), plus more for liberal drizzling
1 teaspoon dried oregano, crushed in the palm of your hand
1 tablespoon grill seasoning, such as McCormick's Montreal Steak Seasoning (a palmful)
2 pitas, split open
1 large garlic clove, minced and mashed to a paste with some coarse salt
Zest of 1 lemon and juice of 2 lemons
1 seedless cucumber, halved lengthwise, then sliced into half-moons
4 vine-ripe tomatoes, cut into thin wedges
1 small red onion, thinly sliced
1/2 cup fresh flat-leaf parsley leaves (a couple of generous handfuls), coarsely chopped
1/4 cup fresh mint leaves (a handful), coarsely chopped
3 celery ribs, thinly sliced on an angle
1 cup pitted kalamata olives, coarsely chopped
Coarse salt and coarse black pepper
1 3/4-pound brick of Greek feta cheese, drained and sliced into 12 thin wedges

Steps:

  • Heat a grill pan or outdoor grill to high.
  • Toss the shrimp with enough EVOO to coat, and season with the oregano and grill seasoning.
  • Grill the split pita halves for a minute or two to char on the grill. Remove when crisp, break or tear into large pieces, and reserve.
  • Combine the garlic with the zest of 1 lemon and the juice of 1 1/2 lemons in the bottom of a large, shallow bowl. Add the cucumbers, tomatoes, red onions, parsley, mint, celery, olives, and the reserved bread. Add the 1/4 cup of EVOO (4 times around the bowl) and lots of salt and coarse black pepper, then toss the salad with your hands to combine well.
  • Grill the shrimp on the screaming hot grill pan or outdoor grill. Cook for 2 to 3 minutes on each side, until pink and firm. Transfer to a plate and top with the juice of the remaining 1/2 lemon.
  • Pile the salad into large, shallow bowls and top with the grilled shrimp and wedges of feta.

GRILLED SHRIMP AND GREEK BREAD CHEESE

So there I am, minding my own business, scanning over the hundred some-odd cheeses that populate my favorite local market's cold case. The usual suspects are there in force - Cheddar varieties for days, countless camemberts, some funky monkey "pistachio-infused" wedge in coordinating green, and bread cheese. What what?? Bread cheese??? I mean, I've done bread and cheese, but ne'er without the two entering into our engagement as initially separate entities. Rick, the archetypal cheese man in his cute tweed derby cap, likened it to a grilling cheese. "The flavor is pretty mild," he tells me, "like a haloumi but not as salty. People buy it up like crazy and eat it for breakfast and dessert. I guess you could use it as a savory snack, too. That would be good." In the basket it goes. Juustoleipa, as the Finnish call their native creation, translates to "cheese bread". The idea is that this cheese is made and then baked, giving it a beautiful signature golden brown surface appearance. To serve it, the Finnish recommend warming it in a microwave or oven to soften the center. They're wicked fancy and make theirs traditionally with reindeer milk, but we mostly get cow's milk varieties in the US. Echoing Rick's comment, it's traditionally served as a breakfast or dessert item smothered in preserves or honey and nuts, but I've got other plans. Combining some Greek salad-inspired flavors of tomato, olive, cucumber and oregano, this surprisingly filling meal offers a fun bit of something different from the typical pasta/rice/polenta portion of dinner. It's got a great chewy (some say "squeaky") texture that's just as satisfying as any traditional carbohydrate. 16 large shrimp, peeled and deveined
1 teaspoon dried oregano
Salt and ground black pepper
2 tablespoons vegetable oil, divided
1 pint cherry or Campari tomatoes, halved
2 Kirby or 4 Persian cucumbers, thinly sliced
1 cup assorted pitted olives
2 tablespoons high-quality extra-virgin olive oil, plus more for drizzling
1 lemon, divided
One 10- to 12-ounce block bread cheese, sliced into four pieces

Steps:

  • Preheat a grill or grill pan to medium-high. Lay 8 wooden skewers in a baking dish and cover with cold water; soak for 15 minutes (you can skip this step if using metal skewers). Thread 4 shrimp onto two skewers for each serving. Season the shrimp with the dried oregano and some salt and pepper and drizzle with 1 tablespoon of vegetable oil. Grill the shrimp, turning occasionally, until pink in color and cooked through, about 5 minutes total.
  • While the shrimp are on the grill, in a medium bowl toss together the tomatoes, cucumbers, olives, olive oil, juice of half the lemon, and some salt and pepper. Let the salad marinate for 5 minutes. Cut the remaining lemon half into wedges
  • Once the shrimp come off the grill, brush both sides of the bread cheese slices with the remaining vegetable oil and grill just until softened, about 20 seconds per side.
  • Serve the bread cheese while still warm with the vegetable salad, grilled shrimp, wedges of lemon, and a few drizzles of extra-virgin olive oil.
