GREEK LEMON-GARLIC CHICKEN THIGHS AND POTATOES
This simple Greek chicken and potato bake is a great family dinner. Chicken thighs are marinated in a garlic-lemon marinade and then baked in the oven.

Steps:
- Combine lemon juice, chicken broth, olive oil, garlic, and oregano in a large resealable plastic bag. Add chicken, seal bag, and shake so chicken is well coated with marinade. Marinate in the refrigerator at least 2 hours or overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x11-inch baking dish with cooking spray.
- Pour chicken and marinade into the prepared baking pan. Arrange potatoes around the chicken.
- Bake in the preheated oven until potatoes are tender and chicken is no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat oven to 475 degrees F (245 degrees C).
- Place the cubed potatoes, water, lemon juice, vegetable oil, and olive oil in a 12x18 inch baking dish or roasting pan. Season with oregano, salt, pepper, and garlic.
- Roast, uncovered, in the preheated oven until the potatoes are tender and golden brown and the water has evaporated, about 1 1/2 hours. Stir the potatoes every 20 minutes as they bake, adding more water as necessary to prevent sticking. Allow the water to evaporate during the final 15 to 20 minutes of cooking, but be careful that the potatoes do not burn. Stir in the chopped fresh parsley, and serve.

Steps:
- Trim the excess fat off the lamb and set aside.
- Finely chop the whole garlic head.
- Combine with the remaining marinade ingredients.
- Place the lamb in a large, deep container or baking dish and pour in the marinade.
- Turn the lamb in the marinade so that it is coated all over.
- Cover and refrigerate overnight.
- Using a mortar and pestle, crush the ingredients for the dry rub all together until they are pastelike in consistency.
- Remove the lamb from the marinade and discard the marinade.
- Make 10-15 small incisions all over its surface using a small, sharp paring knife.
- Stuff each of these little holes with the dry rub and rub whatever is left over the surface of the lamb.
- Season well with salt and pepper and rub the lamb with about 2 tablespoons of olive oil.
- Preheat the oven to 375°F (190°C).
- Place the potatoes in a large roasting pan and toss with the lemon juice, garlic, olive oil and oregano.
- Season well with salt and pepper.
- Place the lamb over the potatoes.
- Roast, frequently basting both the lamb and the potatoes with the pan juices for about 1 hour and 30 minutes, for a well-done leg.
- Add a little water to the pan during baking if necessary to keep the pan juices from drying out.
- Remove the lamb from the oven and let rest for about 10 minutes before carving.
- Keep the potatoes in the turned off oven until ready to serve.

If you are a lover of Greek food then you will love this chicken, this is not by any means for those who have plain palette, this is a full flavored dish! --- this will fit into a 13 x 9-inch baking pan if you reduce the amount of potatoes otherwise you will need to use a slightly larger size pan, for this the chicken is cut in half do not cut into pieces, remember to check the broth in the pan frequently as it tends to cook down adding in more if needed, you may or may not need to add in more --- serve this with a crusty loaf of bread to dip into the pan juices

- Grease a roasting pan (use a pan large enough to hold the chicken halves and potatoes).
- Using kitchen shears cut the chicken down the center between the breasts, then cut down each side of the back bone, then discard the back bone.
- Season the chicken halves on both sides with salt and black pepper, then place skin side down in the roasting pan.

MY GREEK LEMON GARLIC POTATOES
These potatoes are wonderfully browned, delicious and fairly easy to prepare. They seem to compliment most everything we have paired them with. I looked at other Lemon Garlic Potato recipes and none were exactly the same, so I posted these here for safe keeping. If you try them, I surely hope you enjoy them as much as my family and I do!

Steps:
- Wash potatoes and cut into chunks. If they are the small potatoes, cut in half. If they are about the size of Idahos, cut into 6 even chunks.
- Mix seasonings, lemon juice, zest and oil together.
- Toss potatoes with lemon mixture.
- Place in a 11x7 cooking dish. Do NOT drain off any extra lemon mixture.
- Bake at 400 for 1 hour to 1 hour 15 minutes, turning a couple times.
- Sometimes I drizzle extra lemon juice over the finished potatoes just because I like them extra lemony.

- Cut each potato lengthwise into 8 wedges. You should have 32 potato pieces. (like joe joes).
- Heat vegetable oil and butter in heavy-bottomed 12 inch nonstick skillet over medium-high heat until butter melts and foaming subsides, swirling pan occasionally.
- Add potatoes in single layer; cook until golden brown (pan should sizzle but not smoke), about 6 minutes.
- Using tongs, turn potatoes so second cut sides are down; Combine garlic, olive oil, lemon juice, zest and oregano in a small bowl, pour over potatoes and stir well.
- Cook on second side, about 5 minutes longer. Stirring once more, add ground black pepper and reduce heat to medium-low, cover tightly, and cook until potatoes are tender when pierced with tip of paring knife, about 5 minutes.
