These grilled lamb burgers are served with slices of ripe tomatoes and red onion in pita bread with a fresh tasting cucumber sauce seasoned with fresh mint and garlic.

4 large unpeeled garlic cloves
1 ¼ pounds ground lamb
½ cup crumbled feta cheese
¾ teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
½ large cucumber, peeled, grated and squeezed very dry in a clean towel
¾ cup sour cream
1 tablespoon minced fresh mint leaves
1 teaspoon red or rice wine vinegar
1 clove garlic, minced
4 large, thin red onion slices
4 large, thin tomato slices
4 small (4 inch) pita breads

Steps:

  • Set 4 whole garlic cloves in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.
  • Break up lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat; stir with a fork to combine. Divide into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 inches wide. Refrigerate.
  • Mix cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
  • Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 4 to 5 minutes per side for medium to medium-well burgers.
  • Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

1/2 medium cucumber, peeled, seeded and shredded
1 container (8 oz) plain yogurt
4 medium green onions, chopped (1/4 cup)
1 clove garlic, finely chopped
1 tablespoon olive oil
1 teaspoon lemon juice
1/4 teaspoon salt
1 lb lean (at least 80%) ground beef
1/2 cup frozen chopped spinach, (thawed) squeezed to drain
1/3 cup crumbled feta cheese
1/4 cup finely chopped red onion
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
8 whole wheat hamburger buns, split
2 medium tomatoes, sliced
4 leaves romaine lettuce, torn in half

Steps:

  • Place shredded cucumber in clean dish towel; squeeze to remove any excess liquid. In small bowl, mix cucumber and remaining sauce ingredients. Cover; refrigerate until serving time.
  • Heat gas or charcoal grill. In large bowl, mix all burger ingredients except buns, tomatoes and lettuce. Shape into 8 patties, 1/4 inch thick. Place patties on grill over medium heat. Cover grill; cook 5 to 8 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.

This spread is so good on grilled steaks, pork and turkey burgers, I use it all the time topped on my salmon patties (recipe #155183) in between a bun. You can use it on just about anything! All the ingredients should be adjusted to taste. Plan ahead this needs to chill for a minimum of 5 hours, overnight is even better, this get stronger with chilling time, so be careful with the fresh garlic, it can be too overpowering in this spread if you make the mistake of adding in to much while making it... start with adding in a small amount and chill for about 3 hours if you feel that you want more garlic flavor then mix in more. You can add in salt, but the feta and olives are very salty.

1/4 cup kalamata olive, pitted and chopped (can use canned olives in place of kalamata)
1/2 cup mayonnaise (use mayo not salad dressing, I use Hellman's mayo)
2 teaspoons fresh minced garlic
2 teaspoons dried oregano
1/4 cup crumbled feta cheese (can use more)
black pepper (or use cayenne pepper)
fresh lemon juice

Steps:

  • Using a food processor, coarsely chop the pitted olives, then add in the mayo, garlic, oregano and feta; process until desired consistency.
  • Add in lemon juice and black pepper to taste, then process again for a couple of seconds.
  • Cover and chill a minimum of about 5 hours or overnight.

1.5 tablespoon fresh lemon juice
3 tablespoons olive oil
3 cups torn romaine lettuce leaves
1 cup halved cherry tomatoes
1/2 green bell pepper, sliced
1/2 small red onion, peeled and sliced
1 medium cucumber, peeled and chopped
1/2 cup crumbled feta

Steps:

  • Preheat broiled with broiler pan and rack. Mix together lamb, 1 tsp oregano, 1/2 tsp salt and pepper. Form into 4 patties. Broil patties, turning once, 5 in from heat, 8 min total (or grill). While burgers are broiling, whisk together lemon juice and 1/4 tsp salt, whisk in oil. Toss with lettuce, tomatoes, bell pepper, onion, cucumber. Top salad with burgers and sprinkle with feta.

2 Spanish or sweet onions, cut into thick 1/4" slices
Extra virgin olive oil
1/2 teaspoon kosher salt (1/4 tsp table salt)

1 1/2 pound ground turkey (or ground chicken, pork, beef or lamb)
1 tablespoon Dijon mustard
1/2 teaspoon ground coriander
1 tablespoon finely chopped fresh parsley
1 garlic clove, finely minced

4 kaiser rolls or hamburger buns
Roasted Pepper and Feta Spread (below)
/2 Spanish or sweet onion, thickly sliced
Extra virgin olive oil
Kosher salt and cracked black pepper
1 cup crumbled feta cheese
2 fire-roasted red bell peppers, home roasted or store-bought, cut into strips
2 pepperoncini (canned pickled yellow peppers), sliced

Steps:

  • 1. Heat a grill pan or frying pan over medium-high heat. Brush the onion slices with oil and grill/saute the onions until very tender, flipping the slices halfway. The longer you cook, the sweeter the onion will taste. Take 1/4 of the onions and finely chop. Reserve the remaining onions as rings to top the burger. 2. In a large bowl, combine the chopped onions, salt, pepper, ground turkey, Dijon mustard, coriander, parsley, garlic and cumin. Use your hands to mix thoroughly. Divide the mixture in 4 and shape into patties. With your fingers press down gently in the center of each patty to make a slight depression in the middle (the center of patty rises during cooking, so making a depression in middle will ensure an even patty). 3. Heat a grill pan or frying pan over high heat. Brush the burger with a little bit of olive oil. When the pan is hot, grill the patties for 2 minutes. Flip the patties and grill another 2 minutes. Turn the heat to medium-low, cover the pan and cook until the patties are cooked through, about 3-5 minutes, depending on how thick your patties are, what protein you use and how done you like your burgers. I suggest cooking pork, turkey and chicken all the way through. 4. Serve with the burger buns, Roasted Pepper and Feta Spread and the reserved grilled onions, tofu and sprouts.

8 ounces ground beef
3 tablespoons crumbled reduced-fat feta cheese (I use the already seasoned garlic and herb version)
1 1/2 teaspoons snipped fresh flat-leaf parsley
1/2 teaspoon dried oregano
1 garlic clove, minced
1/8 teaspoon ground black pepper
1 whole wheat hamburger bun, split and toasted, unless you want both top and bottom bun
1/2 cup fresh spinach leaves
2 slices tomatoes
thin slivers red onion (optional)

Steps:

  • Prepare Recipe #492963 set aside. In a medium bowl, combine ground beef, cheese, parsley, garlic, and pepper. Shape mixture into two 1/2-inch-thick patties.
  • In a large nonstick skillet, cook patties over medium-high heat for 4 minutes per side or until desired doneness. I like mine medium to medium rare. Your choice, of course. Line cut sides of bun halves with spinach. Top with burgers, tomato slices, and sauce. If desired, garnish with red onion.
