GREEK BABY POTATO KABOBS
Plan ahead the potatoes need to marinate for at least 2 hours, baby white potatoes work well also --- make certain to soak your bamboo skewers in cold water at least 30 minutes before placing the potatoes on --- try to use good size baby potatoes for this as you will need to slice them in half and make certain that they are all pretty much the same size for even cooking --- I have listed garlic powder, you may use fresh minced but I find that the fresh garlic tends to burn somewhat during the grilling, the choice is yours :)

Steps:
- Slice each potato in half, then poke a few holes into the skin-side.
- Place in a large heavy resealable plastic bag.
- In a bowl whisk together the olive oil with lemon juice, garlic, oregano, thyme and kosher salt; pour over the potatoes.
- Seal bag and turn to coat.
- Place in refrigerator for 2 hours.
- Soak your bamboo skewers in cold water for 30 minutes before placing on the potatoes.
- Remove the potatoes from the bag and discard the marinade.
- Skewer each potato with flat side all facing down.
- Preheat the grill to medium heat then oil the grates.
- Place the potatoes flat-side down on the grill.
- Do not close the top of the grill and keep an eye out for flare ups.
- Cook for about 20-22 minutes or until golden brown (cooking time will vary depending on the size of your potatoes).
- After cooking brush with melted butter then season with more fresh ground black pepper and kosher salt.

- Sprinkle beef with 1 teaspoon steak seasoning and garlic. Place cola in a large bowl. Add beef; toss to coat. Set aside., Place potatoes and water in a microwave-safe bowl. - Preheat the grill to medium.
- In a measuring cup, mix all the ingredients of the marinade except the mayonnaise. Add a generous pinch of salt and pepper. Remove 1/3 cup of the marinade and pour into a large bowl. Add the potatoes and chicken pieces. Mix well to coat and marinate for 30 minutes or overnight in the refrigerator.
- Skewer the bells and chicken cubes alternately on the wooden skewers. Grill over medium heat for about 6to 8 minutes on both sides. During this time, finish the vinaigrette. Add the remaining mayonnaise to the marinade.
- In a large serving dish, put the tomatoes, cucumber, onion rings, feta and olives. Place the kebabs on top and drizzle with the vinaigrette. Serve with grilled pita bread.

- Place potatoes and water in a microwave safe bowl. Cook potatoes in microwave on high until just tender, about 15 minutes, stirring half-way through. Drain potatoes and allow to steam for a few minutes to dry.
- In a large bowl, stir together mayonnaise, wine, rosemary, and garlic powder. Mix in drained potatoes and toss to coat. Marinate, covered, in the refrigerator for 1 hour.

- Soak four 8-inch wooden skewers in water for 30 minutes.
- Scrub potatoes.
- Cut any large potatoes in half.
- In a large saucepan cook potatoes, uncovered, in boiling salted water to cover for 5 to 10 minutes or until almost tender. Drain.
- Or place potatoes in a microwave-safe bow with 2 tablespoons water, cook covered, on 100 percent power (high) for 5 to 7 minutes or until almost tender.
