This is my favorite casserole ever! Cracker Barrel Hashbrown Casserole needs just 5 minutes of prep and is absolutely cheesy, delicious and completely irresistible! The perfect breakfast casserole!

32 ounces frozen shredded hash browns (defrosted)
½ cup melted butter
1 10 ¼ ounce can of cream of chicken soup (or cream of cheddar)
1 pint sour cream
½ cup onion (finely chopped)
2 cups colby cheese (grated)
¼ teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients in a large bowl reserving ½ cup of cheese for topping.
  • Place in a greased 9×13 casserole dish and top with reserved cheese.
  • Bake for 45-55 minutes or until hot and bubbly.

This is a great way to dress up hashbrowns! Substitute Colby cheese for a change from the usual Cheddar.

1 (2 pound) package frozen hash brown potatoes, thawed
½ cup butter, softened
1 teaspoon salt
½ teaspoon ground black pepper
½ cup chopped onion
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch pan with non-stick cooking spray.
  • In a large bowl, combine the potatoes, butter, salt, pepper, onions, soup and cheese. Gently mix and pour into prepared pan or dish.
  • Bake in the preheated oven until browned, about 60 minutes.

I found this recipe in our local paper a couple years ago. It was a recipe for Christmas day breakfast but I love it anytime and it had become a favorite with all my friends.

2 lb pork sausage ( i use hot but medium is good too)
2 c cheddar cheese, shredded
1(10.5 oz) can(s) condensed cream of chicken soup
1 c sour cream
8 oz french onion dip
1 pkg frozen chopped onion (thawed)
1 pkg frozen chopped green peppers (thawed)
30 oz pkg shredded hashbrowns (thawed)
2 small can(s) diced mushrooms

Steps:

  • 1. Cook sausage and drain.Set aside.
  • 2. In large bowl mix soup, sour cream,french onion dip, cheese,peppers, onions and mushrooms. Mix well When all ingredients are thoroughly mixed fold in package of hash browns.
  • 3. Spray a 9x12 baking dish and pour in half of the hash brown mixture. Spread half of the sausage over this layer.Spread remaining hash brown mixture over sausage. Spread remaining sausage over top.
  • 4. Bake in 350 degree over for about an hour or until casserole is thoroughly hot and bubbly. Remove from oven and allow to sit for 10 to 15 minutes before serving to allow casserole to set up making it easier to serve.
