German Cucumber Salad with Sour Cream Dressing - Just like Oma's image

Just like my Oma used to make. You're going to love this easy recipe that's perfect for all the cucumbers growing in your garden this summer.

Number Of Ingredients 7

2 tablespoon vinegar
2 tablespoon mayonnaise
2 tablespoon sour cream
1/2 tsp. sugar
1 tablespoon chopped chives
Salt and Pepper
2 medium sized cucumbers

Steps:

  • Peel the cucumbers if desired and thinly slice them with a mandoline slicer. The thinner the better!
  • Place the cucumbers in a colander and salt them...generously.
  • Cover the cucumbers with paper towel and place the colander over a bowl to allow the cucumbers to drain the excess water for at least 2 hours.
  • Squeeze the cucumbers to remove any excess water...you want them as dry as possible.
  • Add the cucumbers to a bowl and prepare dressing.
  • Combine all the ingredients for the dressing in a small bowl and then pour over the cucumbers. Toss gently to combine.
  • Cover and refrigerate for at least 1 hour before serving.

A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

2 large cucumbers, sliced thin
½ onion, sliced thin
1 teaspoon salt
½ cup sour cream
2 tablespoons white sugar
2 tablespoons white vinegar
1 teaspoon dried dill
1 teaspoon dried parsley
1 teaspoon paprika

Steps:

  • Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.
  • Stir sour cream, sugar, vinegar, dill, and parsley together in a large bowl.
  • Fold cucumber and onion slices into the sour cream mixture.
  • Refrigerate 8 hours to over night; garnish with paprika to serve.

My German heritage on my father's side brought me many delicious recipes that I came to love and continue to prepare for my family time and again. This salad is just one of them. Althogh I have tweaked the recipe just a bit from the way Grandpa made it, it is still just as delicious as the way my grandfather made it. Making it several hours before serving it gives it time to marry the flavors. It is one of my favorite salads. I can sit down and eat a bowl of this salad all by itself in no time!

Number Of Ingredients 10

2 English cucumbers peeled and thinly sliced
1/2 medium red onion sliced thinly
2 tablespoons salad oil
2 tablespoons cider vinegar
1/2 cup sour cream
1 1/2 teaspoons kosher salt
1 teaspoon granulated sugar
2 tablespoons dried chives
2 tablespoons dill weed
dried or fresh parsley to taste

Steps:

  • Place the sliced cucumbers in a bowl with lid. Add all the other ingredients and combine gently. Chill overnight, stirring once or twice. Add more salt to taste. Serve cold. The salt will draw out the water from the cucumbers and thin the dressing considerably. The dressing should be thin and tart.
