OLIVE DIP (OLD FASHIONED STUFFED CELERY DIP)
Remember that filling that your Grandmother used to stuff celery with as an appetizer? Cream cheese, with things like olives, pickles and sometimes nuts? Well, I have taken that idea a few steps (decades!) further and turned it into a dip that is amazing with veggies or crackers. So full of flavor you won't be able to resist it!

Steps:
- With a mixer, cream the cream cheese until smooth.
- Add in mayonnaise, mix.
- Add in dill pickle relish, chopped olives and olive juice. Cream together.
- Fold in green onion and celery. (reserve a little green onion and/or sliced olive for serving if desired.)
- Mix in ground black pepper and chives.
- Store in a bowl in the fridge until you are ready to serve.
- Serve with celery, carrots, bell pepper, crackers and chips.

OLIVE-STUFFED CELERY

- Finely chop the pickles and olives; set aside. In a small bowl, beat the cream cheese, Miracle Whip, juices and salt until blended. Stir in the pickles, olives and pecans., Pipe or stuff filling into celery sticks. Store in the refrigerator.

STUFFED CELERY
Steps:
- Cut off tops and bottoms of the celery.
- Cut the stalks in half. Set the stalks aside.
- Using a medium size mixing bowl and a handheld mixer, beat the cream cheese and mayonnaise for 1 minute.
- Sprinkle the packet of ranch dressing and fresh cracked pepper over the cream cheese mixture. Continue to mix until the ingredients are well incorporated.
- Fold in the shredded mozzarella.
- Spoon in and spread the cream cheese mixture into the celery stalks.
- Lightly sprinkle the smoked paprika over the stuffed celery stalks, if desired. Keep refrigerated until you are ready to serve.

STUFFED CELERY WITH OLIVES

Steps:
- Beat the cream cheese and heavy cream in a large bowl with a mixer on medium speed until light and fluffy, 1 to 2 minutes. Fold in the olives, chives, lemon zest, a pinch of salt and a few grinds of pepper.
- Transfer the cream cheese mixture to a piping bag fitted with a large star tip. Pipe into the celery, then dust with paprika.

Stuffed celery, it's easy to make and kids love it. My Great Grandma always made this and my cousins and I used to fight over the last piece.
