This great pie recipe goes back over 100 years. The recipe came from my grandmother's grandmother who was living in Charleston, South Carolina during the 1860's. Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

1 (9 inch) pie crusts
4 eggs
1 cup sugar
2 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup light corn syrup
1/8-1/4 cup melted butter
1 teaspoon vanilla
1 cup quick-cooking oatmeal (uncooked)

Steps:

  • Preheat oven to 350°F.
  • Beat eggs until frothy.
  • Combine sugar, flour, cinnamon and salt in a small bowl.
  • Add eggs; mix well.
  • Add corn syrup, melted butter, and vanilla.
  • Mix oatmeal.
  • Pour into uncooked shell.
  • Bake for 45 minutes.

This recipe for the Best Oatmeal Pie is Grandma's prized blue ribbon winning recipe. Like a pecan pie but with oatmeal!

1 (9-inch) refrigerated pie crust
4 large eggs
1/4 cup granulated sugar
3/4 cup light brown sugar, packed
2 Tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 cup light corn syrup
1/4 cup salted butter, melted
1 1/2 teaspoon vanilla extract
1 cup quick cooking oats

Steps:

  • Preheat the oven to 350F degrees.
  • Place the pie crust in a pie plate and flute edges if desired, set aside.
  • With a hand mixer beat eggs until light and fluffy.
  • Add in the granulated sugar, brown sugar, flour, cinnamon and beat until well combined.
  • Next add the corn syrup, melted butter and vanilla and beat until incorporated.
  • Lastly fold in the oatmeal.
  • Pour into the prepared pie crust and cook for 45 -55 minutes. Until the center has no jiggle.
  • Let cool fully about 3-4 hours before slicing. Serve with ice cream if desired.

3/4 cup brown sugar
3/4 cup molasses (use light, unsulfured molasses)
1/2 cup milk
3/4 cup oatmeal
1/4 cup butter, melted
1/8 tsp salt
1 tsp vanilla extract
1 frozen unbaked 9″ pie shell

Steps:

  • Preheat oven to 350F.
  • Mix all ingredients together in a large bowl. Pour into pie shell.

3 eggs
2/3 cup white corn syrup
1/3 cup honey
1/2 cup light brown sugar
1/2 stick butter or margarine, melted
2 teaspoons vanilla
2 tablespoons flour
3/4 cup coconut
3/4 cup pecans, finely chopped
1 cup quick or old-fashioned oats, uncooked
1 - 9 " Deep Dish pie crust, unbaked

Steps:

  • Place a pizza pan (or similar) in the oven and preheat to 350 F. In a mixing bowl, whisk the eggs. Whisk in the corn syrup, honey, brown sugar, melted butter, vanilla, and flour. With a spoon, stir in the coconut, pecans, and dry oatmeal. Place the unbaked pie crust on the preheated pizza pan and pour the filling into it. Bake 45-55 minutes, or until the center is set. (If top or crust is browning too much, lay a sheet of aluminum foil lightly over the top.) Cool completely before slicing. Serve with or without whipped topping or prepared whipped cream. ((NOTE: You can use a whole cup white corn syrup, omitting the honey, if desired.))

1 pound pitted dates, quartered
1-1/2 cups water
1/2 cup sugar
1-1/2 cups all-purpose flour
1-1/2 cups old-fashioned oats
1 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon almond extract
3/4 cup shortening
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. Press half onto bottom of a greased 13x9-in. baking dish. Carefully spread with date mixture. , Sprinkle remaining crumb mixture over filling; press down gently. Bake until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, serve with whipped cream.

This delicious pie recipe came from my mother. My husband especially enjoys it during the holidays. I have shared the pie crust with many others because it's flaky and so easy to roll out. We even use it at our children's school when apple pies are made for a fund-raiser.

1/2 cup light or dark corn syrup
3/4 cup rolled oats
1/2 cup sweetened shredded coconut
1/2 cup butter, melted
2 large eggs, well beaten
1 teaspoon vanilla extract
1 unbaked pastry shell (9 inches)
1 package (3 ounces) pecan halves

Steps:
