2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

1 lb ground beef
1 medium onion, finely chopped
2 garlic cloves, minced
1 teaspoon kosher salt
1 teaspoon pepper
1/2 cup fresh breadcrumb
2 large egg yolks
2 tablespoons extra virgin olive oil
1/2 lb white mushroom, sliced
1/2 cup dry sherry
2 cups chicken stock
2 tablespoons unsalted butter
2 tablespoons flour
2 tablespoons fresh dill, chopped
1/2 cup sour cream

Steps:

  • Combine beef, half of chopped onion, garlic, salt, pepper, bread crumbs, egg yolks and 1/2 cup water in a large bowl. Mix well and form into 1 inch meatballs.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add meatballs and cook, turning often, until well browned. Drain on paper towels.
  • Pour off excess fat in pan, leaving about 3 Tablespoons. Add remaining onion and cook until softened, about 5 minutes. Add mushrooms and cook until the liquid they give off has evaporated, about 7 to 10 minutes.
  • Add sherry and increase heat to high. Boil until almost all liquid has evaporated.
  • Add chicken stock and bring to a boil.
  • Rub butter with flour in small bowl until it makes a smooth paste. Pinch off pea sized pieces of mixture and add to boiling stock mixture a bit at a time, whisking constantly, for about 3 minutes.
  • Add the meatballs. Stir in sour cream and dill. Season to taste with salt and pepper. Cook until meatballs are just heated through.
  • Serve over egg noodles or rice.

½ teaspoon vegetable oil, or as needed
1 pound ground sirloin
3 tablespoons Worcestershire sauce
1 egg
⅓ cup dry bread crumbs
½ small onion, chopped
salt and ground black pepper to taste
¼ cup butter, divided
1 (16 ounce) package mushrooms, sliced
2 tablespoons all-purpose flour
1 (10.5 ounce) can beef broth
1 teaspoon ground mustard
⅓ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a baking sheet with oil.
  • Combine ground sirloin, Worcestershire sauce, egg, bread crumbs, onion, salt, and pepper in a bowl. Mix well. Divide into golf ball-sized meatballs. Place on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the center, about 15 minutes.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add mushrooms; cook and stir until soft, about 10 minutes. Push mushrooms to the side of the pan.

This is my huband's grandma's own stroganoff recipe. It's been passed down two generations to me and it's an easy and pleasing recipe that everyone I've made it for has loved.

3 lbs cubed round steaks
1 -1 1/2 lb egg noodles (or rice)
2 (10 3/4 ounce) cans mushroom soup
1 cup fresh mushrooms, sliced
1.5 (1 1/4 ounce) envelopes onion soup mix
3/4 cup water

Steps:

  • Preheat oven to 350 degree.
  • Brown the cubed meat.
  • Mix rest of ingredients together with it in an oven safe pan.
  • Place in oven for 1 ½ hours.
  • After 1 hour taste juice. If you add more water you may want to add a little more onion soup.
  • Serve over rice or egg noodles.

8 ounces broad egg white noodles (such as No Yolks®)
1 tablespoon vegetable oil
½ onion, chopped
2 teaspoons minced garlic
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
1 tablespoon Worcestershire sauce
15 frozen beef meatballs, or more to taste
¾ cup sour cream
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles and cook, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes. Drain.
  • Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook and stir until onion is almost soft, about 3 minutes. Reduce heat to medium and pour in cream of mushroom soup, milk, and Worcestershire sauce; stir until blended.

1 lb round steak - sliced into thin strips
1/3 c soy sauce
1/3 c Worcestershire sauce
1/2 c ketchup
3 Tbsp minced dried onion
1 can(s) cream mushroom soup or canned mushrooms
1 1/2 c sour cream
1 c all-purpose flour
garlic powder, to taste
lemon pepper, to taste
minced garlic, to taste
1 1/2 box beef broth
pkg egg noodles
2 Tbsp cooking oil

Steps:

  • 1. At medium-high heat, warm stock pot or Dutch oven. Slice the steak into thin strips. Season meat with garlic powder, lemon pepper, salt, and pepper. Toss meat in flour then shake off excess flour. Add oil to the heated pot and add seasoned steak.
  • 2. Once the meat is browned, add sauces and seasoning; ketchup, minced onion, minced garlic, beef broth, (beer or red wine-adds great flavor). Simmer for 1 hr to 1 1/2 hours.
  • 3. Boil egg noodles. Follow box directions. Drain and set aside.
  • 4. Once the meat is tender, mix warm water and flour in a measuring cup or coffee cup for thickening. Pour over the meat and sauce and stir till desired thickness.
  • 5. Remove pot from heat and stir in sour cream. Serve up over a plate of cooked noodles and mm-mm-mmmm yummy!!!
