This is a secret recipe from my husband's grandmother Peggy. I have never tasted anything else quite as good. It is super easy and amazingly delicious.

1 quart half-and-half
1 ½ cups sugar
½ cup lemon juice
lemons, zested

Steps:

  • Mix half-and-half, sugar, lemon juice, and lemon zest together in a bowl. Freeze mixture until ice crystals form, about 1 hour. Remove mixture from freezer, stir to distribute ice crystals, and return to freezer until ice crystals form again, about 1 hour.
  • Repeat freezing and stirring process twice. Cover the bowl with a lid and freeze until solid, about 2 hours.

3 lemongrass stalks, plus more for garnish (optional)
6 mint tea bags
1/4 cup honey

Steps:

  • Split 3 lemongrass stalks lengthwise, cut into 3-inch pieces, and smash lightly. Add to 6 cups water in a pot; bring to a boil. Pour into a large heatproof bowl; add tea bags and honey. Let cool, then steep in refrigerator overnight. Strain and serve over ice, garnished with a split lemongrass stalk, if desired.

Grandmom's recipe for a fabulous summer citrus-mint tea using fresh mint. Kids and adults alike love it! You can add Kentucky bourbon when the guest list is all adults. Serve over ice.

1 cup water
4 tea bags
½ cup chopped fresh mint
2 quarts cold water
1 cup orange juice
6 tablespoons lemon juice

Steps:

  • Bring sugar and 1 cup water to a boil in a small saucepan, stirring until sugar dissolves, about 5 minutes. Add tea bags and mint to sugar mixture; let steep for 10 minutes. Strain mixture and discard tea bags and mint.
  • Combine tea mixture, cold water, orange juice, and lemon juice in a pitcher.

3 tablespoons crushed fresh mint leaves
1 quart boiling water
½ cup instant iced tea powder
1 cup white sugar
2 quarts cold water
1 (6 ounce) can frozen lemonade concentrate, thawed

Steps:

  • In a 1 gallon pitcher, combine the mint leaves, 1 quart of boiling water, instant tea powder and sugar. Stir to dissolve sugar. Let stand for 15 minutes.
  • Stir in the cold water and lemonade concentrate. Serve in tall glasses over ice. Strain out mint leaves, if desired.

This recipe comes from my Grandma Mapel, a true country woman from Iowa. Growing up to me meant going to Grandma's house on the farm and eating the best food ever. Her lemon pie is tops!

Number Of Ingredients 16

1 sheet refrigerated pie crust
1-1/4 cups sugar
6 tablespoons cornstarch
2 cups water
3 egg yolks
3 tablespoons butter, cubed
1/3 cup lemon juice
2 teaspoons white vinegar
1-1/2 teaspoons lemon extract
MERINGUE:
1/2 cup plus 2 tablespoons water
1 tablespoon cornstarch
3 egg whites
1 teaspoon vanilla extract
Pinch salt
6 tablespoons sugar

Steps:

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven temperature to 350°., In a large saucepan, combine sugar and cornstarch. Stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes longer. Remove from the heat. Stir 1 cup of hot filling into egg yolks; return all to pan stirring constantly. , Bring to a gentle boil; cook and stir for 2 minutes longer. Remove from the heat. Stir in butter. Gently stir in lemon juice, vinegar and extract. Pour hot filling into pastry shell. , For meringue, combine water and cornstarch in a saucepan until smooth. Cook and stir until thickened and clear, about 2 minutes. , Meanwhile, in a large bowl, beat the egg whites, vanilla and salt on medium speed until stiff peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Gradually add cornstarch mixture, beating well on high. Immediately spread evenly over hot filling, sealing edges to crust, Bake at 350° until meringue is golden brown, 12-15 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

This was one of those recipe's that my grandma said no one would ever have and she refused to give it out. I feel that no recipe should be kept secret! But after she moved I found her recipe for this sitting in the pantry under our flour container. (not sure if she did it on purpose or by mistake) She used to make these as a "stocking stuffer" and passed them out to EVERYONE! This was one of the FEW things she knew how to make well. I think this would be good to cut into slices and serve with other goodies at parties for the holidays.

1 (18 ounce) package lemon cake mix
1 (3 1/2 ounce) package instant lemon pudding mix
1 cup water
1/2 cup oil (I prefer wesson)
4 eggs
1/4 cup poppy seed
1/2 teaspoon lemon extract

Steps:

  • Mix all ingredients together.
  • Grease and flour 5 mini loaf pans (the aluminum foil kind work well for this) or 2 small loaf pans.
  • Fill the loaf pan half way with batter.
  • Bake at 350 for approximately 40 minutes.
  • Let cool and enjoy!
