Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

1 cup sugar
4 cups sliced apples
2 cups all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon table salt
2 teaspoons cinnamon
2 beaten eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
1/2 cup walnuts, coarsely broken

Steps:

  • Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
  • Spread into a greased 9" X 13" cake pan or pyrex dish.
  • Bake at 350 degrees F for 30 to 45 minutes, until cake springs bakc when touched lightly, and apples are tender when pierced with a skewer.
  • Cool and serve. Cover leftovers tightly with foil to retain moisture.

APPLE MIX INGREDIENTS
4 c apples, peeled and sliced as for pie
2 c white sugar
1/2 c cooking oil
1 c walnuts or other favorite (optional)
2 eggs, well beaten
2 tsp vanilla extract
DRY INGREDIENTS
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt
2 c all-purpose flour (i always use wheat)

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Grease and flour one 9x13 inch cake pan
  • 3. In one large bowl, stir apples and sugar together until apples are evenly coated
  • 4. When well mixed, stir in oil, eggs and vanilla
  • 5. In another bowl: sift together all dry ingredients
  • 6. Slowly turn dray into apply mixture and combine well
  • 7. Add to baking pan and spread mixture evenly
  • 8. Bake in preheated oven for 50-60 minutes until cake tests done with an inserted toothpick coming out clean.
  • 9. Allow to cool on a wire rack. Serve with a dusting of confections sugar, whip cream or ice cream. Me I like it plain :)

4 c peeled and shredded apples (any kind sweet or tart depending on your taste) I leave the skin on my apples
2 c sugar
2 c all-purpose flour
1 1/2 tsp baking soda
3 tsp cinnamon
1 tsp salt
2 eggs
3/4 c oil
1c pecans chopped (optional)
(options) powder sugar to sprinkle on top, caramel to drizzle, ice cream, Cool Whip

Steps:

  • 1. Stir shredded apples and sugar in a large bowl.
  • 2. Add dry ingredients (flour, baking soda, cinnamon, and salt).
  • 3. Stir in the egg mixed with the oil into a measuring cup.
  • 4. Pour into the dry ingredients.
  • 5. Mix until thoroughly moist (do not overmix).
  • 6. Stir in nuts.
  • 7. Pour into a 9X13 pan sprayed with butter flavor no-stick spray.
  • 8. Bake at 350 for 50 minutes.
  • 9. It springs when pressed when done.
  • 10. Options for topping: Sprinkle with powdered sugar. Drizzle with caramel. Serve with Cool Whip. Serve ala mode with vanilla ice cream.

This was a massive hit when i was growing up. My grandma would make this weekly and as visitors called she would have orders to make her guests a cake for the following week. She served it with custard, vanilla ice cream or fresh cream and all were equally delicious! This was a great cake to eat during the winter served hot with custard. I have now started to add a handful of flaked almonds, sprinkled on top of the cake (just before it goes in the oven) The addition of the flaked almonds, seems to be an even bigger hit! Enjoy!

3 ounces butter
6 ounces caster sugar
1 orange rind, grated
8 ounces self raising flour
1 lb cooking apple, peeled cored and cubed
2 eggs, beaten
2 tablespoons milk
1 ounce candied peel, chopped
1 tablespoon granulated sugar
1 handful sliced almonds (optional)

Steps:

  • Grease and flour a 9 inch cake tin.
  • Cream butter and orange rind, caster sugar and beat until light and creamy.
  • Mix 1 tablespoonful of the flour with apples in a dish.
  • Put eggs, milk in bowl with creamed butted.
  • Add remaining flour, peel and apples to the creamed mixture; blend well with a metal spoon.

2 large eggs, room temperature
1/2 cup unsweetened applesauce
2 tablespoons canola oil
2 teaspoons vanilla extract

FROSTING:

  • Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. Number Of Ingredients 10

3 c chopped apples, granny smith, or your favorite baking apple.
1 c chopped nuts, either walnuts or pecans. may be omitted.
1 c vegetable shortening, or half butter and half shortening.
3 c sugar
3 eggs
DRY INGREDIENTS
2 1/2 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Steps:

  • 1. Grease and flour a 9 X 12 X 3 pan and set aside.
  • 2. Peel and chop apples. You may add 1 tsp. of lemon juice to the apples to prevent browning. Chop nuts. Set aside.
  • 3. Cream together the shortening and sugar. Add the eggs and combine.
  • 4. In a large bowl sift together the flour, baking powder, soda and salt.
  • 5. Add the dry ingredients to the creamed mixture a little at a time. Fold in the 3 cups of apples and the chopped nuts. The batter will be STIFF!
  • 6. Place in the greased and floured pan. You will need to use a spoon or your hands to push the batter evenly into the pan. Don't worry, it will come out beautifully even though it looks lumpy!
  • 7. Bake for 1 hour at 350 degrees. Cake is done when it is nicely browned and a toothpick inserted in the center of the cake comes out clean.
  • 8. Allow to cool on a rack. This cake is delicious served warm with ice cream! Let it cool a bit first though. It also travels well, allow it to cool completely.
