- Preheat oven to 300°. Line bottom of a 10-in. springform pan or a 13x9-in. baking pan with parchment; grease parchment. In a bowl, whisk together flour and next 5 ingredients. In a large bowl, beat oil, sugar and eggs until pale and slightly thick, about 2 minutes. Beat in vanilla and lemon juice. Add dry ingredients; stir just until moistened. Fold in apples and walnuts (batter will be thick). , Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 55- 60 minutes. Cool cake in pan on rack. , For glaze, mix confectioners' sugar and lemon juice; drizzle over cake.

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Fold in apples and pecans., Transfer to prepared pan. Bake 35-40 minutes or until top is golden brown and a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., In a small bowl, beat cream cheese, butter and vanilla until smooth. Gradually beat in confectioners' sugar (mixture will be soft). Spread over cake. Refrigerate leftovers.

GRANDMA'S APPLE CAKE
This is a favorite of my late grandma's recipes. She passed away a year ago October 27 and I am just now able to look at her cookbooks and make what I call my memory food. This is a very simple cake and is delicious iced or not. Enjoy!

- Combine next 4 ingredients and add to creamed mixture.
- Mix until blended and add apples and cinnamon.

GRANDMA'S FRESH APPLE CAKE
Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

Steps:
- Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
- Spread into a greased 9" X 13" cake pan or pyrex dish.
- Bake at 350 degrees F for 30 to 45 minutes, until cake springs bakc when touched lightly, and apples are tender when pierced with a skewer.
- Cool and serve. Cover leftovers tightly with foil to retain moisture.
GRANDMA'S FRESH APPLE CAKE
This recipe is a family favorite, we even serve it for birthdays, just add a dusting of powdered sugar! My Grandmother Marguerite L.C. Seelhorst made this every time we came to visit. It is easy to make, and feeds a large gathering.

Steps:
- 1. Grease and flour a 9 X 12 X 3 pan and set aside.
- 2. Peel and chop apples. You may add 1 tsp. of lemon juice to the apples to prevent browning. Chop nuts. Set aside.
- 3. Cream together the shortening and sugar. Add the eggs and combine.
- 4. In a large bowl sift together the flour, baking powder, soda and salt.
- 5. Add the dry ingredients to the creamed mixture a little at a time. Fold in the 3 cups of apples and the chopped nuts. The batter will be STIFF!
- 6. Place in the greased and floured pan. You will need to use a spoon or your hands to push the batter evenly into the pan. Don't worry, it will come out beautifully even though it looks lumpy!
- 7. Bake for 1 hour at 350 degrees. Cake is done when it is nicely browned and a toothpick inserted in the center of the cake comes out clean.
- 8. Allow to cool on a rack. This cake is delicious served warm with ice cream! Let it cool a bit first though. It also travels well, allow it to cool completely.
GRANDMA ALICE'S FRESH APPLE CAKE
Years ago when visiting my sister's in-laws, we often were treated to this wonderful Apple Cake as Grandma Alice had a small orchard in her yard. What a joy it was to savor the wonderful aroma of baking apples when we arrived .... the kids who were very young at the time enjoyed it just as much as we did! I have cherished this...

Steps:
- 1. Mix salad oil and sugar together in a mixer and add eggs or egg substitute until they are well-blended and light yellow in color, add vanilla. In a separate bowl, combine dry ingredients: baking soda, baking powder, salt, cinnamon and flour. Add chopped apples alternately with flour mixture and finally nuts if desired. Pour in 9X13 inch glass baking dish that has been sprayed with vegetable cooking spray. Sprinkle butterscotch chips evenly over the top before baking.
- 2. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. (If using Demarle bakeware, allow to cool for 15-20 minutes before turning out on a cake plate. This cake needs no frosting, it's moist and delicious!
