Buckeye Balls image

Peanut butter balls dipped in chocolate. They look like buckeye nuts. Absolutely delicious!

Number Of Ingredients 6

½ cup butter, melted
1 pound confectioners' sugar
1 ½ cups peanut butter
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
  • In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!

A family favorite, though i tend to use less powdered sugar than it calls for, i add the powdered sugar until i get the consistency i want.

1 lb margarine
2 lbs peanut butter
3 lbs powdered sugar
chocolate-flavored candy coating

Steps:

  • Mix margarine, peanut butter, and sugar thoroughly .
  • Refrigerate dough while melting chocolate in double boiler.
  • Ball dough and dip in chocolate.
  • Set on wax paper to cool and harden chocolate.

2 lbs powdered sugar
1 paraffin wax block
12 ounces milk chocolate chips

Steps:

  • Melt oleo, add peanut butter and sugar, mix well.
  • Shape mixture into walnut shaped balls. Refrigerate until firm. (at least 1 hour).
  • Melt paraffin and chocolate chips in top of a double boiler.
  • Dip chilled balls inot chocolate and place on waxed paper until firm.
