Number Of Ingredients 10

7 - 9 c cabbage (shredded or chopped fine)
1 can(s) pineapple (crushed, including juice)
1 small can mandarin oranges (chopped with juice)
1 Tbsp lemon juice
3/4 c mayonnaise
2/3 c brown sugar
1/2 c frozen orange juice concentrate
1 small cool whip
8 bananas (chopped and tossed with pineapple and oranges)
1 each: red and green bell pepers (diced)

Steps:

  • 1. Shred or chop the cabbage, put in large bowl or pan for mixing salad together. Set aside.
  • 2. put pineapple and chopped Mandarin oranges in a bowl (including juices). Add frozen orange juice, mayonnaise and brown sugar. Stir well until a nice sauce is made. Fold in the Cool Whip. Chop up the bananas and toss around in the fruits and juices (this helps meld flavors and prevent bananas from browning)
  • 3. Add the cabbage and red and green bell peppers. Stir and toss together until mixed well. Put in a nice serving container. Cover. Refrigerate at least 20 minutes. Just before serving: stir and toss salad to give it a fresh mixed look. Serve family style or in little dishes. *** You can garnish with maraschino cherries and Mandarin oranges if desired.

3/4 cup mayonnaise
2 tablespoons sugar
2 tablespoons cider vinegar
1 to 2 tablespoons 2% milk
4 cups shredded cabbage
3/4 cup pineapple tidbits
Paprika, optional

Steps:

  • For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat., Refrigerate until serving. If desired, sprinkle with paprika.

1 c sugar
6 Tbsp flour
2 c shredded sharp cheddar cheese (ok to use colby)
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 c cracker crumbs (we like to use ritz)
1 stick butter, melted, plus extra for greasing pan

Steps:

  • 1. Preheat the oven to 350 degrees. Grease a medium-size casserole dish with butter. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.
  • 2. In a smaller bowl, combine cracker crumbs, melted butter, and reserved pineapple juice, stirring until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

My grandmother was a wonderful cook, made great pies, and this was my favorite. She always used a homemade pie crust and served it with a dollop of Cool Whip or whipped cream on top. She didn't give me any idea how many bananas to use...so I guessed. She would also use the same custard, making a half batch, for the filling in cream puffs.

3 cups milk
4 tablespoons flour
2 tablespoons cornstarch
3 egg yolks
1/2 cup sugar
1/8 teaspoon salt
3 tablespoons butter
1 teaspoon vanilla
1 deep dish pie shell, baked & cooled
4 bananas, sliced

Steps:

  • TO MAKE FILLING: Mix flour and constarch with 1/3 cup cold milk to make a thin smooth paste, and set aside.
  • In a separate bowl, beat egg yolks, then add sugar and salt and beat well.
  • In a medium saucepan, scald remaining milk, stirring constantly.
  • While you continue stirring the milk in the pot, add a small amount of the scalded milk to the flour paste and a small amount to the egg/sugar mixture.
  • Pour both mixtures into the pot with the scalded milk and stir well.
  • Cook over medium heat, stirring constantly, until thickened. Remove from heat.
  • Add butter and vanilla, and stir well.
  • TO ASSEMBLE PIE: Pour a layer of custard filling in in the pie shell.
  • Place a layer of sliced bananas on top of the filling, then repeat with custard & bananas, and ending with a final top layer of custard.
  • Refrigerate once the custard has cooled.
  • Serve with whipped cream or Cool Whip.
