2 cups cornmeal
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten
2 cups buttermilk
1/4 cup bacon drippings

Steps:

  • Combine cornmeal, baking soda, and salt; stir in eggs and buttermilk.
  • Heat bacon dripping in an iron skillet until very hot; add drippings to batter, mixing well.
  • Pour batter into hot skillet, and bake at 450 F for about 25 minutes, or until bread is golden brown.

1 tablespoon salad oil
1 lb ground beef
1 onion, chopped
2 green peppers, chopped
1 cup cornmeal
1 (16 ounce) can cream-style corn
1 cup milk
2 eggs, beaten
3/4 teaspoon salt
1/2 teaspoon baking soda
1/3 cup bacon drippings
1/2 cup grated cheddar cheese

Steps:

  • Preheat oven to 350.
  • Heat oil in large skillet. Add beef, onion, peppers. Cook, stirring with a fork to break up meat, until meat is browned, set side.
  • Combine corn meal, corn, milk, eggs, salt, soda and drippings in a large bowl; mix until well blended.
  • Pour ½ of the batter into into a lightly greased heavy skillet or baking pan. Spoon meat mixture evenly over batter. Then put the other ½ batter on top of the meat an then sprinkle the top with the cheese an put in the oven.

BACON CORNBREAD

5 slices maple bacon
1/2 cup self-rising flour
3/4 cup fine cornmeal
Pinch salt
1 egg, plus 1 egg white
1 (14-ounce) can creamed corn

Steps:

  • Preheat the oven to 400 degrees F. Put a cast iron cornbread pan with 7 corn shaped or 8 wedge shaped baking divots in the oven to heat.
  • Slowly cook the bacon in a large skillet over medium heat until crispy. Set bacon aside on a paper towel lined dish and allow rendered bacon fat to cool slightly.
  • In a small mixing bowl, combine the flour, cornmeal and salt. In a larger bowl, whisk the eggs until frothy and add the creamed corn. Fold in the dry ingredients and combine until just mixed. Dice the cooked bacon and fold it into the batter.
  • Pour the bacon fat into the hot iron pan and divide it evenly between the sections, discarding the excess. Divide the batter between the sections until full.
  • Bake until golden in color, about 17 to 19 minutes. Allow the cornbread to cool slightly before serving. Enjoy!

MOM'S SOUTHERN CORNBREAD

My mom has been making this cornbread for over 40 years-I'm sure she got it from my grandma who was from Kentucky. It's not a sweet cornbread-just as good though. My father would take the leftovers and break a piece up in a glass of milk and eat it like cereal. It's very good. We always cook this in a cast iron skillet.

1 tablespoon bacon grease (can use vegetable oil but flavor will differ)
1 1/4 cups flour
1 1/4 cups white cornmeal (can use yellow)
1 egg
3 teaspoons baking powder
1 -1 1/2 cup milk

Steps:

  • Turn oven to 400 degrees.
  • Put bacon grease into cast iron skillet.
  • Put skillet into oven to melt and remove as soon as it's melted being sure to swirl around to coat the skillet.
  • Meanwhile, mix flour, cornmeal, egg, baking powder and milk-use the full cup of milk and then add until you get the right texture.You want it slightly thick but not too thick.
  • Add bacon grease to batter and pour back into skillet.
  • Bake for about 45 minutes-it will be very golden brown.

1 cup cornmeal (stone ground if you can find it, regular old Quaker if you can't)
1 cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 large eggs, lightly beaten
1 cup milk
1/4 cup rendered bacon fat
1/2 cup grated monterey jack cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Combine all dry ingredients except the cheese, and whisk until blended.
  • Add the wet ingredients in this order: eggs, milk, bacon fat.
  • Whisk or stir until well mixed, but not completely smooth, just like a pancake batter.
  • Add the cheese and stir to blend.

2 ½ cups fine white stone-ground cornmeal
1 tablespoon baking powder
1 ½ teaspoons salt
3 large eggs
1 ¾ cups buttermilk
2 tablespoons packed brown sugar
3 tablespoons rendered bacon fat or lard

Steps:

  • Preheat the oven to 425°F.
  • Whisk the cornmeal, baking powder, and salt in a large bowl. Whisk the eggs, buttermilk, and brown sugar in another bowl until smooth.
  • Whisk the wet ingredients into the dry ingredients.
  • Heat the bacon fat in a 12-inch cast-iron skillet until liquid. Swirl it around to coat the bottom and sides of the skillet, then pour the rest into the batter.
  • Whisk the batter until smooth, then pour into the hot skillet. Immediately transfer to the oven.
