APPLESAUCE MEATBALLS
This was my mother's standard dinner recipe for guests. These meatballs are juicy and packed with flavor! They go great with scalloped potatoes as a side dish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
- Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
- In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
- Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.

A moist rich tasting meatball with a smooth creamy sauce that get devoured every time. I have served these over buttered noodles or made double batches and bought to potluck dinners and they disappear.I have used ground turkey and it works nicely too!

- Beat egg and milk add stuffing. Stir till smooth with fork. Add meat, applesauce, sage, onions, salt and pepper. Blend gently do not overwork. Form 24 meatballs. Arrange in a nice casserole dish or glass baking dish. Blend soup and water well. Pour over the meatballs. Bake at 350 degrees for 45 minutes.

- Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. - Soak the breadcrumbs in the milk until the milk is absorbed (use a good sized bowl that is big enough to hold the other ingredients).
- Add the meat, salt, pepper, allspice, ginger, onion and egg, mix til well blended.
- Bring 2 quarts of water to a boil, add some salt.
- Roll the meat mixture into golfball (or a bit smaller) sized balls.
- Drop the balls into the boiling water and cook covered for 15 minutes.
- Meanwhile heat the oven to 350F and in a saucepan combine the brown sugar, broth & melted butter, stir & heat until the sugar is dissolved and forms a glaze.
- Place the meatballs in a single layer in a 9X13 baking dish.
- Spoon the glaze over the meatballs and bake uncovered for 30 minutes.
- Turn the meatballs a couple of times.

- Mix beef, applesauce, and bread crumbs.
- Add eggs; season with salt and pepper.
- Shape into small balls, roll in flour and brown in hot oil.
- Place balls in a casserole dish.
- To drippings in pan add vegetables and tomato juice.
- Season with salt and pepper and bring to a boil, then pour over meat balls (this is an important step).
- Cover and bake in a moderate oven of 350 degrees for about an hour, until vegetables have broken down and have created a nice sauce.
- If desired, the gravy can be thickened with a little flour-water paste before serving.
