This recipe comes from my wife's side of the family. The standard comfort food goodness of a German cream soup mixed with the ingredients available to northern prairie pioneers.

4 -5 medium potatoes
1/2 lb bacon
1 cup chopped onion
2 cups milk
1 cup cream
salt
pepper

Steps:

  • Peel and cut potatoes.
  • Barely cover potaoes with water and boil until just harder than you want.
  • Slice bacon into bite size bits and fry.
  • When bacon is nearly done add onions and carmelize.
  • When potatoes are ready remove most but not all the water and add milk,.
  • cream, and bacon onion mix.
  • Bring back to boil and simmer until potatoes are desired tenderness.
  • Salt and pepper to taste.

Grandma's secret: To make this a filling meal, Grandma usually served this soup with fresh bread. For a slightly different twist, serve it in individual bread bowls. I'm thinkin' this could easily be done in the crock pot.

3 medium red potatoes
2 cups water
1 small onion
3 tablespoons butter
3 tablespoons all-purpose flour
crushed red pepper flakes
ground black pepper
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
1 cup cooked ham, cubed

Steps:

  • Peel potatoes and cut into 1-inch cubes.
  • Bring water to a boil in large saucepan. Add potatoes and cook until tender.
  • Drain, reserving liquid. Set aside potatoes.
  • Measure 1 cup cooking liquid, adding water, if necessary; set aside.
  • Peel and finely chop onion. Melt butter in saucepan over medium heat.
  • Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
  • Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.
  • Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well. Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.
  • Store leftovers, covered in refrigerator.

GRANDMA'S HOMEMADE POTATO SOUP RECIPE

Number Of Ingredients 8

2 pounds of russet potatoes, peeled and cut into large chunks (about 1-1/2 inch)
1/2 cup of chopped onion
3 tablespoons of all purpose flour
Kosher salt and freshly cracked black pepper, to taste
1/4 to 1/2 cup (1/2 to 1 stick) of salted butter
Water to cover
1 (12 ounce) can of evaporated milk
Shredded cheese, for garnish, optional

Steps:

  • Toss the potatoes with the onion, flour and salt and pepper; set aside for about 10 minutes. Meanwhile melt the butter in a Dutch oven or soup pot. Add the potato mixture to the pot; stir to coat. Add enough water to cover the potatoes and bring to a boil; stir in the milk, reduce to a simmer, and cook, uncovered, stirring occasionally about 25 to 30 minutes, or until potatoes are tender. Taste, adjust salt and pepper, and continue cooking on simmer, uncovered, until the soup reach desired consistency and thickness. Garnish each serving with shredded cheese if you like and serve immediately. Cook's Notes: May also substitute green onion. Use an immersion blender or potato masher to puree the potatoes, if a less chunky texture is desired. Variation: Brown several slices of bacon, set aside and crumble. Add one stalk of celery, chopped, and saute the veggies in the pan drippings. Add the potato mixture and proceed with the recipe. Garnish with crumbled bacon. Cheesy Ham and Potato Soup: Add in 2 cups of smoked ham, cubed with the potatoes. Just before serving, stir in 1-1/2 cups of shredded cheddar cheese, just until melted.

3 large baking potatoes, cooked, peeled and cubed
1/4 cup yellow sweet onion, finely chopped
1/4 cup carrot, finely chopped
1/4 cup celery, finely chopped
2 garlic cloves, minced
6 slices bacon
4 cups milk
4 tablespoons flour
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 cup shredded cheddar cheese

Steps:

  • Fry bacon until crisp reserving 2 tablespoons drippings in skillet and set aside.
  • Over medium heat, sauté onions, garlic, carrots, and celery in bacon drippings until tender.
  • Prepare a roux of flour and butter in soup pot.
  • Add salt, pepper and milk.
  • Stir constantly with a wire whisk over medium heat.
  • When slightly thickened add vegetables. Cover and heat through.
  • Top with shredded cheddar cheese.
