GRANDMA'S GROUND BEEF, ZUCCHINI AND SAUERKRAUT HOTDISH
This family favorite hotdish combines ground beef, tender zucchini and tangy sauerkraut with a creamy homemade sauce, pasta, and lots of cheese for a delicious dinner!

Steps:
- Preheat oven to 350° F.
- Cook ziti noodles as directed on package until al dente (they will cook more in the oven).
- Add diced onion and ground beef to a large skillet and season with salt and pepper. Cook beef for 7-10 minutes or until no longer pink.
- Prepare zucchini by slicing it in half vertically then cut into thin slices.
CHEESY SAUERKRAUT HOTDISH
What a hit! I encourage you to try this. This is one of our family favorites. I make this for potluck dinners and always get requests for the recipe and it's something different for the table. Serve with warm bread and homemade pickles and you have a meal that will warm you from inside out and best yet, hardly any ever left.

Steps:
- Brown ground beef and onion.
- Drain off fat.
- Layer half of been and onion in 7x11 casserole.
- Cover with sauerkraut
- Top with remaining onion and beef mixture.
- Put uncooked egg noodles on top.
- Spread soups over noodles.
- Bake 30 minutes at 350 degrees, covered.
- Sprinkle cheese over top and bake an additional 30 minutes more.
- I often double this recipe for a 9x13 pan.
- Hint: Make sure you cover all your noodles with soup or they will be rock hard along the edges, bad for the teeth.
- Zaar won't allow the correct descripton of the sauerkraut, it calls for a 1 pound 11 oz can so I just computed to get the recipe to take.
SAUERKRAUT HOTDISH
I gal I worked with years ago, brought this to a potluck. Such comfort food! And yes, in Minnesota,, we call it Hotdish!!

Steps:
- Brown hamburger and onion, salt and pepper, drain. Add soups and milk. Stir.
- Cook noodles, partially, about 5 minutes. They will finish cooking during baking time.
- Either using a crock-pot(low heat), or a casserole dish, grease with butter, then layer in order, 1/2 of each. Noodles, sauerkraut, hamburger mixture, cheese.
- Repeat.
- Either cook in crock-pot on low 4 hours, or bake in a 350 oven, for 45 minutes, until hot and bubbly.

AUNT MARY'S SAUERKRAUT HOTDISH
My aunt Mary used to make this recipe. Great Sunday dinner. Feel free to add canned vegetables or substitute cubed, cooked chicken breast for the ground beef.

Steps:
- Brown ground beef.
- Cook noodles according to package directions.
- Drain sauerkraut.
- In a large pot, combine cans of condensed soup, 1 soup can of milk, and sauerkraut. Mix well to combine.
- Add in cooked beef and noodles. Stir until well coated.
- Cook together on stove over medium-high heat until heated all the way through.
- Top with shredded cheese before serving.

GRANDMA'S CREAMY SAUERKRAUT AND PASTA CASSEROLE
Got this recipe from my mom. She used to make this with my dad's mom, who they lived with when they first got married...it was grandpas favorite...I made this today - and I'm telling you it was delicious..I will make it again tomorrow for card club St.Patty party! Mmmmm

- 1. Heat oven to 350^. Grease or spray a large casserole;set aside. Drain sauerkraut and fry in a large skillet with the bacon fat for 10 minutes. Stir in sausage slices and fry for 10 minutes more. Pour mixture into a large bowl or pan. Set aside.
- 2. In the same skillet add the butter, onions, garlic, yellow pepper and fry until tender. Add the soup and milk to the skillet mixture and stir to combine. Add cooked noodles-stir to combine.
- 3. Pour this vegetable and mushroom soup mixture over the sausage/ sauerkraut mixture. Stir to combine. Pour into prepared casserole. Lightly season with salt and pepper or to taste. Bake for 25 to 30 minutes, or until bubbly and heated through. Top each serving with crumbled feta and a splash of rice wine vinegar...enjoy! NOTE: This casserole freezes well.
SAUERKRAUT HOTDISH
I was searching for a different recipe in our old, neglected recipe box & came across this. NO idea where it came from, but it does sound "interesting". Haven't made it, but just might SOON!

Steps:
- Place Sauerkraut in a collander & rinse well -- set aside to drain.
- Brown the ground beef & bacon together -- drain all but 1 T. fat.
- Season the kraut to taste & add to meat mixture.
- Add water & cover.
- Simmer for 1 hour.
- Place in a lightly buttered cassarole dish.
- Top with mashed potatoes & dot with butter.
- Bake in oven, uncovered for 1/2 hour @ 350°.
