1 (18.25-ounce) box chocolate cake mix (recommended: Betty Crocker)
1/3 cup vegetable oil
2 eggs
2 1/2 teaspoons almond extract, divided
1/2 cup white cranberry juice
1 (16-ounce) can white frosting or 1 (16-ounce) can chocolate frosting
Colorful jimmies

Steps:

  • 2 old fashioned glass soda bottles, 1 cola, 1 lemon-lime
  • Preheat oven to 350 degrees F. Lightly spray 2 (8-inch) round baking pans with baking spray; set aside.
  • In a large bowl, combine cake mix, oil, eggs, 1 1/2 teaspoons extract and white cranberry juice. Use an electric mixer to beat cake batter on low speed for 30 seconds. Scrape down sides of bowl and beat for 2 minutes on medium speed.
  • Divide batter evenly into prepared pans. Bake in preheated oven for 32 to 35 minutes, or until tester comes away clean.
  • Let cakes cool completely. Use a cookie cutter or water glass to cut out a circle to fit the soda bottle - it will nest into cake.
  • Add remaining 1 teaspoon extract to frosting and stir thoroughly. Frost entire cake. Sprinkle with colorful jimmies. Insert soda bottle into hole and serve.

2 (18.25 ounces) boxes strawberry cake mix (recommended: Pillsbury Moist Supreme)
2 2/3 cups water
1 cup vegetable oil
6 eggs
3/4 cup strawberry jam
2 (12-ounce) containers fluffy white, lemon, or strawberry frosting

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour 2 (9-inch) round cake pans with 2-inch high sides. Combine cake mixes, water, oil, and eggs in a very large bowl. Beat for 3 minutes, or until well blended. Divide batter between prepared pans. Bake for 40 minutes, or until toothpick inserted into center of cakes comes out clean. Cool cakes in pans on cooling rack for 20 minutes. Invert cakes onto cooling rack and cool completely.
  • Cut 1 cake horizontally in half. Place top cake layer, cut side up, on serving platter. Spread 1/2 cup of jam over cake layer. Top with bottom cake layer, cut side down. Cut second cake vertically in half, forming 2 half-circle pieces. Spread remaining jam over top of 1 half-circle cake, Top with second half-circle cake. Place stacked half-circle cakes on top cake on platter. Spread entire cake with frosting to coat completely. Arrange purchased decorations on cake to resemble circus stage.
