CLASSIC CRANBERRY SALAD



Classic Cranberry Salad image

This crunchy cranberry salad is a riff on the traditional Thanksgiving staple.

Number Of Ingredients 7

4 cups fresh or frozen cranberries (14 oz.)
¾ cup packed light brown sugar
½ cup fresh orange juice (from 2 oranges)
1 cup peeled and chopped Bartlett pears (about 2 small pears)
1 cup chopped fresh pineapple (from 1 pineapple)
½ cup thinly sliced celery (from 2 stalks)
½ cup chopped toasted pecans

Steps:

  • Bring the cranberries, brown sugar, and orange juice to a boil in a large saucepan over medium-high, stirring often. Reduce heat to medium-low, and simmer, stirring occasionally, until cranberries pop and mixture thickens, 12 to 15 minutes. Remove from heat, and cool to room temperature, about 30 minutes.
  • Stir in the Bartlett pears, pineapple, celery, and pecans. Transfer to a serving bowl; cover and chill salad 4 to 24 hours.

1 can(s) whole berry cranberry sauce
1 large box of jello (raspberry or strawberry)
1 c nuts, chopped (gram mostly used walnuts)
1 c celery, sliced
1 c drained & crushed pineapple
3 c water

Steps:

  • 1. Smash your whole cranberries up in a 3 quart sauce pan. Then, add your 3 cups water and jello then heat to boiling. Remove from stove and let it begin to set.
  • 2. Once it starts to gel then add remaining ingredients of celery, nuts and pineapple.
  • 3. Return to refrigerator and then serve it in a festive bowl.

I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

1 small package of cherry Jell-O (3oz box)
1 c hot water
1 c sugar
1 Tbsp lemon juice
1 c drained crushed pineapple (8oz can) (juice reserved)
1 c pineapple juice (use the reserved juice and add water to make 1 cup)
1 c ground cranberries
1 orange (ground)
1/2 c pecans, chopped

Steps:

  • 1. Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
  • 2. Add the remaining ingredients and mix. Chill overnight.
  • 3. Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!

3 cups fresh or thawed frozen cranberries, chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
2 cups heavy whipping cream
1/4 cup chopped walnuts

Steps:

  • In a large bowl, mix first 6 ingredients. Refrigerate, covered, overnight., To serve, beat cream until stiff peaks form. Fold whipped cream and walnuts into cranberry mixture.

1 (15 ounce) can crushed pineapple
2 (3 ounce) packages lemon Jell-O gelatin
7 ounces ginger ale
1 (16 ounce) can cranberry sauce
8 ounces cream cheese
1 (2 ounce) package Dream Whip
1/2 cup pecans, chopped

Steps:

  • Drain pineapple, reserving juice.
  • Add water to make 1 cup.
  • Boil; add Jello, stirring to dissolve.
  • Stir in ginger ale.
  • Blend pineapple and cranberry sauce.
  • Fold into Jello.
  • Chill in 9x9 inch dish.
  • Make Dream Whip according to package directions.
  • Beat in cream cheese.
  • Spread over Jello and top with pecans.
  • May add 1/4 to 1/3 cup powdered sugar to topping, if desired.
  • Skip the nuts if you don't like them. Also, I tend to buy two of the smaller cans of cranberry sauce, one jellied, one chunky -- I like the extra texture. AND -- make this the night before or your frosting will be runny!

1 cup finely chopped walnuts

1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans

  • Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.

2 oranges, zested, pith and seeds removed (Navel or Texas Sweet)
zest of above 2 orange
2 cups pecans
24 ounces cranberries, fresh, freeze upon purchase
1 Granny Smith apples, quartered, cored
1 Red Delicious apple, quartered, cored
1 -2 cup sugar
1 pinch salt
1 teaspoon cinnamon

Steps:

  • Place all ingredients (including orange zest, but not pith) into food processor in order listed. Pulse until well chopped.
  • Refrigerate at least 1 hour. Keeps for up to 10 days, or freeze.
