I like fruitcake as long as it doesn't have a lot of strange fruit in it. I like dates, candied cherries, raisins, and walnuts. So that limits a lot fruitcakes although I have changed recipes to suit my taste. I also like graham crackers, so when I found this on the cracker box years ago, I had to try it. I liked it.

Number Of Ingredients 17

1 (8 ounce) package chopped dates
1 (4 ounce) container candied green cherries (no mint flavor)
2 (4 ounce) containers candied red cherries
1 1/2 cups walnuts (coarsely chopped) or 1 1/2 cups pecans (coarsely chopped)
1 cup raisins
1 cup flaked coconut
2 tablespoons grated orange rind
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon clove
2 1/2 cups finely rolled graham crackers
1 1/4 cups butter
1 1/2 cups light brown sugar
6 eggs (separated)
1/2 cup orange juice

Steps:

  • In a very large bowl combine the first seven ingredients with 1/2 cup flour.
  • Mix the remaining flour with the next five ingredients.
  • Stir in the graham cracker crumbs.
  • In a large mixing bowl beat butter and sugar till creamy.
  • Gradually add egg yolks and beat till thick and fluffy.
  • Add the graham crumb mixture and blend well.
  • Stir into fruit mixture with orange juice.
  • In separate bowl, beat egg whites till stiff but not dry; fold into graham cracker mixture.
  • Turn into a well-greased 10" tube pan and bake in 325 degree oven for 1 1/4-1 1/2 hours.
  • Cool in pan for 30 minutes then take out and put on rack to cool completely.

Yield Makes 16 servings.

Number Of Ingredients 10

1 pkg. (16 oz.) graham crackers, finely crushed (about 5 cups crumbs)
1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/4 tsp. ground cloves
3/4 cup raisins
1 cup pitted dates, finely chopped
1-1/2 cups mixed candied fruit
1 cup walnut pieces
1/2 cup orange juice
1/3 cup light corn syrup

Steps:

  • Line 8x5-inch loaf pan with foil, with ends of foil extending over sides of pan; set aside. Mix graham crumbs, spices, raisins, dates, candied fruit and walnuts in large bowl. Mix orange juice and corn syrup until well blended. Add to crumb mixture; stir just until crumbs are moistened.
  • Press graham mixture firmly into prepared pan; cover tightly. Refrigerate at least 2 days.
  • Remove cake from pan just before serving, using foil handles. Discard foil. Drizzle cake with Powdered Sugar Glaze (see Tip), if desired. Let stand until firm. Store, tighty wrapped, in refrigerator.

1 jar (8 oz.) mixed candied fruit
1 package (8 oz.) pitted dates, finely snipped
1 jar (8 oz.) red cherries, quartered, drained
1 1/2 cups broken nuts (any type)
1 cup raisins
1 cup flaked coconut
2 Tbsp orange rind
1 cup all-purpose flour, divided
1 tsp baking powder
1 tsp salt (optional)
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 in ner-seal packets HONEY MAID GRAHAM CRACKERS (finely rolled) (2 1/2 cups)
1 1/4 cups butter or margarine
1 1/2 cups light brown sugar, packed
6 eggs, separated
1/2 cup orange juice

Steps:

  • In a very large bowl combine first seven ingredients with 1/2 cup flour. In another bowl, mix remaining flour with next 5 ingredients.
  • In another large bowl, beat butter and sugar until creamy. Gradually add egg yolks and beat until thick and creamy. Add graham cracker mixture, blend well. Then stir into fruit mixture with orange juice. Can substitute juice from cherries. Beat egg whites until stiff but not dry. Fold in graham mixture. Can use a tube pan if you choose or several smaller pans for personal sizes.
  • Bake at 325 degrees F. If tube pan approx 1-1 1/2 hours, if smaller pans 1/2 hour.
