1 partially cooked ham (I prefer the butt end)
yellow mustard
brown sugar
1 can sliced pineapple

Steps:

  • Make a paste with mustard and brown sugar.
  • Add pineapple juice to thin it a little.
  • Put ham into roasting pan and rub the mixture all over it.
  • Bake as directed on the ham label, adding pineapple rings for the last half hour.

After looking for a new ham recipe for Easter, we came across this one on the New Orleans Times Picayune website. Charmaine Neville, sister to the Neville Brothers, submitted this recipe and said, "You know how ham tastes salty? Well, I don't play that," Neville said for the story. "Mine has got to be sweet to the bone. I always use Chisesi ham. You can get it spiral-sliced at the supermarket. Spiraling is the secret, so it soaks up all the marinade."

1 (15 -20 lb) ham, Spiral Cut, 15 to 20 lbs
1 (12 ounce) jar creole mustard (Dijon can be substituted)
2 lbs dark brown sugar (the darker the better)
1 (12 ounce) can Coca-Cola, room temperature

Steps:

  • In a large bowl mix the mustard and brown sugar until a big sticky mess is formed making sure to break up any clumps of brown sugar.
  • Place the ham in the bag and using your hands or a rubber spatula spread the sugar-mustard glaze evenly over the ham.
  • Pour the Coke into the bag over the ham and seal the plastic bag tightly.
  • Place the bag in the refrigerator and refrigerate for 2 - 3 days.
  • On the 3rd day, rise the ham from the bag and place in a 300 degree oven for 45 minutes.
  • After the initial 45 minutes, baste the ham every 15 minutes for a total of 10 minutes per pound total roasting time or "until it falls apart.".

Paula Deen's Old-Fashioned Holiday Glazed Ham image

This is a Paula Deen classic made with a spiral-sliced ham coated with a brown sugar/mustard glaze and then covered with pineapple rings, maraschine cherries and cloves. I found this in the December 2009 Food Network Magazine. Note: I am guessing on the size of the jar for the maraschino cherries. The recipe just calls for a small jar.

1 spiral-sliced ham
1 (20 ounce) can pineapple slices, juice reserved
15 -20 whole cloves (optional)
1 (8 ounce) jar maraschino cherries
3/4 cup packed light brown sugar
2 tablespoons yellow mustard

Steps:

  • Preheat the oven as directed on the ham package and follow the instructions for baking the ham. Remove the ham from the oven about 30 minutes before the end of the warming time.
  • Decoratively arrange the pineapple slices on top of the ham, securing the with whole cloves, if using, or toothpicks. Place a cherry in the center of each pineapple and secure with a clove or toothpick.
  • In a small bowl, combine the brown sugar, mustard and just enough of the reserved pineapple juice to make a thick glaze. Spoon the glaze over the ham and bake for the remaining 30 minutes. Remove the ham from the oven, transfer to a cutting board and carve.

BAKED HAM WITH BROWN SUGAR-HONEY GLAZE

1 10-pound bone-in smoked ham (with water added)
1 1/2 cups packed light brown sugar
1/2 cup clover honey

Steps:

  • Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
  • Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
  • Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)
