2 pounds skinless, boneless chicken breast halves, cubed
1 (14.5 ounce) can chicken broth
5 (14 ounce) cans navy beans, rinsed and drained
2 (14 ounce) cans white corn, drained
2 (4 ounce) cans chopped green chilies
1 ½ teaspoons minced garlic
2 teaspoons ground cumin
1 ½ teaspoons red pepper flakes
1 teaspoon dried oregano
½ teaspoon salt
1 tablespoon dried minced onion, or to taste

Steps:

  • Place chicken and chicken broth in a saucepan over medium heat. Bring to a boil and cook until chicken is no longer pink and juices run clear, 7 to 10 minutes.
  • Transfer chicken and broth to a slow cooker. Stir in navy beans, corn, green chilies, garlic, cumin, red pepper flakes, oregano, salt, and onion powder. Cover and cook on Low until flavors are blended, 8 to 9 hours.

Game day at the Williams' house isn't complete without a slow cooker full of this savory chicken chili simmering away. 1 3/4 pounds boneless skinless chicken breast
2 tsps cumin ground
2 tsps oregano leaves
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp red pepper ground
1 1/4 tsps salt
1/2 tsp black pepper ground
2 cans (15 ounces each) white beans such as cannellini, navy or great northern, drained and rinsed
1 1/2 cups yellow corn
1 medium yellow onion peeled and chopped
1 medium green bell pepper seeded and chopped
1 container (32 oz) unsalted chicken stock
1/2 cup finely chopped fresh cilantro
1/2 package (4 oz) cream cheese softened

Steps:

  • Place chicken in slow cooker. Mix seasonings, salt and pepper in small bowl. Sprinkle chicken with seasoning mixture. Add remaining ingredients, except cream cheese; stir to mix. Cover.
  • Cook 8 hours on LOW or 3 to 4 hours on HIGH.
  • Remove chicken from slow cooker. Shred, using 2 forks. Set aside.
  • Transfer 1 1/2 cups chili mixture from slow cooker to blender container. Add cream cheese. Pureé until smooth. Stir into slow cooker. Return chicken to slow cooker, stirring to mix. Cover.
  • Cook 5 to 10 minutes on HIGH, or until heated through. Stir before serving. Serve with desired toppings, such as sliced jalapeños, chopped avocado, sour cream, tortilla strips and shredded cheese.
  • Tips:• For thicker chili, whisk 1 tablespoon corn starch and 2 to 3 tablespoons milk or half and half in small bowl until smooth. Stir mixture into chili and cook 5 minutes longer on HIGH. • Substitute 1 jalapeño pepper, chopped or 2 cans chopped green chilis in place of the green bell pepper, for a spicy kick.

There are many ways to make chili, but my favorite is this slow cooker white turkey chili recipe. It takes just minutes to throw together in the morning before work; then, all you have to do when you get home is heat up some cornbread or sourdough bread for dinner. A quick and easy meal with no mess!

2 cups chicken broth
1 cup salsa verde
15 oz canned navy beans drained and rinsed
2 teaspoons cumin
½ teaspoon dried oregano
½ teaspoon salt
1/4 cup heavy whipping cream
2 tablespoon cornstarch

Steps:

  • Brown ground turkey in skillet until cooked through
  • Add to slow cooker along with broth, salsa, beans, and seasonings
  • Cover and cook on low for 4-6 hours or high for 2-3
  • Whisk cornstarch with and equal amount of water until smooth
  • Add mixture to slow cooker along with heavy cream and let heat through 15 minutes
  • Serve topped with cheese, fresh cilantro, sour cream or as desired.

2 (15 ounce) cans cannellini beans
1 large onion, chopped
1/2 cup butter, unsalted
1/4 cup all-purpose flour
3/4 cup chicken broth
2 cups half-and-half
1 teaspoon Tabasco sauce (to taste)
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt (to taste)
1/2 teaspoon white pepper (to taste)
4 ounces of whole mild green chilies, drained and chopped
5 boneless chicken breasts, cooked and cut into 1/2 inch pieces (about 2 lbs)
1 1/2 cups monterey jack cheese (about 6 ounces)
1/2 cup sour cream

  • Drain beans in a colander and rinse well.
  • In a skillet cook onion in 2 tablespoons of butter over moderate heat until softened.

Hatch chiles and tomatillos take this white chili to another level. I like to make my own roasted salsa verde but you can always use jarred or canned. Cooked in the slow cooker for ease and convenience. Top with your choice of sliced avocados, shredded cheese, cilantro, or sour cream.

1 pound tomatillos, husked
½ onion, cut into 2 pieces
1 serrano pepper
2 cloves garlic, unpeeled
½ cup chopped fresh cilantro
1 teaspoon salt
4 cups chicken broth
2 (15 ounce) cans great Northern beans, drained
2 skinless, boneless chicken breast halves
2 teaspoons ground cumin
½ teaspoon salt, or to taste
4 Hatch chile peppers, halved and seeded
½ cup shredded jalapeno Jack cheese

Steps:

  • Place tomatillos, onion, serrano pepper, and garlic in a hot cast iron skillet and cook until blackened, turning frequently, 7 to 10 minutes. Peel garlic cloves and transfer to a blender. Add the blackened vegetables, cilantro, and salt; blend until smooth.
  • Place chicken broth, beans, chicken, cumin, and salt in a slow cooker. Pour in blended salsa. Cook on High until chicken is tender, 3 to 3 1/2 hours.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place Hatch peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
  • Remove 1 cup beans from the slow cooker; mash and stir back in. Remove chicken breasts and shred using 2 forks. Stir into the slow cooker. Peel broiled peppers and dice flesh into 1-inch pieces; add to the slow cooker. Sprinkle in Jack cheese.

1 tablespoon canola oil
1 garlic clove, minced
1-1/2 cups water

1 can (11 ounces) whole kernel white corn, drained or 1-1/4 cups frozen shoepeg corn
