After some looking at different recipes, I thought I would experiment with making an Indian Tomato Soup, as I once had in a restaurant. This comes close. Warning! Indian Chili powder is much spicier than your ordinary store-bought.

2 tablespoons olive oil
1 onion, chopped
2 bay leaves
1 tablespoon all-purpose flour
1 tablespoon ginger-garlic paste
1 teaspoon garam masala
½ teaspoon ground turmeric
1 tablespoon Indian chili powder
½ cup water, or as needed
1 (28 ounce) can tomato puree
1 tablespoon white sugar
salt to taste
⅓ cup heavy cream or half-and-half

Steps:

  • Heat oil in a large saucepan over medium heat; stir in onions and bay leaves, and cook about 5 minutes until the onions begin to soften. Add flour, ginger-garlic paste, garam masala, turmeric, and Indian chili powder. Cook and stir until fragrant, about 1 minute.
  • Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Pour in the tomato puree and thin with additional water to desired consistency. Add sugar and salt; cook until sugar is dissolved and soup is hot, about 5 minutes.
  • Remove bay leaves and serve with cream if desired.

This recipe I made up myself. It taste great on a cold day or if you feel a little under the weather. Add cooked shrimp, lobster, crab, noodles, or rice and make it a meal. My husband loves this soup as well as a good friend of mine.Just spicy enough without too much heat. Also don't throw away the chunks after straining the soup...

6 medium tomatoes chopped
28 oz can crushed tomatoes
14 oz can tomato sauce
1 c cabernet sauvignon
1 c water
1 medium onion diced
2 clove garlic minced
1 Tbsp parsley
1 Tbsp garlic powder
2 tsp kosher salt
1 tsp tarragon
1 tsp oregano
1 tsp white pepper
1 tsp thyme
1 tsp rosemary
2 Tbsp srirracha more or less to taste
1 c fresh cilantro chopped for garnish

Steps:

  • 1. Put all ingredients in stock pot. Bring to a boil. Reduce to a simmer and simmer 1 to 2 hours stirring occasionally. Strain through a fine mesh strainer. Top with chopped cilantro just before serving. Remember save the chunks and puree them or leave them chunky and use as a pasta sauce

3 large carrots, peeled and chopped

3 cans (28 ounces each) whole peeled tomatoes, undrained
1 container (32 ounces) chicken stock
2 tablespoons tomato paste
3 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
1 cup heavy whipping cream, optional
Fresh basil leaves, thinly sliced, optional

Steps:

  • In a 6-quart stockpot or Dutch oven, heat oil, butter and pepper flakes over medium heat until butter is melted. Add carrots and onion; cook, uncovered, over medium heat, stirring frequently, until vegetables are softened, 8-10 minutes. Add garlic and dried basil; cook and stir 1 minute longer. Stir in tomatoes, chicken stock, tomato paste, sugar, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer, uncovered, to let flavors blend, 20-25 minutes. , Remove pan from heat. Using a blender, puree soup in batches until smooth. If desired, slowly stir in heavy cream, stirring continuously to incorporate; return to stove to heat through. Top servings with fresh basil if desired.

I attempted to make spicy tomato sauce out of fresh tomatoes and this soup is the result. We think it is a winner. If you simmer this for an additional 45 minutes, not covered, you will get a thick spicy sauce. This soup tastes great frozen and reheated.

1 onion, finely chopped
1 tablespoon olive oil
1 chile pepper, chopped
1 cup red lentils
1 (14.5 ounce) can peeled and diced tomatoes
1 cup water
salt and pepper to taste
½ teaspoon ground cumin
1 teaspoon dried basil
¼ cup sour cream, for topping
2 sprigs fresh basil leaves for garnish

Steps:

  • Heat the olive oil in a large saucepan or Dutch oven. Lightly brown the onions in the oil. Add the tomatoes, chili pepper, lentils, cumin and basil to the pan along with the water. Bring to a boil, then reduce heat to medium-low and simmer for about 20 minutes, or until the lentils are tender.
  • When the lentils have softened, use a stick blender to puree the soup. Season to taste with salt and pepper. For a special touch, put sour cream in a squirt bottle, and squeeze a spiral onto the top of each bowl of soup, and garnish with a sprig of fresh basil.

Pat: This is our kind of tomato soup-it has plenty of attitude! A double dose of heat (crushed red-pepper flakes and chipotle-pepper purée) gives it a smoky undertone; a garnish of avocado relish balances the flavors and provides an appealing texture. This soup is delicious with hot cornbread or grilled ham-and-cheese sandwiches.

2 tablespoons olive oil
1 medium onion, finely chopped
2 celery stalks, finely chopped
2 carrots, peeled, finely chopped
3 garlic cloves, minced
2 teaspoons fresh thyme leaves, finely chopped
1/2 teaspoon dried crushed red-pepper flakes
Kosher salt
Two 28-ounce cans peeled plum tomatoes with juice
6 cups chicken broth
2 bay leaves
2 tablespoons chopped chipotle peppers in adobo sauce
1 to 2 teaspoons sherry-wine vinegar
Freshly ground black pepper
1 large avocado, peeled, pitted, and diced
1/2 small red onion, finely chopped
1/2 seedless cucumber, peeled and chopped
1/3 cup chopped fresh cilantro leaves
1 serrano chile, seeded and finely chopped
2 tablespoons fresh lime juice

Steps:

  • Heat the olive oil in a large, heavy pot over medium heat. Add the onion, celery, carrots, garlic, thyme, red-pepper flakes, and a pinch of salt, and cook, stirring, until the ingredients are fragrant and tender, about 5 minutes. Add the tomatoes, broth, and bay leaves, and bring to a boil. Reduce the heat to low, and simmer for 30 minutes.
  • Meanwhile, make the avocado relish. Combine the avocado, red onion, cucumber, cilantro, serrano chile, lime juice, and a generous sprinkling of salt in a medium bowl. Taste for seasonings, and add more salt or lime as desired.
  • After the soup has simmered, discard the bay leaves and stir in the chipotle peppers and vinegar. Working in batches, purée the soup in a blender or a food processor and return it to the pot. Season the purée with additional salt and freshly ground black pepper to taste, and serve each portion garnished with a few tablespoons of the avocado relish.
