1 pound macaroni
1 ½ pounds lean ground beef
1 small yellow onion, diced
1 green bell pepper, diced
1 cup sliced mushrooms
1 (8.75 ounce) can whole kernel corn, drained
1 (8 ounce) can peas, drained
1 (14.5 ounce) can stewed tomatoes, cut in half and drained
1 (14.5 ounce) can crushed tomatoes
4 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
24 fluid ounces water
1 tablespoon chopped garlic
1 tablespoon grated Parmesan cheese
1 tablespoon dried parsley
1 teaspoon salt
1 teaspoon black pepper
⅛ teaspoon white sugar

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, brown the ground beef with the onion, green pepper, and mushrooms; drain. Add corn, peas, stewed tomatoes, crushed tomatoes, tomato paste, tomato sauce, and water. Stir and bring to boil over medium heat. Mix in garlic, parmesan cheese, parsley, salt, pepper, sugar and simmer for 20 to 25 minutes.
  • Mix together cooked macaroni and meat sauce. Serve hot or refrigerate for later.

1 lb ground beef (I used 90% lean)
1 tsp olive oil
1 onion, chopped
1 bell pepper, chopped (whatever color you have on hand)
3 cloves garlic, finely chopped
1 tsp salt
1 tsp pepper
1 tbsp Italian seasoning
2 bay leaves
1 tbsp low sodium soy sauce
1 2/3 cups water
1 - 28 oz can crushed tomatoes
1/2 cup frozen peas or corn
1 cup elbow macaroni, uncooked

Steps:

  • Heat olive oil in a dutch oven over medium high heat. Add ground beef, break up with a spoon and brown until no longer pink. Add onion, bell pepper and garlic. Saute for about 5 minutes until onion softens. Stir in salt, pepper, Italian seasoning and bay leaves. Stir in water, crushed tomatoes and soy sauce. Bring to a bubble. Reduce heat and simmer, covered, for 15 minutes. Stir in peas or corn and macaroni. Simmer covered for 20-25 minutes, until macaroni is tender.

1 lb. Ground beef
1 C. Uncooked elbow macaroni
1 Onion chopped
28 oz. Diced tomatoes undrained
⅔ C. Frozen corn
8 oz. Tomato sauce
4 oz. Can diced green chilis
½ tsp. Cumin
¼ tsp. Salt
½ tsp. Black pepper
¼ C. Chopped fresh cilantro

Steps:

  • Boil the macaroni until it is done to your liking, rinse in cold water, and drain.
  • Add the ground beef and onion to a skillet over medium-high heat on the stove, and cook until the meat is browned and onions have softened. Drain any excess grease.
  • Reduce the heat to medium and add in the diced tomatoes, frozen corn, tomato sauce, green chilis, salt and pepper, and cumin. Stir to combine.
  • Bring the mixture to a boil and then reduce the heat to a simmer for 10 minutes.
  • Stir in the macaroni and cilantro, and stir to combine before serving.

2 pounds lean ground beef
2 large yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2 (15 ounce) cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
3 tablespoons soy sauce
2 tablespoons dried Italian herb seasoning
3 bay leaves
1 tablespoon seasoned salt, or to taste
2 cups uncooked elbow macaroni

Steps:

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.

2 pounds lean ground beef
2 large yellow onions, chopped
6 cloves garlic, chopped
2 (15 ounce) cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
3 cups water
½ cup sofrito sauce (such as Goya®)
3 tablespoons Worcestershire sauce
2 tablespoons Italian seasoning
1 tablespoon seasoned salt, or to taste
3 bay leaves
2 ½ cups uncooked elbow macaroni

Steps:

  • Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
  • Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.
