Half a 6-ounce ripe red Bartlett pear, peeled, cored and diced
1/2 cup coarsely crumbled gorgonzola cheese
1/4 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1 head butter lettuce, cut into 4 wedges
1 avocado, halved, pitted, peeled and diced
1/2 a large ripe red Bartlett pear, quartered lengthwise, cored and thinly sliced
1/3 cup hazelnuts (preferably skinned), toasted and roughly chopped
1/3 cup sweetened dried cranberries

Steps:

  • For the dressing: In a blender, blend together the oil, pear nectar, balsamic vinegar, lemon juice, mustard, diced pear, cheese, salt and pepper until smooth.
  • For the salad: Place the lettuce wedges on 4 salad plates. Arrange the avocado, pear slices, hazelnuts and cranberries around the lettuce. Drizzle with the dressing and serve.

6 tablespoons olive oil
10 large garlic cloves, unpeeled
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons apple cider
1 tablespoon Dijon mustard
8 cups bite-size pieces romaine lettuce (1 large head)
1 cup crumbled Gorgonzola cheese
Spiced Pecans

Steps:

  • Preheat oven to 350°F. Toss oil with garlic in small baking dish. Cover dish tightly with foil. Bake until garlic is golden and tender, about 45 minutes. Cool. Squeeze garlic from skins. Reserve oil.
  • Transfer roasted garlic to processor. Add honey, vinegar, cider and mustard and blend well. With processor running, slowly add reserved garlic oil. Season dressing to taste with salt and pepper.
  • Toss lettuce with 1/2 cup Gorgonzola cheese and enough dressing to coat. Sprinkle with remaining 1/2 cup cheese and Spiced Pecans and serve.

1 cup sour cream
1 cup prepared mayonnaise
1/2 cup gorgonzola cheese, crumbled up
2 to 4 tablespoons buttermilk
Kosher salt and freshly ground black pepper, to taste

2 tablespoons mixed chopped fresh herbs (such as parsley, sage, and basil)
1 head iceberg lettuce, quartered, core removed
8 strips good quality bacon, cooked crispy
8 tear drop, or grape tomatoes, halved

Steps:

  • In a mixing bowl combine the sour cream, mayonnaise, and gorgonzola. Using a wooden spoon, stir the mixture to combine the cheese through the mixture. Loosen up the mix with the buttermilk, a tablespoon at a time, until it comes to a salad dressing consistency. Season the mix with salt, and pepper, to taste. Stir in the fresh herbs.
  • Place a wedge of lettuce on a plate, coat liberally with the blue cheese dressing, and crumble some cooked bacon on top of the dressing. Dress each plate with 2 halved tomatoes, some blue cheese, and season with a little bit of salt and pepper.

2 canned pear halves in natural juice, drained
3 tablespoons lemon juice
1 tablespoon white wine vinegar
2 tablespoons light olive oil
1/4 teaspoon salt
black pepper (15 grinds)
1/4 cup walnuts, finely chopped
1 (10 ounce) package mixed salad greens
1 small red bell pepper
1 ripe bosc pear
1/2 cup gorgonzola, finely crumbled

Steps:

  • To prepare the dressing:
  • In a blender or food processor, puree the.
  • drained pear halves with the lemon juice, vinegar, olive oil, salt and pepper until very smooth and silky.
  • Transfer to a jar, cover andrefrigerate.
  • To prepare the salad: Place the chopped walnuts in a small dry skillet. Toast over medium heat about 4 minutes, until fragrant. Remove from the pan and set aside.
  • Place the salad mix in a bowl and cover with a paper towel. Refrigerate until ready to serve.
  • Peel the tough outer skin from the bell pepper with a vegetable peeler. You probably won't be able to get all of the peeling off, especially in the crevices of the pepper. Stem, seed and finely sliver the pepper; put.
  • into the bowl with the salad.
  • Just before serving, core and dice the pear and add to the salad with the walnuts and Gorgonzola. Add the dressing, toss to coat and serve.

Two 5-ounce bags baby arugula
16 slices pancetta, about 6 ounces
3 tablespoons unsalted butter
1 tablespoon vegetable oil
4 pears, peeled, cored and quartered
Kosher salt
Freshly ground black pepper
3 tablespoons honey
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
2 tablespoons pine nuts, toasted
6 ounces gorgonzola cheese, crumbled

Steps:

  • Distribute the arugula evenly among four serving plates.
  • Put the pancetta into a medium skillet over medium-high heat and cook until really crispy, 3 to 4 minutes. Remove and drain on paper towels.
  • Put 2 tablespoons butter and the oil into the skillet and reduce the heat to low. When the butter has melted, place the pears in the pan and season with salt and pepper and 2 tablespoons honey. Turn up the heat to medium and cook until the pears are lightly caramelized, about 5 minutes. Add 1 tablespoon vinegar and cook for another minute. Remove the pears from the pan, reserving any juices that may be left.
  • Arrange the pears and pancetta on top of the arugula so each serving has 4 pear quarters and 4 slices pancetta.
  • Put the pan back on medium heat and add the remaining 1 tablespoon butter, remaining 1 tablespoon honey, remaining 2 tablespoons vinegar, mustard, pine nuts, salt and pepper. Cook briefly until the dressing is heated through. Pour the dressing over the salads, then scatter over the gorgonzola crumbles. Serve immediately.

6 green onions, chopped
3 celery stalks, thinly sliced
3 tablespoons chopped fresh parsley

  • Cook broccoli stems in large pot of boiling salted water 2 minutes. Add florets and cook until stems and florets are crisp-tender, about 2 minutes longer. Using slotted spoon, transfer broccoli to strainer. Refresh under cold water. Drain.
  • Bring same pot of water to boil. Add pasta; cook until just tender but still firm to bite. Drain. Rinse under cold water.
  • Whisk mayonnaise, sour cream, and vinegar in large bowl. Add half of Gorgonzola cheese. Using rubber spatula, mash until cheese is almost smooth. Stir in remaining cheese. Add pasta, green onions, celery, parsley, and broccoli; toss to coat. Season salad to taste with salt and pepper. Cover and refrigerate until cold, about 2 hours. (Can be made 1 day ahead. This is a classic salad which was inspired by some posts this week which reminded me of mine. But this is my favorite way, still classic flavors but a bit different, with a warm blue cheese or gorgonzola sauce as well as diced marinated vegetables and roasted tomatoes make this a great salad - upgraded.

1 head iceberg lettuce, cut in wedges
5 bacon, slices (chopped and cooked)
1/2 small red onion, diced fine
1/4 cup black olives, diced fine
1/3 cup seedless cucumber, fine chopped
1 teaspoon italian vinaigrette (your favorite store bought will work fine)
1/8 cup cherry tomatoes, cut in half and roasted
1 tablespoon olive oil
1/2 teaspoon salt for the tomatoes
1/4 teaspoon black pepper for the tomatoes
2 shallots, finely chopped
3 tablespoons butter
6 ounces gorgonzola
1/2 cup heavy cream
1/4 teaspoon pepper (for the sauce)

Steps:

  • Make the blue cheese sauce. In a small pot add the 3 tablespoons of butter and melt, add the shallots and cook 2-3 minutes until lightly soft. Add the cheese, sauce, cream and 1/4 teaspoon black pepper. Cook on low on the back burner until you are ready to serve.
  • Saute the chopped or diced bacon until nice and crispy remove and drain on a paper towel and set to the side.
  • Marinating the chopped vegetables. Chop the olives (or you can buy them pre chopped), chop the cucumber and red onion. Toss in a mixing cup of anything you want with just 1 teaspoon of Italian vinaigrette. You don't need much and you don't want to soak the vegetables. Just a light seasoning and then chill.
  • As the vegetables marinade, now the tomatoes. Either on the stove in a saute pan or in a 400 degree oven, cut the grape or cherry tomatoes in half, drizzle a little olive oil on them, salt and pepper and cook just until slightly cooked. Just 5-7 minutes tops. Don't over cook, you want them warm but not "too soft or mushy.".
  • Lets put it together -- Now put your wedge on a nice plate with the chilled wedge, then top with some of the roasted tomatoes which should be slightly warm, top with some of the marinated cucumber, olive and onion mix. Then top with the warm gorgonzola sauce and top with chopped bacon.
  • It just takes the classic and makes it even better, the warm dressing is so good against the chilled marinated chopped vegetables and chilled lettuce.

This salad is so good that it can really be served as a main meal, and also compares to the spinach salads that are served at the fancy restaurants, if not BETTER! You can use Roquefort in place of the gorgonzola...once you have tryed this salad you'll be hooked! This is a salad you make often!

2 (10 ounce) bags Baby Spinach (purchase the washed and ready to use bags)
4 cups sliced fresh mushrooms
1 small red onion, thinly sliced (use only red onion for this)
1 1/2 cups sliced black olives (can use more or less olives)
12 slices bacon, cut into about 1-inch pieces (can use more or less bacon)
2 cups gorgonzola
1/4 cup whipping cream (unwhipped)
salt and pepper
2 tablespoons white wine vinegar
2 tablespoons Dijon mustard
3 tablespoons honey
salt and black pepper

Steps:

  • In a small bowl whisk together all dressing ingredients, season with salt and pepper to taste; set aside.
  • Place the baby spinach in a large glass bowl, and toss with black pepper and a small amount of salt (or omit the salt).
  • Arrange the sliced mushrooms, sliced onions and olives on top (you can cover and chill while making the bacon and warmed cheese mixture).
  • In a frypan cook the bacon pieces until crisp; remove to a paper towel and pour off all but 2 tablespoons bacon drippings.
  • Reduce the heat to low.
  • Add in the cheese, whipping cream and the wine vinegar/Dijon mixture; stir until cheese has melted and the mixture is smooth (DO NOT BOIL!).
  • Pour the warm dressing over the salad, or serve on the side.

An elegant summer salad...found at The Fresh Market and tweaked slightly! Not sure why it was dubbed "Merlot" Shallot Dressing, as the original recipe calls for Rose. I used a Pinot Noir and enjoyed the results, so I think any lighter red will work well.

1 large shallot, finely minced
2 cups light red wine
1/4 cup red wine vinegar
1 tablespoon brown sugar
1 garlic clove, minced
2 teaspoons Dijon mustard
3/4 cup olive oil
salt and pepper, to taste
5 ounces mixed baby greens
1/2 cup gorgonzola, crumbled
1/2 cup walnuts, toasted and chopped
3 slices smoked bacon, cooked and crumbled (omit for vegetarian version)
1 pear, cored, and chopped (can peel if desired)

Steps:

  • Combine shallots and wine in a medium sauce pan over high heat. Bring liquid to a boil. Reduce heat to medium and simmer until reduced to 1/4 cup, about 20 to 30 minutes.
  • Let mixture cool completely. Add vinegar, sugar, garlic and mustard. Slowly whisk in olive oil. Season with salt and pepper. Refrigerate dressing until ready to serve.
  • In a large bowl, mix baby lettuce, cheese, walnuts and bacon. Add pears and toss with Merlot Shallot Dressing just before serving.

1 ¾ ounces gorgonzola cheese, crumbled
1 cup mayonnaise
1 cup butter milk
1 teaspoon Worcestershire sauce
Kosher salt and while pepper, to taste

Steps:

  • Combine crumbled cheese, mayonnaise, buttermilk and Worcestershire sauce together in a medium-size bowl. Add salt and pepper to taste. Cover and refrigerate until serving time. Serve over a salad of crisp greens such as romaine or iceberg. Makes about 2 cups
