Get your glass of milk ready! This cake is ooey, rich, and full of butter pecan flavor. Using the pecan-flavored cake mix is genius. Adding the pecans on top gives a little extra crunch. Make this for friends and family and it will disappear quickly!

1 box butter pecan cake mix
3 eggs
1/2 c butter, melted
1 8 oz. cream cheese (softened)
1 tsp pure vanilla extract
1 16 oz. box confectioners' sugar
1 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking pan.
  • 2. In a large bowl, mix by hand the dry cake mix, 1 egg, and melted butter. Pat into the bottom of the greased pan and set aside.
  • 3. With electric mixer, beat softened cream cheese, 2 eggs, and vanilla well. Add confectioners sugar and beat well. Pour filling onto cake mixture and spread evenly.
  • 4. Sprinkle with chopped pecans.
  • 5. Bake for 40 to 50 minutes. You want the center to be a little gooey, so don't over bake.

I was in an antique store just out of Savannah,Ga and an older Southern Gentleman made these and served with coffee or tea ... he gave me this recipe which has became a favorite.

1 box butter pecan cake mix
3 eggs
1 1/2 stick margerine -or- butter ... not spread! melt seperately
1 large 8 oz. pkg cream cheese - softened
1 tsp vanilla extract
1 box 16 oz. confectioners sugar

Steps:

  • 1. Preheat oven to 350 and grease 13X9 pan.
  • 2. Prepare cake mix by adding 1 egg and 1 stick of margarine. Press into pan.
  • 3. Mix with mixer ... softened Cream Cheese, remaining 2 eggs, then add confectioners sugar (reserve enough to dust lightly over finished cake ... approx.2 Tablespoons) mix well and add remaining stk. of melted margarine ... stir well,stir in vanilla.
  • 4. Pour over batter in the pan. Bake 40 - 50 minutes without opening oven door ... When done cake will look Fluffy ... after it cools,give it a light dusting of the confectioners sugar. Enjoy!
  • 5. This is also good with Chocolate cake mix and a lite sprinkle of coconut (or 1/3 cup choc. chips) in cream cheese mixture or lemon cake mix and just a little lemon juice in cream cheese mixture ... use your imagination!

1/2 teaspoon(s) baking powder
1/4 teaspoon(s) baking soda
1/4 teaspoon(s) salt
3/4 cup(s) packed dark brown sugar
4 tablespoon(s) butter, softened
1 - egg + 1 egg yolk
1 teaspoon(s) vanilla
FOR THE TOPPING
2 ounce(s) cream cheese, softened
2 tablespoon(s) light corn syrup
1 teaspoon(s) vanilla
6 tablespoon(s) butter, melted
1/2 cup(s) packed dark brown sugar
1/4 teaspoon(s) salt
1 - egg yolk
1/2 cup(s) all-purpose flour
1/2 cup(s) finely chopped pecans, plus 16 halves
1/2 cup(s) chocolate chips

Steps:

  • Heat the oven to 350 degrees and spray an 8 x 8-inch pan with non-stick spray. Line the pan with parchment paper, leaving two inches hanging over the sides, and spray the paper with non-stick spray. n a medium bowl whisk together the flour, baking powder, baking soda, salt, and brown sugar until well blended. Add in the butter, egg, egg yolk, and vanilla and mix until smooth.
  • Turn the batter out into the pan and press it evenly into the pan. It will be quite thick. In the same bowl beat together the cream cheese, corn syrup, vanilla, butter, brown sugar, salt, egg, and flour until smooth and lighter in color. Fold in the pecans and chocolate chips.
  • Carefully spread the topping over the base and place the 16 pecan halves on top. Bake for 35 to 40 minutes, or until the filling is puffed and the edges are set, but the center is just a little wobbly. Cool completely in the pan. Use the parchment to remove the bars from the pan and slice.
