1/2 cup butter, softened
2 tablespoons finely grated lemon peel
1 egg
2 tablespoons lemon juice
1 box Betty Crocker™ Super Moist™ lemon cake mix
1 3/4 cups powdered sugar
3 to 4 tablespoons lemon juice

Steps:

  • Heat oven to 350°F.
  • In large bowl, beat cream cheese, softened butter and lemon peel with electric mixer on medium speed about 1 minute or until well blended; scrape side of bowl. Beat in egg and 2 tablespoons lemon juice until smooth. On low speed, beat in cake mix until blended. Drop dough by rounded tablespoonfuls 2 inches apart on ungreased cookie sheets.
  • Bake 12 to 14 minutes or until edges are light golden brown. Cool on cookie sheet 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.
  • In small bowl, beat Glaze ingredients with spoon until smooth and spreadable. If too stiff to spread, add additional lemon juice, 1/2 teaspoon at a time. Dip top of each cookie into glaze, letting excess drip off. Place cookie right side up on cooling rack placed over cookie sheet or waxed paper. Let stand about 30 minutes or until set. Store covered in airtight container at room temperature.

This recipe was on Paula's Food TV show. They are to die for! I made these because my partner will not eat anything with cream cheese in it. I thought I would actually have cookies to eat the next day. I was so wrong. I made a double batch and only had 3 cookies in all. I did not find these to be Gooey. More delicate and cake like. Be sure not to over bake. *Prep time includes 2 hour chilling time. *NOTE - On her show she did add oil...I don't know the amt. I added no oil the 4 times I have made these and I don't feel its needed...My hips agree :) UPDATE: I have also used FF Cream Cheese with good results. Any flavor cake mix works well! Please also note that the directions do state that dough will be very stiff. I use my stand mixer with no problems. Please use caution if using a hand mixer.

1 teaspoon pure vanilla extract

1 teaspoon Kosher salt or 3/4 teaspoon regular table salt

  • In a medium bowl, whisk together flour and baking powder until well blended. Set aside. 1 large egg yolk
1 ½ cups confectioners' sugar

Steps:

  • Combine 2 1/4 cups plus 1 tablespoon flour, ginger, baking powder, cinnamon, baking soda, allspice, nutmeg, and ground cloves in a bowl. Whisk to combine, then set aside.
  • Combine cream cheese and butter in the bowl of a stand mixer. Blend on medium-high speed until smooth and creamy. Add white and brown sugar, molasses, vanilla extract, almond extract, and salt. Set on the prepared baking sheet, leaving 1 1/2 to 2 inches of space in between, about 8 to 12 cookies per sheet, depending on how large you decide to make the cookies.

When I saw this recipe I couldn't wait to try it, so I did, it was delicious !!! I had so much faith in this recipe that I doubled it on the first try, and I am glad I did, they flew out of here with the family. The owner of the restaurant says this is a favorite and bestseller for them. I am sure you will enjoy it, this is one of the easiest recipes I have ever made, but it is one of the best ! Tastes like a Gooey Butter Cake!! I myself used parchment paper which made the cookies thicker and gooeyier if there is such a word LOL Prep time includes 30 min refrigeration.

1/4 cup butter, softened (no substitutions)
1/4 teaspoon vanilla
1 egg
4 ounces cream cheese, softened
1 (18 ounce) box yellow cake mix
1 cup powdered sugar

Steps:

  • In a large bowl of electric mixer, beat together butter, vanilla, egg and cream cheese until light and fluffy.
  • Add cake mix; beat until well blended ( It will be very stiff).
  • Cover dough and chill 30 minutes.
  • Preheat oven to 350 degrees. Shape dough into 1 inch balls; roll in powdered sugar. Place about 1 1/2 inches apart on a lightly greased cookie sheet, or you may use parchment paper. With the parchment paper they will not spread as much. Bake 12 minutes, DO NOT let cookies brown!
  • Let cookies cool and then sift additional powdered sugar over them.

A soft delicious cookie, pretty in pink

½ cups Butter Or Margarine, Softened
8 ounces, weight Cream Cheese, Softened
1 whole Large Egg
1 teaspoon Lemon Extract
1 whole Large Lemon, Zest Grated
1 package (18.25 Oz. Size) Pink Lemonade Flavor Cake Mix
Granulated Sugar, For Rolling
Confectioners Sugar For Rolling

Steps:

  • Put the butter into a large mixing bowl. Cream the butter until soft and creamy. Add the cream cheese and beat until mixture is smooth. Beat in the egg, lemon extract and lemon zest until combined. Add the cake mix and beat just until well mixed.
  • If the dough is too soft to roll into balls, cover the bowl and refrigerate the dough for 1-2 hours or until it's easy to handle.
  • Preheat the oven to 350 F.
  • Place some granulated sugar and confectioners' sugar into separate bowls.
  • Roll the dough into 1-inch to 1 1/4-inch balls.
  • Drop each dough ball into the bowl of granulated sugar and roll it in the sugar to coat completely.
  • Immediately drop the sugared dough ball into the confectioners' sugar and roll it to coat heavily with the sugar. Rolling the dough balls in the granulated sugar first helps the confectioners' sugar coating not sink into the baked cookies.
  • Place the dough balls 2″ apart on ungreased cookie sheets; flatten slightly. Bake at 350 F for 10-12 minutes. DO NOT overbake. Take the cookies out of the oven when they look a little underdone.
  • Let the cookies cool on the pan for 1-2 minutes, then remove them from the pans to wire racks and cool completely.
  • Store the cookies in an airtight container. Makes about 2 1/2-3 dozen.

1 egg
1 tablespoon lemon juice
1 box lemon cake mix (I use Duncan Hines lemon supreme)
1 cup powdered sugar

Steps:

  • Preheat oven to 350°F. Cream butter and cream cheese with mixer. Add egg and lemon juice and mix until combined on low. Add the lemon cake mix in three parts mixing until combined after each part. Refrigerate dough for 2 hours. Roll into 1 inch balls and roll through the powdered sugar. Place on cookie sheets covered with parchment paper. Bake 10-12 minutes. Cool for two minutes and remove to cookie cooling racks. When fully cool dust with more powdered sugar.

1 stick butter, at room temperature
1 egg
1 tsp. vanilla extract
1 (18 oz) box moist chocolate cake mix
1 (12 oz) mini chocolate chips
Confectioner's sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix and chocolate chips. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner's sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 mins. The cookies will remain soft and "gooey." Cool completely and sprinkle with more confectioner's sugar, if desired.
