1 (1 ounce) envelope dry onion soup mix
1 (8 ounce) bottle of red Russian salad dressing
1 (8 ounce) jar apricot jam
4 chicken leg quarters

Steps:

  • Combine the dry soup mix, dressing, and jam; mix well until there are no lumps.
  • Wash the chicken, pat dry. slightly overlap in glass dish.
  • Spoon and spread 1 tablespoon or more of the sauce over each piece. Bake/slow cook at 225°F for 4 to 5 hours or it can be done for 1 hour at 350°F.

4 skinless, boneless chicken breasts
1 (8 ounce) jar apricot preserves
1 (8 ounce) bottle Russian-style salad dressing
1 (1 ounce) package dry onion soup mix

Steps:

  • Put chicken breasts into a slow cooker crock.
  • Stir apricot preserves, Russian-style salad dressing, and onion soup mix together in a bowl; pour into slow cooker crock, assuring chicken is completely covered.
  • Cook on Low for 8 to 10 hours.

4 pounds boneless skinless chicken breasts
1 envelope dry onion soup mix
1 bottle (12 ounce size) Russian salad dressing
8 ounces apricot jam

Steps:

  • Place the chicken in a crock pot. In a bowl, stir together the onion soup mix, salad dressing, and apricot jam. Mix well. Pour the mixture over the chicken. Cover the crock pot and cook on low for 4-6 hours or until the chicken is cooked through. Serve the chicken and sauce over rice, if desired.

4 medium chicken breasts
1 package French Onion Recipe & Soup Mix
1 small bottle of Russian, French, or Catalina dressing ((Catalina is my favorite!))
8 ounces apricot, peach, or pineapple preserves (I always use peach preserves.)
rice, couscous, or quinoa

Steps:

  • Combine soup, dressing, and jam in a bowl. Mix well.
  • Put chicken in casserole dish. Pour sauce over the chicken, and cover with foil.
  • Bake at 225 degrees for 4-5 hours or all day on low in the crock pot or 1 hour at 375 degrees.
  • While chicken is cooking, prepare rice (or cous cous or quinoa).

Here on Grosse Ile, MI I make our state champion girl golfers this sandwich for their meets and they keep requesting it over and over. They're so good that I had to stop putting these in my daughters lunch because her sandwiches would get swiped-and no one elses!

1 lb chicken tenders
1/2 cup Italian dressing
1/2 tablespoon lime juice
2 tablespoons honey
8 slices of a good dense bread (Cracker Barrel's is great)
butter or margarine
1 leaf lettuce
mayonnaise

Steps:

  • Mix dressing, lime juice and honey together.
  • Place chicken in a gallon ziplock plastic bag and cover with marinade.
  • Close bag and marinate for at least 2 hours, up to overnight in the fridge.
  • Grill or braise chicken until cooked.
  • Spread both sides of bread with butter and pan fry or grill each side until golden.
  • Assemble sandwiches with chicken, mayo and lettuce.
