Steps:
- Combine the dry soup mix, dressing, and jam; mix well until there are no lumps.
- Wash the chicken, pat dry. slightly overlap in glass dish.
- Spoon and spread 1 tablespoon or more of the sauce over each piece. Bake/slow cook at 225°F for 4 to 5 hours or it can be done for 1 hour at 350°F.
GOLFER'S CHICKEN IN THE SLOW COOKER
This is a quick-to-prepare and easy recipe my husband acquired from a friend. We've served it over rice and over fresh steamed vegetables. The sauce is unexpectedly tasty. Serve over rice.

- Put chicken breasts into a slow cooker crock.
- Stir apricot preserves, Russian-style salad dressing, and onion soup mix together in a bowl; pour into slow cooker crock, assuring chicken is completely covered.

- Mix dressing, lime juice and honey together.
- Place chicken in a gallon ziplock plastic bag and cover with marinade.
- Close bag and marinate for at least 2 hours, up to overnight in the fridge.
- Grill or braise chicken until cooked.
- Spread both sides of bread with butter and pan fry or grill each side until golden.
- Assemble sandwiches with chicken, mayo and lettuce.
