I have been making this salad for DH for a while now. The time listed does not include the refrigerating time.

Number Of Ingredients 12

1/4 cup olive oil
2 tablespoons balsamic vinegar
1/2 tablespoon green za'atar spice mix
1/4 teaspoon salt
1/4 teaspoon black pepper
1 -2 dash garlic powder
1 (15 ounce) can chickpeas, drained & rinsed
2 roma tomatoes, chopped
1/2 cucumber, peeled & chopped
1/4 green pepper, seeded & chopped
1/4 onion, diced
1 (6 ounce) jar marinated artichoke hearts, drained

Steps:

  • Mix all the ingredients together for the dressing in a small glass bowl.
  • Mix the vegetables together in a larger bowl. (I cut the artichokes hearts in half before adding them to the salad).
  • Pour the dressing over the salad. Stir to coat then refrigerate for 30 minutes before serving.

Number Of Ingredients 5

4 garlic cloves (peeled and roughly chopped)
1 teaspoon coarse kosher salt
1/3 cup fresh lemon juice (about 1 1/2 lemons)
1/3 cup garlic or regular extra virgin olive oil
1 teaspoon Za'atar Seasoning

Steps:

  • Peel and roughly chop the garlic cloves. Sprinkle the salt over the garlic and use the broad side of your knife alternately to squash the garlic and chop the garlic until a thick paste forms. Add that to a half pint sized mason jar along with the remaining dressing ingredients. Screw the lid tightly in place, and shake hard. Refrigerate until ready to dress your salad.

Tangy, zesty, garlicky lemon and olive oil flavors blend in this dressing that compliments salads which include some type of grilled meat and baked or fried pita chips in the place of croutons. This dressing is best with salads containing grilled chicken, shrimp or fish. It is very tangy but absolutely yummy.
