1 (7 1/2 ounce) can semicondensed cream of mushroom soup
1/4 cup shredded American cheese
2 tablespoons milk
1 tablespoon mayonnaise
2 tablespoons crushed crackers

Steps:

  • Cook frozen broccoli according to package directions; drain.
  • Transfer to a 1-1/2 quart casserole.
  • Combine soup, cheese, milk, mayonnaise.
  • Stir into broccoli.
  • Top with crushed crackers.
  • Bake at 350* for 30 minutes.

1 (12 ounce) package frozen chopped broccoli, cooked and drained
1/2 cup Ritz cracker crumbs
salt & pepper
1 egg, beaten
1/4 cup chopped onion
2 tablespoons margarine or 2 tablespoons butter

Steps:

  • Mix corn, broccoli, egg and onion gently.
  • Season with salt and pepper and pour into a buttered 1 quart casserole.
  • Sprinkle with cracker crumbs and dot with margarine.
  • Bake at 350* for 35-40 minutes.

2 (10 ounce) packages chopped frozen broccoli, cooked and drained
1 (10 ounce) can condensed golden mushroom soup
1 cup mayonnaise
1 cup shredded sharp cheddar cheese
1/4 cup minced onion
2 eggs, beaten
14 saltines (crushed)
4 tablespoons butter

Steps:

  • Cook broccoli, drain and cool.
  • Beat eggs, add golden mushroom soup, mayo, cheese, onion and broccoli. Mix together.
  • Pre-heat oven to 350 degrees.
  • Melt butter in 12 inch non-stick skillet, add crushed saltines, cook on medium high until starting to brown. Take off heat.
  • Butter a casserole dish and add broccoli mixture, top with golden saltines.
  • Bake at 350 degress for 45 minutes or until set.

3/4 cup herb-seasoned stuffing

Steps:

1 1/2 lbs fresh broccoli
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup mayonnaise
1/4 cup shredded sharp American cheese

1 teaspoon lemon juice
1/3 cup crushed cheese crackers

Steps:

  • Cut up broccoli to make about 6 cups.
  • Cook in covered saucepan in a small amount of boiling salted water for 10-15 minutes.
  • Drain well.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.
