HONEY CHIPOTLE MEATLOAF

This Honey Chipotle Meatloaf is where it's at! Coated with a fabulous sweet and spicy glaze and only takes 10 minutes to prepare!

2 pounds lean ground beef
1 small sweet onion (, finely diced)
2 cloves garlic (, minced)
1 large chipotle pepper in adobo sauce (, minced (about 1 tablespoon))
1 cup quick oats
1 cup milk
1 large egg
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1/2 cup honey
2 chipotle peppers (, minced (about 2 tablespoons))
2 tablespoons apple cider vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil and coat with nonstick cooking spray.
  • In a large mixing bowl, using your hands, combine all the meatloaf ingredients; mix thoroughly. Transfer to the prepared baking sheet and shape into a loaf approximately 2 inches high by 4 inches wide, making it as uniform as possible. Smooth the top and place in the oven on the middle oven rack. Bake for 60 minutes; set a timer for 30.
  • While the meatloaf is cooking, make the glaze. In a medium bowl, whisk together the honey, 2 tablespoons minced chipotle peppers, and vinegar.
  • When the timer beeps at 30 minutes, generously brush the glaze over the top of the meatloaf. Place back in the oven for another 10 minutes. Repeat the glaze two more times in 10 minute intervals.
  • The meatloaf is done when the internal temperature reaches 170 degrees F. Let cool for 5-10 minutes before slicing and serving.

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

MOM'S MEAT LOAF

2 large eggs, lightly beaten
3/4 cup 2% milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

Not much of a story. I just used what I had on hand.

1 cup(s) torn kale leaves
1/2 - small onion, thinly sliced
1/2 - large tomato, diced
1 - generous handful of corn chips
3/4 cup(s) shredded pepper jack cheese
1 package(s) ground turkey
1 - egg

Steps:

  • Saute onion for one minute. Add kale. Continue until kale is wilted, set aside.
  • Meanwhile, pulse corn chips in a food processor to small pieces. Set aside. Grate cheese in food processor. Also set aside.
  • Add kale/onion to processor bowl with tomato. Pulse several times. Add corn chips, turkey, 1/2 cup of cheese, turkey, salt and pepper to taste. Pulse several times until all ingredients are mixed.
  • Place in oiled baking dish. Sprinkle remaining cheese on top. Bake at 350 for 40 minutes, or until done. Let sit for a few minutes then serve hot.
