Halved jalapeños stuffed with cream cheese, shredded cheese, paprika, and garlic and wrapped up with crispy bacon. If you like spicy, you will love these!

12 fresh jalapeño peppers*
8 ounces cream cheese, softened to room temperature
1 cup shredded cheddar cheese*
1 clove garlic, chopped
1/2 teaspoon smoked paprika
12 slices bacon, cut in half
24 toothpicks

Steps:

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
  • Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
  • Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.

6 jalapenos ( sliced in half with pith removed)
4 oz goat cheese
1 tbsp fresh cilantro (or other fresh herbs )
1 tbsp honey (optional)
1/4 tsp salt
1/4 tsp pepper
6 slices bacon (sliced in half)

Steps:

  • Preheat the oven to 425 degrees F. Slice jalapenos in half and cut out and discard the white pith on the inside. Set jalapeno halves on a baking sheet lined with parchment paper. Slice bacon in half so it will wrap around the jalapeno halves only once.
  • In a bowl, add the soft cheese, fresh cilantro (or any other herbs), honey, and salt and pepper. Mix together the ingredients until they are integrated.
  • Evenly distribute the goat cheese mixture into the jalapeño halves. Wrap each jalapeno pepper with a piece of bacon and secure with a toothpick. Bake at 425 for 20-30 minutes until bacon is browned. Rotate them in your oven and/or flip them halfway through to bake evenly. They are ready to serve when they're done cooking. Leave the toothpicks on for people to use to eat them.

12 slices thick-cut applewood smoked bacon (about 1 pound)
12 jalapeno peppers
2/3 pounds creamy goat cheese
1/3 cup chives, chopped

Steps:

  • Slowly cook bacon on a cool part of the grill turning over once until cooked through but still pliable. Thinly sliced bacon and quick cooking will crisp the bacon. Cut jalapenos in half lengthwise. Scoop out seeds and membranes. Fill each half with goat cheese mounding it slightly. Cut each piece of bacon in half. Wrap one piece of cooked and cooled bacon around each pepper half and sprinkle with chives. Place on a sheet of aluminum foil on a medium hot grill until the jalapeno is slightly charred. Serve. Note: Bacon can also be cooked on a grill pan on the stove top and the stuffed and wrapped peppers placed on a cookie sheet in a 350 degree oven until peppers soften slightly.

½ cup shredded sharp Cheddar cheese
12 jalapeno peppers, halved lengthwise, seeds and membranes removed
12 slices bacon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet.
  • Bake in the preheated oven until bacon is crispy, about 15 minutes.
