My sister Julie and I worked this up last night....And it turned out so good! It tastes JUST like the Grape Nuts cereal. And coming from someone that loved Grape Nuts cereal and have missed it so much! Then, I had to go Gluten Free.... It's a great substitute. The Teff flour gives it the nutty flavor. Try it, you will love it!

1 1/2 cups bobs red mill gluten-free whole grain teff flour
1 cup bobs red mill fine gluten-free cornflour
1 cup bobs red mill gluten-free creamy buckwheat
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup molasses
1 (12 ounce) can coconut milk
1/2 cup melted butter or 1/2 cup coconut oil

Steps:

  • Mix well together in a large bowl and pour in a 15x12 baking pan.
  • Pre-Heat the oven to 350 degrees and place in the oven.
  • Stir the mixture every 15 minutes for 1 hour. You want the crummy dried texture of grape Nuts cereal. Take out of oven and cool.
  • Second bake- If needed.... To finish if not dried enough) Put back in oven for another 30 minutes, stirring at the half way point. We have learned that you really have to watch the baking process, and toss the mixture every 15 minutes, you don't want it to burn.
  • Cool and place the grape nut crumbs in sealed container .
  • You can easily make this recipe dairy free by using the coconut oil in place of the butter.

So quick and easy that it really isn't even a recipe. You can have warm cereal on a cold day without any muss or fuss. I have added fresh fruit (blueberries are a favorite) after heating the cereal. Brown sugar could be subbed for the honey. Or, eliminate the extra sweetener and use vanilla soy milk instead of regular milk. The possibilities are endless.

1 tablespoon honey

Steps:

  • Combine cereal and milk in a microwavable bowl.
  • Drizzle with the honey.
  • Microwave on High to taste: 30 seconds for a BIG crunch; 60 seconds for a little crunch.

3 cups graham flour or 3 cups whole wheat flour
1/2 cup wheat germ (or omit wheat germ and use 1/2 cup additional flour)
1 cup brown sugar or 3/4 cup corn syrup
2 cups low-fat buttermilk or 2 cups sour milk
1 teaspoon baking soda
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients in large mixing bowl.
  • Beat until smooth.
  • Spread the dough on 2 large greased cookie sheets.
  • Bake for 25-30 minutes.
  • While still warm, break the dough into chunks and grate it or whirl briefly in blender, about one cup at a time.
  • Return to 250 F oven to crisp for 20-30 minutes.
  • Store in airtight container.
  • Serve for breakfast with milk.

7 cups whole wheat flour
3 cups packed brown sugar
2 1/4 teaspoons baking soda
1 teaspoon salt
2 1/2 cups buttermilk
6 tablespoons butter, melted
2 teaspoons vanilla
1/2 teaspoon maple flavoring (optional)

Steps:

  • Preheat oven to 350°.
  • Grease 6 13x9x2" pans.
  • Combine flour, brown sugar, baking soda and salt.
  • Add buttermilk, butter, vanilla and maple flavoring, if desired.
  • Spread into baking pans.
  • Bake 35 to 40 minutes.
  • Cool; break up and process in processor until pieces are small.
  • Reduce oven to 250°.
  • Return cereal to pans and bake 1 hour, stirring every 15 minutes, or until light brown and crisp.
  • Store in airtight containers.
